    Effect of Pretreatment on Solar Dehydration of Selected Varieties of Onion

    The kinetics of solar drying of pre-treated onion slices (Pusa White Round, Pusa White Flat and Pusa Madhvi) of thickness 2 mm was studied at an air flow rate of 0.044m/s. Pre-treatments consisted immersion of slices in chemical solutions of sodium chloride, potassium metabisulphite and sodium benzoate at three different concentration levels (0.5%, 1.0% and 1.5%) of each chemical. The variety, chemical and chemical concentration level influenced the drying of onion flakes. Pre-treatment with sodium chloride gave the maximum value of drying constant as 1.256. Variety too influenced the drying of onion. The moisture loss was fast in Pusa White Round (PWR) compared to Pusa Madhvi (PM) and Pusa White Flat (PWF)

    Some Engineering Properties of Garlic (Allium sativum L)

    Garlic (Allium sativum L.) (Cultivar G-282) grown in Indian subcontinent was selected to establish some of its useful engineering properties. The shape, average diameter, weight, bulk density, segment number of whole garlic, average length, width, thickness, geometric mean diameter, sphericity and mass weight of 1000 garlic segment were determined (at 40.50 % moisture content on wet basis) as round, 5.12 cm, 28.64 g, 414.40 kg/m3 , 16.32,26.25 mm, 10.36 mm, 8.73 mm, 13.34 mm, 0.51 and 1813.60 g, respectively. In the moisture content range from 23.05 to 40.50 %(w.b.), the terminal velocity, angle of repose, specific gravity, compressive and shear forces of garlic segment increased from 7.18 to 12.24 mis, 25.53 to 37.50 degree, 0.90 to 0.97,2.25 tol0.70 kg and 1.75 to 2.83 kg, respectively, while bulk density decreased from 483.10 to 449.76 kglm3 • The static coefficient of friction increased on three surfaces, namely, teak wood (0.46 to 0.53), aluminium (0.38 to 0.48) and mild steel (0.34 to 0.41) with increase in moisture content from 23.05 to 40.50 % (w.b.)

    Optimization of Extrusion Process for Preparation of Ready-to-Eat Product from Maize-Rice-Anola

    A blend of maize flour, rice flour and Anola in the ratio 80:10:10 was used as the ingredients for extrusion that would provide a vitamin C enriched ready-to-eat food product. Central composite design was used to evaluate the effects of independent variables, namely, barrel temperature (383-4030 K), screw speed (300-400 rpm) and feed moisture content (22-28.2% d.b) on product responses (bulk density, hardness, colour, expansion ratio and vitamin C). Sensory analysis was carried out using the 9-point hedonic scale for selected extruded product for colour, texture (hardness) and overall acceptability. The regression model developed was significant with R2 greater than 0.78. Barrel temperature and screw speed significantly influenced (P < 0.10) the expansion ratio, bulk density, and vitamin C. The barrel temperature and moisture content for colour and hardness of the product were significantly different (P< 0.05). On the basis of organoleptic evaluation, the product extruded at 3930 K barrel temperature, 350 rpm screw speed and 25% (d.b) feed moisture content was of the most acceptable quality

    Inter-Relationship Between Cooking Time and Some Physico Chemical Characteristics in Pigeon Pea (Cajanus cajan) Genotypes

    Thirteen genotypes of pigeon pea were evaluated for their physical and physico-chemical characteristics, namely, seed size, seed volume, seed density, hydration capacity, hydration index, swelling capacity, swelling index and cooking time. Cooking time of whole pigeon pea pulse ranged between 51 and 63 min indicating a large variation. However, the cooking time of pigeon pea dhal ranged between 19 and 31 min. Correlation coefficients between seed weight and hydration capacity (0.77), seed volume and seed weight (-0.86) and that of swelling capacity and swelling index (0.90) were found to be significant at I% level. Alinear regression model was also fitted between the cooking time of whole pulse and other parameters under study. The coefficient of determination (R2 ) was observed as 81%. These inter-relationships amongst variables enable to predict the cooking time of whole pulse for a large number of pigeon pea genotypes

    Storage of Instant Dba! in Different Packaging Films under Ambient Conditions

    Instant dhal was prepared by soaking the split dhal in sodium carbonate (Na,CO,), followed with cooking, drying, flaking and drying. The prepared dhal was then stored at ambient temperature (25 ± 1°C) in three different packaging materials (Polyethylene, polypropylene and polyester-aluminum-polyethylene laminate) for a period of 105 days. The quality of the stored food product was determined by measuring the peroxide value (PV), thiobarbituric acid (TBA), free fatty acid (FFA) values and conducting sensory evaluation for colour, odour, taste and overall acceptability. PFP laminate was found to be best as compared to other two packaging materials with sensory score of 6.75, 6.15, 5.75 and 6.37 for colour, odour, taste and overall acceptability after 105 days of storage. Also the PV, TBA and FFA values were 85, 0.52, 4.86, respectively after storage of the product in PFP laminate, which were best· as compared to other packaging material

    EFFECT OF SOME GRAIN FACTORS ON THE MILLING OUT-TURN OF SOYBEAN

    Studies were conducted to evaluate the effect of some grain factors on the milling out-turn of soybean. A mini-dal mill with the cylinder- concave mechanism was used for conducting the experiments. A knurled cylinder surface was chosen. The variables selected for the study were; grain moisture, temperature of soaking time of soaking, grading and cylinder concave clearance (grain size). The hulling and splitting efficiencies at different temperatures and periods of soaking were determined, once the grain moisture and cylinder- concave clearance were optimized. Based on the analyses, the effect of various factors on the milling out-turn of soybeen, it is concluded that the best results for the milling out-tum con be obtained at an optimal soaking temperature of 30°C, soaking period 30 minutes, cylinder concave clearances of 6 mm followed by 5 mm, and moisture content of 8.5% (db)
