Effects of thermal treatments and germination on physico-chemical properties of corn flour

    Get PDF
Certain physico-chemical properties including viscoelasticity, crystallinity and maltose content of corn depends on the gelatinization of starch under different treatments. Three different treatments were performed; boiling in water, steam heating, and germination. The effects of gelatinization onviscoelastic property of corn starch were measured and the morphological changes of corn after different treatments were determined by scanning electron microscope (SEM). Various grooves and fissures on the exterior surface of the granules were noticed in the treated sample compared tocontrol. The crystallinity of corn after different treatments was determined by X-ray diffraction studies (XRD). The control showed higher crystallinity than that of thermal treated samples

Standardization of setting temperature and time for fish meat

    Get PDF
Meat to water ratio used for washing was 1:3 for oil sardine and mackerel; but for pink perch and croaker, it was 1:2. Again the washing process was repeated three times for oil sardine and mackerel; but two times for pink perch and croaker. The washed meat was mixed with 2.5% NaC1 and set at +5°C and +40°C for 1, 2 and 3hrs. The gel strength and expressible water content was measured. Basing on this study, setting temperature at +40°C was selected and with respect to time 1hr for sardine and mackerel and 3hrs for pink perch and croaker was selected

Incorporation of turmeric-lime mixture during the preparation of tomato puree

New types of tomato puree products were developed by blanching matured tomatoes (Lycopersicon esculentum) for 1 min, 2 min and 3 min individually with or without addition of the mixture of turmericand lime during the blanching time. Soluble solid content and pH of the puree products were in therange of 11 - 12.6 Brix and 4.32 - 4.68 respectively. Total Hunt er Lab colour difference (DE) of treatedsample following 2 min and 3 min blanching significantly (P 0.05) Lab values (L, brightness; a, redness and b, yellowness). Also, yield stress (measure of flow behaviour) of 2 min-blanched samples (both treated and control) were the maximum among other corresponding puree samples. Thus, 2 min blanching time may be preferred for the preparation of this new type of turmeric-lime treated tomato puree product

High spin polarization in the ferromagnetic filled skutterudites KFe4Sb12 and NaFe4Sb12

The spin polarization of ferromagnetic alkali-metal iron antimonides KFe4Sb12 and NaFe4Sb12 is studied by point-contact Andreev reflection using superconducting Nb and Pb tips. From these measurements an intrinsic transport spin polarization Pt of 67% and 60% for the K and Na compound, respectively, is inferred which establishes these materials as a new class of highly spin polarized ferromagnets. The results are in accord with band structure calculations within the local spin density approximation (LSDA) that predict nearly 100% spin polarization in the density of states. We discuss the impact of calculated Fermi velocities and spin fluctuations on Pt.Comment: Pdf file with fi

SU(6), Triquark states, and the pentaquark

    Get PDF
The purported observation of a state Θ+\Theta^+ with strangeness S = +1 led to its quark model interpretation in terms of a pentaquark combination involving a triquark-diquark structure -- the Karliner-Lipkin model. In this work, the proper colour-spin symmetry properties for the qqqˉq q \bar{q} triquark are elucidated by calculating the SU(6) unitary scalar factors and Racah coefficients. Using these results, the colour-spin hyperfine interactions, including flavour symmetry breaking therein, become straight-forward to incorporate and the pentaquark masses are readily obtained. We examine the effect on the pentaquark mass of (a) deviations from the flavour symmetric limit and (b) different strengths of the doublet and triplet hyperfine interactions. Reference values of these parameters yield a Θ+\Theta^+ mass prediction of 1601 MeV but it can comfortably accommodate 1540 MeV for alternate choices. In the same framework, other pentaquark states Ξ\Xi (S=--2) and Θc\Theta^c (with charm C=--1) are expected at 1783 MeV and 2757 MeV, respectively.Comment: 17 pages, 1 figure. accepted for publication in Phys. Notes on static cylindrical shells

Static cylindrical shells made of various types of matter are studied as sources of the vacuum Levi-Civita metrics. Their internal physical properties are related to the two essential parameters of the metrics outside. The total mass per unit length of the cylinders is always less than 1/4. The results are illustrated by a number of figures.Comment: 14 pages, 8 figure

Matter collineations of Spacetime Homogeneous G\"odel-type Metrics

The spacetime homogeneous G\"odel-type spacetimes which have four classes of metrics are studied according to their matter collineations. The obtained results are compared with Killing vectors and Ricci collineations. It is found that these spacetimes have infinite number of matter collineations in degenerate case, i.e. det(Tab)=0(T_{ab}) = 0, and do not admit proper matter collineations in non-degenerate case, i.e. det(Tab)0(T_{ab}) \ne 0. The degenerate case has the new constraints on the parameters mm and ww which characterize the causality features of the G\"odel-type spacetimes.Comment: 12 pages, LaTex, no figures, Class. Universal conductance fluctuations in three dimensional metallic single crystals of Si

    Get PDF
In this paper we report the measurement of conductance fluctuations in single crystals of Si made metallic by heavy doping (n \approx 2-2.5n_c, n_c being critical composition at Metal-Insulator transition). Since all dimensions (L) of the samples are much larger than the electron phase coherent length L_\phi (L/L_\phi \sim 10^3), our system is truly three dimensional. Temperature and magnetic field dependence of noise strongly indicate the universal conductance fluctuations (UCF) as predominant source of the observed magnitude of noise. Conductance fluctuations within a single phase coherent region of L_\phi^3 was found to be saturated at \approx (e^2/h)^2. An accurate knowledge of the level of disorder, enables us to calculate the change in conductance \delta G_1 due to movement of a single scatterer as \delta G_1 \sim e^2/h, which is \sim 2 orders of magnitude higher than its theoretically expected value in 3D systems.Comment: Text revised version. 4 eps figs unchange
