    Acidity and Antioxidant Activity of Cold Brew Coffee.

    The acidity and antioxidant activity of cold brew coffee were investigated using light roast coffees from Brazil, two regions of Ethiopia, Columbia, Myanmar, and Mexico. The concentrations of three caffeoylquinic acid (CQA) isomers were also determined. Cold brew coffee chemistry was compared to that of hot brew coffee prepared with the same grind-to-coffee ratio. The pH values of the cold and hot brew samples were found to be comparable, ranging from 4.85 to 5.13. The hot brew coffees were found to have higher concentrations of total titratable acids, as well as higher antioxidant activity, than that of their cold brew counterparts. It was also noted that both the concentration of total titratable acids and antioxidant activity correlated poorly with total CQA concentration in hot brew coffee. This work suggests that the hot brew method tends to extract more non-deprotonated acids than the cold brew method. These acids may be responsible for the higher antioxidant activities observed in the hot brew coffee samples

    Simulating solute transport in an aggregated soil with the dual-porosity model: measured and optimized parameter values

    The capability of the first-order, dual-porosity model, which explicitly accounts for non-ideal transport caused by the presence of ā€˜immobileā€™ water, to predict the non-ideal transport of non-sorbing solute in a constructed aggregated soil has been investigated. Miscible-displacement experiments performed with a well-characterized aggregated soil and a non-reactive tracer (pentafluorobenzoate) served as the source of the data. Values for the input parameters associated with physical non-equilibrium were determined independently and compared with values obtained by curve fitting of the experimental measurements. The calculated and optimized values compared well, suggesting that the non-equilibrium parameters represent actual physical phenomen

    Carbon-carbon bond lengths and C=C vibrational frequencies are reported for the linear, all-trans unsubstituted C2nH2n+2 (n=2-15), methyl capped C2nH2nMe2 (n=2-13), and tert-butyl capped C2nH2n(tert-butyl)2 (n=2-5) polyenes (C2h) calculated at the B3LYP/6-311++G(d,p) level. The C=C/C-C bond length alternation remains evident at this level for the unsubstituted and methyl capped polyenes as the chain length increases; the center-most difference in the length of the C-C/C=C bonds is ~0.06 AĢŠ for C30H32 and C26H26Me2. The Ag, in-phase, harmonic C=C Raman frequency for the unsubstituted polyenes decreases from 1699.2 cm-1 (n = 2) to 1528.9 cm-1 (n=15); the anharmonic frequency decreases from 1651.5 cm-1 (n = 2) to 1547.7 cm-1 (n = 8). The harmonic C=C frequency for the methyl capped polyenes decreases from 1717.9 cm-1 (n = 2) to 1539.6 cm- 1 (n= 13), and the anharmonic C=C frequency decreases from 1675.0 cm-1 (n = 2) to 1562.8 cm-1 (n = 7)

Besides, there were some mistaken methods in the constructing. Therefore the open caisson broke up to become 4 blocks in the construction. The largest width in these cracks was 80 cm. Investigation and analysis having been done, the causes of the failure were found. Some repairing methods, such as opposite cutting edge, reinforcement hoop, and so on, adopted. Correct excavation was carried out. The open caisson finally sunk to the rock. The treatment was successful

    To understand the near-interface magnetism in manganites, uniform, ultra-thin films of La_{0.67}Sr_{0.33}MnO_3 were grown epitaxially on single crystal (001) LaAlO_3 and (110) NdGaO_3 substrates. The temperature and magnetic field dependent film resistance is used to probe the film's structural and magnetic properties. A surface and/or interface related dead-layer is inferred from the thickness dependent resistance and magnetoresistance. The total thickness of the dead layer is estimated to be āˆ¼30AĖš\sim 30 \AA for films on NdGaO_3 and āˆ¼50AĖš\sim 50 \AA for films on LaAlO_3.Comment: 11 pages, 4 figure

    An Investigation of the Kinetics and Equilibrium Chemistry of Cold-Brew Coffee: Caffeine and Chlorogenic Acid Concentrations as a Function of Roasting Temperature and Grind Size

    Abstract: Recently, both small and large commercial coffee brewers have begun offering cold-brew coffee drinks to customers with the claims that these cold-water extracts contain fewer bitter acids due to brewing conditions (Toddy website, 2016) while still retaining the flavor profile. Dunkin Donutsā€™ website suggests that the cold-water and long brewing times allow the coffee to reach ā€œ... its purest form.ā€ With very little research existent on the chemistry of cold brew coffee consumers are left to the marketing strategies of Starbucks and other companies regarding the contents of cold-brew coffee. This research analyzes the caffeine and chlorogenic acid (3-CGA) content of cold-brew coffee as a function of brewing time, grind size, and roasting temperature of coffee beans sourced from the Kona region of Hawaii using high pressure liquid chromatography (HPLC). Coarse and medium grinds of both dark and medium roasts were analyzed by mixing 350mL of filtered water with 35g of coffee grinds under constant stirring at 20Ā°C. Sampling was performed every 15 minutes for the first hour, then every 30 minutes for the next ten to twelve hours, with a final sample being drawn at 24hours. Equilibrium concentrations for both 3-CGA and caffeine were reached following 600 minutes. The caffeine concentrations ranged from 935mg/L to 1475mg/L. Variation was seen as a function of roasting temperature, and less so grind size. The 3-CGA concentrations were found to range from 345mg/L to 547mg/L. In both cases, the medium roast coarse grind coffee produced the highest concentrations of caffeine and 3-CGA while dark roast coarse grind produced the lowest concentrations of caffeine and 3-CGA. Hot brew experiments agreed well with caffeine and 3-CGA extraction concentrations in both dark roast coffees, showing very similar final concentrations. The medium roast coffees showed deviation from the hot brew coffees with respect to caffeine, indicating the need for additional experimentation to determine the role of water temperature in the availability of caffeine during extraction
