    Risk Factors Associated with Alcohol Consumption Among Romanian University Students- Preliminary Research

    Young people’s consumption of alcohol is an ongoing problem. Many young adults binge-drink alcohol excessively, with serious negative consequences thereafter. This preliminary research assessed risk factors associated with alcohol consumption, drinking problems and related consequences among university students. The study was carried out on a total of 1056 students from UASVM Cluj-Napoca, Romania. University students claimed altered states of health after drinking episodes: vomiting, abdominal pain, headache, dizziness (43.1%), forgetfulness after drinking (3.1%). Furthermore, students who drank over the limit reported physical and violence-related problems (2.7%) and were more likely to develop risky behaviors, like driving under the influence of alcohol (13.9%) or car accidents (0.2%). The participants in the study were not heavy social drinkers, 50.9% of the respondents reported no consequences after drinking alcohol

    Comparison of Ferments in the Process of Functional Beverage Making

    The aim of this study was to compare the main ferments selected to be used in the process of mead making: Saccharomyces cerevisiae yeast and pollen, the latter having been used in ancient times as ferment. It has only been recently that the market has exhibited significant interest in developing foods containing functional ingredients. Honey has been a corollary of hidden nutritional and medicinal value for centuries. Mead is the result of alcoholic fermentation, by mixing different proportions of honey with water and pollen, as a fermentation agent. The fermentation process was monitored by collecting samples periodically and analyzing the alcohol concentration, total extract, the level of fermentation, the pH, as well as the yeast number with the Thoma cell counting chamber. Additionally, physicochemical (acidity and vitamin C) and sensory parameters were determined for the final products. Results and discussion: Pollen-fermented beverages have a higher alcohol concentration than beverages fermented with Saccharomyces cerevisiae, which is explained by the additional intake of carbohydrates induced by the addition of pollen

    Increased consumer interest in healthier food products is driven by a variety of factors including growing awareness of the link between diet and health, the desire to age ‘gracefully’ by maintaining good health, greater convenience in meeting nutritional needs and preventing chronic diseases. In raw food diet, food is consumed predominantly or exclusively as uncooked and unprocessed raw food; the main components of the diet are fruits, nuts, seeds, and sprouted grains and beans. The aim of this study was to obtain two raw-vegan bars using dry raw materials and to establish the physicochemical and sensory characteristics of the products. Raw-vegan bars were formulated using fruits and seeds (cranberries, figs, raisins, raspberries, cashew, chia seeds, etc.) and binding agents (honey). Raw-vegan bars stands out among fast foods due to their balanced nutritional content and convenience.  </p

    Evaluation of Polyphenol Content and Antioxidant Properties of some Fruit Seeds

    A diversity of secondary plant metabolite with an antioxidant character are present in the vegetal extracts, such as: tocopherols, carotenoids, phenolic acids, flavonoids, etc. These compounds intervene in the cellular defense mechanisms against the free radicals and oxidative stress, as they possess anticancer and anti mutation effect. The aim of this work was to study the antioxidant capacity and polyphenol content of methanolic extracts obtained from seeds of fruits: Vitis vinifera, Malus domestica and Citrullus lanatus. Grape seeds have a high content of antioxidants and polyphenols compounds, due to this, it is recommended their used in obtaining functional food with benefit on the human body.</p

    A Sustainable Approach for the Development of Innovative Products from Fruit and Vegetable By-Products

    The waste generated by small-scale ultra-fresh juice producers, such as bistros and restaurants, has been little studied so far, mainly because it is unevenly distributed and dissipated in the economic ecosystem and would require high costs associated with transportation and subsequent recovery of bio composites. The present article seeks to offer solutions by providing sustainable methods to reduce their waste losses to a minimum and transform them into valuable products, with affordable equipment and techniques. The study focuses on the preliminary phase of quantitative analysis of fruit and vegetable by-products generated on a small scale, the results showing a mean 55% productivity in fresh juices. Due to the high amount of remnant water content in waste, a new process of mechanically pressing the resulting squeezed pulp was introduced, generating an additional yield in juice, ranging from 3.98 to 51.4%. Due to the rising trend in healthier lifestyle, the by-products were frozen or airdried for conservation in each of the processing stages, and the total phenolic compounds and antioxidant activity were analyzed in order to assess the traceability of these bioactive compounds to help maximize their transfer into future final products. The polyphenols transferred into by-products varied between 7 and 23% in pulps and between 6 and 20% in flours. The highest DPPH potential was found in flours, up to three-fold in comparison with the raw material, but the high dry substance content must be accounted for.
