Privacy of Contextual Information in Wireless Sensor Networks
Continuous advances in electronics, wireless technologies, manufacturing processes, and software engineering have led to the proliferation of a plethora of mobile devices — mobile phones, tablets, wearables, sensors, smart consumer electronics, etc. — in our everyday lives. The interconnection of these devices into a single web of communication, information, and computation gives rise to a densely meshed wireless ecosystem that transforms the way users interact with their environment. However, ubiquitous interactions with devices that collect data about user activities pose challenging privacy and security problems. Without protection mechanisms, the systems we deploy breach user privacy, often without the user’s knowledge or consent. The collected information could reveal the user whereabouts, track his motion through space, infer his habits and personal preferences, record user relationships, acquaintances, and contacts, and compromise sensitive information. We investigate the leakage of the so-called contextual information in wireless communications. We focus on event-driven wireless sensor networks (WSNs), whereby wireless transmissions are triggered upon the detection of important events such as the detection of an object of interest, the recording of an abnormal physical parameter, etc. Privacy in event-driven WSNs is particularly important, because traffic patterns can be directly associated to events. We devise general traffic analysis techniques for extracting contextual information from WSN communications. We further investigate the inference of contextual information when the WSN transmissions are protected by traffic normalization methods, which rely on statistical source anonymity (SSA). To counter traffic analysis, we develop resource-efficient communication and routing methods for reporting events over multi-hop routes without revealing the event location and occurrence time, as well as the location of the sink. Our work explores the tradeoff between the communication overhead for normalizing traffic and the end-to-end real packet delay for delivering the event report to the sink. This is achieved by limiting the number of fake transmissions for obfuscating traffic patterns. To do so, we map the problem of selecting fake sources to the problem of finding a minimum connected dominating set (MCDS) that covers the WSN deployment area. We then impose transmission schedules on the fake sources to accelerate the delivery of real event reports. Finally, we propose strong privacy traffic normalization techniques that reduce the number of fake transmissions without relying on the concept of statistical source anonymity. In the proposed solution, the WSN is partitioned into connected dominating sets (CDSs) that are activated in a round-robin fashion. We show that our methods reduce the communication by several orders of magnitude, while maintaining privacy under strong adversary models

Foaming properties are improved by interactions between brewer's spent grain proteins and carrageenans in aqueous solution
BACKGROUND: Foaming properties and macromolecular interactions in solution among brewer's spent grain proteins (CP) and iota and lambda carrageenans (i-CG and l-CG, respectively) as a function of aqueous medium pH (2–6) and protein-polysaccharide ratio, RCP:CG (1:1, 2:1 and 4:1), were studied. At these conditions, the CP colloidal stability was favored by the formation of soluble electrostatic complexes with CG. Fluorescence (intrinsic and extrinsic) spectroscopy and dynamic light scattering techniques, including particle size and ζ-potential analysis, were applied to know the phase behavior of the biopolymer systems. The bubbling method was used to produce foams, and the foam expansion (%) and half-life time (t1/2) were determined. RESULTS: Both CG promoted an increased Trp fluorescence emission depending on the pH, suggesting conformational changes in CP. The CG in mixed systems produced a significant decrease in the extrinsic fluorescence intensity, mainly at low pH values, highlighting a reduction in CP surface hydrophobicity. At the examined pH range, the ζ-potential values for mixed-systems were negative, and their magnitudes were intermediate between CP and CG, revealing the associative electrostatic nature of biopolymer interactions, which were dependent on the RCP:CG. The particle size analysis confirmed the formation of soluble electrostatic complexes in solution. Finally, using i-CG at pH 2 or 3 and 2:1 RCP:CG, the best foaming properties for mixed systems were observed. CONCLUSION: The formation of electrostatic complexes with a compact assembly among biopolymers, high negative net charge, and colloidal stability convert the CP-CG mixed solutions into promising biopolymer systems for food foams production.
Honey quality parameters, chemical composition and antimicrobial activity in twelve Ecuadorian stingless bees (Apidae: Apinae: Meliponini) tested against multiresistant human pathogens
[EN] Ecuadorian honey samples of eight genera and 12 stingless bee species from three geographic regions (Andes, Amazon and Pacific) were studied for their physicochemical parameters, chemical composition, mineral elements and antimicrobial activity. Meliponine honey is acidic and has a high water content, but our study revealed substantial chemical variation. Oxytrigona mellaria was highest in proteins, while Melipona sp. had the most free amino acid content. Five species of honey contained vitamin C, which was highest in O. mellaria. The most abundant minerals were the macronutrients, potassium and calcium. All honey inhibited microbial growth in gram-negative and gram-positive multiresistant human pathogens, with O. mellaria and Trigona silvestriana being most effective against both bacteria
Effect of thermal liquefaction on quality, chemical composition and antibiofilm activity against multiresistant human pathogens of crystallized eucalyptus honey
Thermal liquefaction is a conventional method used by beekeepers to liquefy crystallized honey. However, an abusive use of heat may affect its quality, chemical composition and bioactivity. The purpose of this study was to investigate the effect of thermal liquefaction on the quality, chemical composition and antibiofilm properties of eucalyptus honey. Thermal liquefaction (at 45 and 60 ◦C) did not affect the honey’s quality; however, a significant reduction in the reducing capacity, total phenolic content and hydrogen peroxide content was observed. At 60 ◦C, a significant reduction in the honey’s ability to inhibit biofilm formation was observed in Pseudomonas aeruginosa, as well as a reduction in its ability to remove preformed biofilms in both Staphylococcus aureus and Pseudomonas aeruginosa. Structural changes in biofilm architecture caused by honey were not affected by thermal treatment. Therefore, we recommend liquefaction at 45 ◦C as the most convenient for honey liquefaction without affecting its characteristics
