    Nudging towards sustainable dining: Exploring menu nudges to promote vegetarian meal choices in restaurants

    Food choice behavior plays a large role in achieving sustainability goals. Meat in particular has a negative environmental impact as compared with plant-based food – and is more frequently chosen in restaurant contexts. To increase plant-based meal choices in restaurants, we tested three nudges for menus that are likely to be implemented by restaurant owners: a hedonic label (e.g., artisanal vegetable burger), a chef's recommendation (specifying the vegetarian option as the chef's favorite), and a salience nudge (a box around the vegetarian option). In an online experiment, we showed participants (n = 513) in four conditions (no nudge, hedonic label, chef's recommendation, and salience nudge) five menus with four meal options each, one of which was vegetarian. We asked participants to choose a meal and subsequently to rate these meals on how tasty and indulgent they were (taste and indulgence attributions). We then revealed which nudge was used to the participants and asked how participants received it. Results show that the hedonic label and chef's recommendation nudge (but not the salience nudge) both increase vegetarian meal choices. The hedonic label increased participants' attributions of indulgence of the meal, but not of tastiness. This finding fits with restaurants' gastronomic, pleasure-seeking context and shapes future directions of labeling interventions, namely that indulgence attributions can be increased in vegetarian foods. Furthermore, the nudges were generally well accepted and participants' intention to return to the (virtual) restaurant was high. Finally, customers expected the hedonic label nudge to be more effective in promoting vegetarian food choices than the other two nudges, partially corresponding with our findings of actual effectiveness

    Snacking for a reason: detangling effects of socio-economic position and stress on snacking behaviour

    Background: As snacking can be considered a cornerstone of an unhealthy diet, investigating psychological drivers of snacking behaviour is urgent, and therefore the purpose of this study. Socio-economic position (SEP) and stress are known to affect many behaviours and outcomes, and were therefore focal points in the study. Methods: In a cross-sectional survey study, we examined whether Socio-economic position (SEP) would amplify associations between heightened stress levels and self-reported negative-affect related reasons for snacking. Next, we investigated whether Socio-economic position (SEP) predicted frequency of snacking behaviour, and how stress and other reasons for snacking could explain this association. Outcome measures were reasons people indicated for snacking, and frequency of snacking behaviour. Results: Analyses revealed that people seem to find more reasons to snack when they are stressed, and that this association was more pronounced for people with a high compared to low socio-economic position. Furthermore, a higher socio-economic position was associated with a higher frequency of snacking, and both snacking to reward oneself and snacking because of the opportunity to do so remained significant mediators. Conclusion: Whereas low socio-economic position was associated with higher stress levels, this did not translate into increased snacking. Contrarily, those with higher socio-economic position could be more prone to using ‘reasons to snack’, which may result in justification of unhealthy snacking behaviour

    Real-world nudging, pricing, and mobile physical activity coaching was insufficient to improve lifestyle behaviours and cardiometabolic health: the Supreme Nudge parallel cluster-randomised controlled supermarket trial

    Background: Context-specific interventions may contribute to sustained behaviour change and improved health outcomes. We evaluated the real-world effects of supermarket nudging and pricing strategies and mobile physical activity coaching on diet quality, food-purchasing behaviour, walking behaviour, and cardiometabolic risk markers. Methods: This parallel cluster-randomised controlled trial included supermarkets in socially disadvantaged neighbourhoods across the Netherlands with regular shoppers aged 30–80 years. Supermarkets were randomised to receive co-created nudging and pricing strategies promoting healthier purchasing (N = 6) or not (N = 6). Nudges targeted 9% of supermarket products and pricing strategies 3%. Subsequently, participants were individually randomised to a control (step counter app) or intervention arm (step counter and mobile coaching app) to promote walking. The primary outcome was the average change in diet quality (low (0) to high (150)) over all follow-up time points measured with a validated 40-item food frequency questionnaire at baseline and 3, 6, and 12 months. Secondary outcomes included healthier food purchasing (loyalty card-derived), daily step count (step counter app), cardiometabolic risk markers (lipid profile and HbA1c via finger prick, and waist circumference via measuring tape), and supermarket customer satisfaction (questionnaire-based: very unsatisfied (1) to very satisfied (7)), evaluated using linear mixed-models. Healthy supermarket sales (an exploratory outcome) were analysed via controlled interrupted time series analyses. Results: Of 361 participants (162 intervention, 199 control), 73% were female, the average age was 58 (SD 11) years, and 42% were highly educated. Compared to the control arm, the intervention arm showed no statistically significant average changes over time in diet quality (β − 1.1 (95% CI − 3.8 to 1.7)), percentage healthy purchasing (β 0.7 (− 2.7 to 4.0)), step count (β − 124.0 (− 723.1 to 475.1), or any of the cardiometabolic risk markers. Participants in the intervention arm scored 0.3 points (0.1 to 0.5) higher on customer satisfaction on average over time. Supermarket-level sales were unaffected (β − 0.0 (− 0.0 to 0.0)). Conclusions: Co-created nudging and pricing strategies that predominantly targeted healthy products via nudges were unable to increase healthier food purchases and intake nor improve cardiometabolic health. The mobile coaching intervention did not affect step count. Governmental policy measures are needed to ensure more impactful supermarket modifications that promote healthier purchases.     “Don’t Mind If I Do”: The Role of Behavioral Resistance in Self-Control’s Effects on Behavior

    High self-control is known to be related to the performance of behaviors that have long-term benefits, such as healthy eating. Recently, studies have suggested that people with high self-control may perform goal-directed behaviors not by exerting effortful control but rather by employing smart, effortless strategies. The current paper investigates the crucial role of behavioral resistance in the relation between self-control and goal-directed behaviors: we propose that people with high self-control feel less resistance toward goal-directed behaviors compared to people with low self-control, and that this is associated with the increased frequency of performing these behaviors. Three cross-sectional studies were conducted in which participants reported on their level of self-control, behavioral resistance toward behaviors in the sustainability, healthy eating, exercise, and study/work domains, and their behavior in those domains. Findings consistently show that the relation between self-control and various behaviors is indeed partially mediated by behavioral resistance, although the study designs preclude establishing causal relations. It is implied that lower resistance makes it easier for people with higher self-control to perform the goal-directed behaviors, without requiring much effort. This notion yields an interesting, novel perspective on how people with high self-control manage to function so well

    Lessons learned from trait self-control in well-being : Making the case for routines and initiation as important components of trait self-control

    It seems common knowledge that trait self-control helps people to achieve the things they find important in their lives by not being distracted by immediate pleasures and temptations. Initial evidence suggests that trait self-control is important in wellbeing as well, with people high in self-control experiencing more positive momentary affect, life satisfaction, and happiness. Whereas it is not so difficult to imagine why effortful inhibition of impulses would benefit continued striving for long-term personal goals, it is more challenging to understand why self-control would make people happier and more satisfied with their lives. The present paper sets out to explain this intriguing phenomenon and aims to identify mechanisms by why people high in trait self-control experience better wellbeing. We examine potential underlying processes that may explain the role of trait self-control in wellbeing and propose initiation of desired behavior and adaptive routines as key components of self-control in wellbeing that challenge the classic explanation of self-control as effortful inhibition

    Self-control predicts exercise behavior by force of habit, a conceptual replication of Adriaanse et al. (2014)

    A recent study suggests that habits play a mediating role in the association between trait self-control and eating behavior, supporting a notion of effortless processes in trait self-control (Adriaanse et al., 2014). We conceptually replicated this research in the area of exercise behavior, hypothesizing that these associations would generalize to other self-control related behaviors. Sufficient exercise is essential for several health and well-being outcomes, and therefore many people intend to exercise. However, the majority of the population does not actually exercise to a sufficient or intended extent, due to competing temptations and short-term goals. This conflict makes exercise a typical example of a self-control dilemma. A within-subjects survey study was conducted to test associations between trait self-control, habit strength, and exercise behavior. Participants were recruited at a local gym. Results demonstrated that trait self-control predicted exercise behavior. Mediation analysis revealed that the association between self-control and exercise was mediated by stronger exercise habits, replicating findings by Adriaanse et al. (2014). These results highlight the relevance of self-control in the domain of exercise. In addition, they add to a growing body of knowledge on the underlying mechanisms of trait self-control on behavior that point to habit-rather than effortful impulse inhibition-as a potential key to self-control success

    Using misperceived social norms as a license: does pluralistic ignorance trigger complacency in the food environment?

    The current food environment strongly communicates the normality of consuming unhealthy and unsustainable food products. However, it is unclear whether people truly support this unhealthy and unsustainable social norm, or that they follow the norm (reluctantly) because they believe that other people agree with it, a phenomenon that is generally known as pluralistic ignorance. While previous research has documented the existence of pluralistic ignorance in a variety of settings, it is unknown to what extent it directly influences behavior and which mechanism may account for this influence. The present study examines whether the perception that others seem to agree with unhealthy and unsustainable eating norms acts as a license to not change one’s eating behavior and leads to complacency. We assessed pluralistic ignorance by comparing self- and other-scores on the importance, frequency, normalcy, and intentions dimensions of consuming healthy and sustainable food in a large sample of Dutch participants (N = 415). To investigate the effect of pluralistic ignorance on self-licensing and complacency, we calculated healthy and sustainable ‘misperception scores’ per dimension. Healthy eating misperceptions only marginally predicted self-licensing, but healthy misperceived intentions did predict an increase in complacency. Sustainable eating misperceptions seem more influential because misperceptions on importance and frequency predicted an increase in self-licensing, and sustainable misperceived normalcy predicted a decrease in complacency and intentions predicted an increase in complacency. These findings suggest that pluralistic ignorance may be more influential in sustainable eating since people could be uncertain what appropriate sustainable food choices are. Prospects for future research and suggestions to address pluralistic ignorance to potentially increase healthy and sustainable food choices are discussed

    Meta-analytic evidence for ambivalence resolution as a key process in effortless self-control

    Self-control is a central construct in understanding human behavior and wellbeing, and has a significant impact on outcomes in several areas such as health, wellbeing, academic performance, and interpersonal relationships. However, underlying mechanisms of self-control, and particularly effortless self-control, remain underexposed. Recent work using mouse tracking techniques has shed new light on these issues and found that self-control is related to ambivalence associated with self-control dilemmas, both in magnitude and resolution. Using a meta-analytical approach, the current research examines whether these initial findings, suggesting that the resolution of ambivalent conflicts is a key ingredient of effortless self-control, are robust. Combining two studies from Gillebaart, Schneider, & De Ridder (2016), and five novel studies, we examined whether self-control influenced the magnitude of ambivalence conflicts (magnitude hypothesis) and the process of its resolution (process hypothesis). Self-reports of objective and subjective ambivalence conflicts were combined with a mouse tracking paradigm to tap into these different aspects. Our analyses replicate previous findings and showed a robust small to medium large effect: Higher self-control was associated with less self-reported conflict, faster conflict resolution, and earlier moment of maximum conflict. Notably, on an implicit level, conflicts emerged in equal magnitude regardless of self-control level. Extending previous work, self-control did not only play a role in food-related dilemmas but also in resolving conflict with regards to different societal topics. These results support the notion of ambivalent conflict resolution as an underlying mechanism of effortless self-control and contribute to a new perspective of self-control going beyond effort and inhibition
