Poziom metali w tkance miesniowej i watrobie koziolkow i tryczkow z regionu srodkowo-wschodniej Polski
The aim of the study was to estimate the content of Pb, Cd, Zn, Mn, Cu, Fe, Ca in
meat and liver of male kids and ram lambs fed mixtures containing 10% of flax seeds.
Castrated male kids (n = 7) of White Upgraded breed and castrated ram lambs (n = 7) of Polish
Lowland sheep fattened up to about 35 kg of body weight were used as experimental
material. The animals were fed mixture CJ ad libitum, supplemented with 10% of flax
seeds and meadow hay as a structural supplement. Contents of the chemical elements
were analysed in samples of longissimus dorsi muscle.
The content of Cd (0.01 mg kg–1) in male kid meat was lower than in ram lamb meat
(p ≤ 0.05). Similarly, Pb content was lower (p ≤ 0.05) in male kids (0.04±0.003 mg kg–1)
than in ram lambs (0.07±0.002 mg kg–1). Slightly lower content of Pb (by 0.01 mg kg–1)
and Cd (by 0.01 mg kg–1) in male kid liver was determined, and the differences were
statistically insignificant. Significantly larger (p ≤ 0.01) Cu content (1.14±0.07 mg kg–1) in
muscular tissue of ram lambs was also stated. Male kid meat, however, was richer in Mn,
Fe, Zn and Ca, with the differences tested at p ≤ 0.05 and p ≤ 0.01. The liver was an organ
which accumulated not only Pb and Cd but also Cu, Mn and Zn both in ram lambs
and male kids. Especially high level of Cu and Mn in liver was found, which could be the
result of a high content of the chemical elements in mixtures. Moreover, significantly larger
content of Ca (15.24±1.68 mg kg–1) in ram lamb liver compared to male kid liver was
stated. On the other hand, muscular tissue of male kids contained more Ca (21.94±1.74 mg
kg–1) than that of ram lambs. The content of chemical elements (especially heavy metals) in muscular tissue and
liver was lower than the norms established by the Minister for Health and the European
Committee, which prove that the tested food products were fully safe for consumption.Celem badań było określenie zawartości Pb, Cd, Zn, Mn, Cu, Fe, Ca w mięsie i wątrobie
koziołków i tryczków żywionych mieszanką pełnoporcjową z 10% udziałem nasion lnu.
Materiał doświadczalny stanowiły wykastrowane koziołki (n = 7) rasy białej uszlachetnionej
i wykastrowane tryczki (n = 7) polskiej owcy nizinnej, tuczone do masy ciała ok. 35 kg.
Zwierzęta doświadczalne otrzymywały do woli przemysłową mieszankę treściwą CJ, dodatek
10% nasion lnu oraz siano łąkowe jako dodatek strukturalny. Próby do analizy pobrano
z mięśnia najdłuższego grzbietu (m. longissimus dorsi), w którym oznaczono zawartość
pierwiastków.
W mięsie koziołków stwierdzono niższą zawartość Cd (0.01 mg kg–1) ni¿ u tryczków –
p ≤ 0.05. Podobnie poziom Pb był niższy (p ≤ 0.05) w grupie koźląt (0.04±0.003 mg kg–1)
w porównaniu z tryczkami (0.07±0.002 mg kg–1). W wątrobie koźląt stwierdzono nieznacznie
niższy poziom Pb oraz Cd (0.01 mg kg–1) – różnice nieistotne statystycznie. Istotnie
wyższą (p ≤ 0.01) zawartość Cu (1.14±0.07 mg kg–1) w tkance mięśniowej stwierdzono
u tryczków. Natomiast mięso koziołków było bogatsze w Mn, Fe, Zn i Ca – różnice p ≤ 0.05
i p ≤ 0.01. Wątroba była narządem koncentracji nie tylko Pb i Cd, ale Cu, Mn i Zn zarówno
u tryczków, jak i koziołków. Zaobserwowano szczególnie wysoki poziom Cu i Mn w wątrobie, czego przyczyną mógł być wysoki poziom tych pierwiastków w paszy. Ponadto w wątrobie tryczków stwierdzono istotnie (p ≤ 0.01) wyższy poziom Ca (15.24±1.68 mg kg–1) niż
u koziołków. Natomiast tkanka mięśniowa koziołków zawierała więcej Ca –
21.94±1.74 mg ≤ kg–1.
Stężenie pierwiastków, szczególnie metali ciężkich, w tkance mięśniowej i wątrobie było
poniżej dopuszczalnych norm podanych przez Ministra Zdrowia i WE, co kwalifikuje je jako
surowce żywnościowe w pełni bezpieczne do spożycia

The aim of the experiment was to determine the content of some chemical elements
in meat tissue in kids of the White Improved breed and in rams of the Polish Lowland
breed. After weaning (60 days of life), the animals were fed all-mash CJ and meadow hay.
The mixtures were produced from components originating from the Polish region called
Podlasie. At the age of 1 month, all kids and rams were castrated using the blood method.
They were slaughtered at the age of 90, 120, 150 and 180 days of life. Samples to analyse
the chemical elements were taken from longissimus dorsi muscles. Concentrations of Pb,
Cd, Zn, Mn, Fe and Mg were determined.
Generally, more Pb in meat tissue of kids than rams was found, and a significant
difference (p=0.01) for the slaughter on the 120th day of life was proven. However, the
content of Cd was larger (p=0.05 for 90, 120 and 150 days) in ram tissues (0.003-0.014 mg
kg-1) than in kids. It should be noticed that both in kid and ram meat tissues, the norms
for Pb and Cd content, established by the Minister of Health and the European Committee,
were not exceeded, which makes the meat suitable for consumers. The meat tissue of
kids was richer in iron and poorer in zinc and copper than that of lambs, and the level of
these elements decreased with the slaughter age. It was also observed that the iron content
in meat tissue on the 180-day slaughter of animals was less than 17 mg kg-1. More
copper in meat tissue of rams and zinc in kids slaughtered at the age of 150 and 180 days
were found. To sum up, intensive feeding applied to fatten kids and lambs did not affect
the accumulation of chemical elements in meat, and especially that of heavy metals.Celem badań było określenie zawartości wybranych pierwiastków w tkance mięśniowej
koziołków rasy białej uszlachetnionej i tryczków polskiej owcy nizinnej. Zwierzęta po
odsadzeniu od matek (60 dni życia) żywiono mieszanką pełnoporcjową CJ oraz sianem łąkowym.
Pasze wyprodukowano z komponentów pochodzących z regionu Podlasia. W wieku
ok. 1 miesiąca wszystkie koziołki tryczki wykastrowano metodą krwawą. Zwierzęta ubijano
w wieku 90, 120, 150 i 180 dni życia. Próby do oznaczenia pierwiastków pobierano
z m. longissimus dorsi. Oznaczono zawartość: Pb, Cd, Zn, Cu, Mn, Fe i Mg.
W tkance mięśniowej koziołków stwierdzono wyższą zawartość Pb niż u tryczków,
a istotną (p<0.01) różnicę stwierdzono w przypadku uboju w 120. dniu życia, natomiast zawartość
Cd była wyższa (p<0.05) w przypadku 90., 120. i 150. dnia w tkankach tryczków
(0.003-0.014 mg kg- 1 ) niż koziołków. Należy podkreślić, że w tkance mięśniowej koziołków
i tryczków nie zostały przekroczone normy zawartości Pb i cd ustalone przez Ministra
Zdrowia oraz Komisję Europejską, co czyni to mięso w pełni przydatne dla konsumenta.
Analizowana tkanka mięsna koźląt okazała się bogatsza w żelazo i uboższa w cynk i miedź
niż u jagniąt, a poziom tych pierwiastków obniżał się wraz z wiekiem ubijanych zwierząt.
Zaobserwowano, że u zwierząt ubijanych w 180. dniu życia zawartość Fe w tkance mięsnej
u niektórych sztuk wynosiła poniżej 17 mg kg- 1 . Natomiast wyższy poziom miedzi stwierdzono
w tkance mięśniowej tryczków, a cynku u koziołków ubijanych w wieku 150 i 180
dni życia. Zaobserwowano, że zastosowane intensywne żywienie w tuczu koźląt i jagniąt
nie wpłynęło na kumulację pierwiastków, a szczególnie metali ciężkich w mięsie

Przedmiotem badań było określenie zawartości wybranych metali w tkance mięśniowej, wątrobie i nerkach koźląt i tryczków pochodzących z regionu Podlasia. Materiał badawczy stanowiły koziołki rasy białej uszlachetnionej i tryczki rasy polskiej owcy nizinnej. Średnie wartości stężenia magnezu w analizowanej tkance mięśniowej okazały się statystycznie «istotne między badanymi gatunkami zwierząt. Podobne zależności wykazano w wątrobie i nerkach. Ponadto istotnie wyższe wartości stężenia miedzi stwierdzono w wątrobie badanych koźląt (92,58 mg/kg). Mięso koziołków zawierało więcej Pb i mniej Cd w porównaniu z mięsem tryczków. Uzyskane w badaniach własnych zawartości: Cu, Mn, Fe, Zn w ocenianym mięsie mieściły się w granicach uznanych za fizjologiczne i nie stanowiły zagrożeń toksykologicznych.The content of selected metals in the liver, kidney and meat tissue of kids and rams was investigated. Mean concentration of magnesium in the muscles was significantly different depending on the animal breed. Similar results were obtained for kidney and liver. The content of cuprum in the liver of kids (92,58 mg/kg) was higher in comparison with rams. Goats meat contained more Pb and less Cd than rams meat. The slaughter value profile of polish lowland lambs
Celem niniejszej pracy było określenie współzależności pomiędzy wybranymi cechami półtuszy a wartością rzeźną jagniąt.
Materiał badawczy stanowiły jagnięta tryczki polskiej owcy nizinnej, hodowane na Podlasiu. Badania przeprowadzono w latach 2000–2002. Masę ciała zwierząt kontrolowano od urodzenia do 180. dnia życia, kiedy poddawano je ubojowi. W momencie uboju jagnięta osiągnęły średnią masę ciała wynoszącą 38,82 kg. Zestawiono procentowy udział części ubojowych, wydajność rzeźną oraz udział wyrębów w półtuszy. Największy udział w półtuszy, wynoszący 25,76%, miał udziec, a na drugim miejscu uplasowała się łata z mostkiem (17,68%). Wyręby cenne stanowiły 40,82% w stosunku do całej półtuszy. Bezwzględna zawartość mięsa w półtuszy jagniąt była wysoko i dodatnio skorelowana z masą następujących wyrębów cennych: comber (r = 0,983), antrykot (r = 0,981) i udziec (r = 0,967). Stwierdzona dodatnia i wysoko istotna współzależność pomiędzy masą mięsa w udźcu a masą tego składnika w półtuszy (r = 0,918) może być szczególnie przydatna do szacowania ilości mięsa w półtuszy na podstawie jego masy w udźcu. Obliczone współczynniki korelacji wskazują, że także masę mięsa, tłuszczu i kości w półtuszy można szacować na podstawie masy tych tkanek w udźcu.The objective of this paper was to determine the correlations between some selected qualities of half-carcasses and slaughter value of lambs.
The investigations were performed in a period from 2000 to 2002; the investigation materials were ram lambs of the Polish Lowland breed raised in the Podlasie area. Body weights of animals being investigated were monitored from the animal birth until the 180th day of their life; the animals were slaughtered on this day. On the slaughter day, the average body weight of the animals monitored was 38.82 kg. The following factors were compiled and presented in the form of a table: per cent contents of slaughter elements; slaughter values, and per cent contents of valuable cuts in half-carcasses.
The leg constituted 25.7% of the half-carcass, and, thus, its content was the highest, the breast content was the second (17.68%). The valuable cuts constituted 40.82% in relation to the whole half-carcass. The absolute meat content in lamb half-carcasses was highly and positively correlated with the weights of the following valuable cuts: loin (r = 0,983), wack (r = 0,981), and leg (r = 0,967). The positive and highly significant correlation identified between meat contents in leg and in half-carcass can be particularly useful in estimating meat quantities in half-carcasses on the basis of the meat weight in leg. The correlation coefficients calculated indicate that it is also possible to estimate weights of meat, fat, and bones in half-carcass on the basis of their weights as contained in the lamb leg
Fattening performance and slaughter value of goat kids fed flax seed-supplemented feed
Wprowadzenie do mieszanek paszowych różnych dodatków ma na celu nie tylko modyfikację składu chemicznego pozyskanego mięsa, ale również poprawę wartości rzeźnej, dlatego też podjęto próbę oceny ubojowej zwierząt żywionych paszą z dodatkiem nasion lnu. Tucz trwał około 150 dni, w ciągu których zwierzęta uzyskały końcową masę ciała około 35,5 kg. W czasie tuczu określono zużycie paszy na przyrost 1 kg masy ciała koziołków oraz obliczono przyrosty dobowe od odsadzenia tj. od 60. dnia do uboju w 150. dniu. W grupie koźląt żywionych paszą wzbogaconą ziarnem lnu uzyskano wyższe przyrosty dobowe (211 g/dobę) w porównaniu z grupą kontrolną (190 g/dobę). Rodzaj podawanej paszy miał wpływ na stopień otłuszczenia, czego efektem był wyższy udział tłuszczu okołonerkowego w grupie koziołków żywionych mieszanką z dodatkiem nasion lnu (3,10 %) w porównaniu z grupą kontrolną (2,85 %).The purpose of supplementing feed mixtures with various additions is not only to modify the chemical composition of meat to be produced, but, also, to improve the slaughter value. Therefore, it was attempted to assess the post-slaughter value of animals fed a feed supplemented with flax seeds. The fattening period comprised ca. 150 days and during this period, the animals reached their final weight of about 35.5 kg. While fattening, the consumption of feed per 1 kg body weight gain of goat kids was determined and the daily body weight gains were calculated from the moment of weaning, i.e. from the 60th day until the slaughter on the 150th day. In the group of goat kids fed the feed supplemented with flax seeds, higher daily body weight gains (211 g/24 h) were obtained compared with the control group (190 g/24 h). The kind of feed the animals were fed impacted the degree of fat accumulation and resulted in the higher per cent content of kidney fat in the group of male goat kids offered the feed mixture supplemented with flax seed (3.10 %) as compared to the control group (2.85 %)
Badania bioakumulacji wybranych metali w miesie i narzadach wewnetrznych kozlat zywionych intensywnie
Owing to its wholesomeness and good taste, meat of goats and lambs is an increasingly
more important in human nutrition. It is characterized by excellent nutritive value and
high digestibility. It is also relatively rich in mineral compounds. The aim of this study has
been to determine the content of some elements in muscles, liver and kidneys of male
and felame kid goats, fattened to 150 day of life. The animals received full-ration mixture
containing 169 g total protein and 6.0 MJ net energy. The mixture was given ad libitum
and supplemented with meadow hay as bulk feed. During the whole period of fattening,
the animals were kept under the conventional housing system. Samples for analysis were
taken from adductor femoris muscles, liver and kidneys.
The muscle tissue of the analysed male goats contained less Cd (0.002 mg kg-1 ± 0.004)
than that of the female goats (0.003 mg kg-1 ± 0.001). In turn, the level Pb was lower in
the female goats (0.019 mg kg-1 versus 0.026 mg kg-1 in male goats), although the difference
was statistically non-significant. In the internal organs, more Cd occurred in kidneys
than in the liver, unlike Pb. The concentration Pb was higher in kidneys of the male
than female goats (0.073 mg kg-1 ± 0.02), whereas the level of this element the liver was
identical in both groups (0.084 mg kg-1 ). In the muscule tissue, the sex differentiated the
content of Fe (p = 0.01) as well as Mg and Zn (p = 0.05). The liver accumulated not only Pb
and Cd, but also Cu and Zn. The concentration Cu in the liver of female goats was higher
(146.79 mg kg-1 at p = 0.01) than in male goats by about 50 mg kg-1. High disproportions
between the sexes in the content of Fe in the liver were observed: 36.30 mg kg-1 for
female goats and 21.99 mg kg-1 for male goats (p = 0,01). In kidneys, however, the concentration
of Ca was very high, particularly for female goats particularly (81.01 ± 26.55 mg kg-1).Ze względu na walory zdrowotne i smakowe mięso kozie i jagnięce nabiera coraz większego
znaczenia w żywieniu człowieka. Charakteryzuje się doskonałymi właściwościami pod
względem wartości odżywczej i wysoką strawnością. Jest stosunkowo bogate w związki mineralne.
Celem badań było określenie zawartości wybranych pierwiastków w mięśniach,
wątrobie i nerkach koziołków i kózek żywionych do 150. dnia życia. Materiał doświadczalny
stanowiły koziołki i kózki rasy białej uszlachetnionej oraz tuczone do 150. dnia życia.
Zwierzęta żywiono pełnoporcjową mieszanką o wartości pokarmowej 168 g białka ogólnego
i 6,0 MJ energii netto. Mieszankę podawano ad libitum i uzupełniano dodatkiem
strukturalnym siana łąkowego. Przez cały okres tuczu zwierzęta utrzymywano w chowie
alkierzowym, w pomieszczeniach zamkniętych. Próby do analizy pobrano z mięśnia przywodziciela
uda (m. adductor), wątroby i nerek.
W tkance mięśniowej analizowanych koziołków doświadczalnych stwierdzono niższą
zawartość Cd (0,002 mg kg-1 ± 0, 0,004) ni¿ u kózek (0,003 mg kg-1 ± 0,001). Natomiast
poziom Pb był niższy w grupie kózek i wyniósł 0,019 mg kg-1 wobec 0,026 mg kg-1 – różnice
okazały się nieistotne statystycznie. W narządach wewnętrznych wyższy poziom Cd
stwierdzono w nerkach niż w wątrobie, a w przypadku Pb odwrotnie. Stężenie Pb było
wyższe w nerkach koziołków i wyniosło 0,073 mg kg-1 ± 0,02. W wątrobach poziom tego
pierwiastka był na tym samym poziomie (0,084 mg kg-1). Płeć różnicowała istotnie zawartość
Fe i Ca w tkance mięśniowej (p ≤ 0,01) oraz Mg i Zn (p ≤ 0,05). Wątroba była narządem koncentracji nie tylko Pb i Cd, ale Cu i Zn. Stwierdzono, że stężenie Cu w wątrobie
kózek było wyższe (p ≤ 0,01, 146,79 mg kg-1) w porównaniu z koziołkami o ok. 50 mg kg-1.
Zaobserwowano wysokie dysproporcje w zawartości Fe w wątrobie, ponieważ u kózek
stwierdzono 36,30 mg kg-1, a u koziołków 21,99 mg kg-1 (p ≤ 0,01). W nerkach wykazano
zdecydowanie większe stężenie Ca, szczególnie u kózek (81,01 ± 26,55 mg kg-1)
The comparison of chemical elements in meat tissue and internal organs goats and lambs
Przedmiotem badań było określenie zawartości wybranych metali w tkance mięśniowej,
wątrobie i nerkach koźląt i tryczków pochodzących z regionu Podlasia. Materiał badawczy
stanowiły koziołki rasy białej uszlachetnionej i tryczki polskiej owcy nizinnej. Zawartość
Fe, Ca, Mn, Zn, Mg, Cu oraz Pb w tkankach oznaczono metodą spektrofotometrycznej absorpcji
atomowej (AAS). Średnie stężenia magnezu w analizowanej tkance mięśniowej okazały się
statystycznie istotne (p ≤ 0,01) między badanymi gatunkami zwierząt. Podobne zależności wykazano
w wątrobie i nerkach. W tkance mięśniowej koziołków stwierdzono istotnie większą
(p ≤ 0,05) zawartość cynku i żelaza (Zn – 59,90 mg ・ kg–1, Fe – 28,27 mg ・ kg–1). Wątroba tryczków
zawierała mniej żelaza (48,70 mg ・ kg–1). Uzyskane wyniki nie przekraczały dopuszczalnych
norm zawartych w rozporządzeniach.The kontent of selected metals in the liver, kidney and meat tissue of goats and lambs

and Pb using atomie absorption spectroscopy (AAS). Mean concentration of Mg in the muscles was
significantly different depending on the animal breed. Similar results were obtained for kidney
and liver. The mean concentration of the Zn and Fe (Zn – 59.90 mg ・ kg–1 Fe – 28.27 mg ・ kg–1)
in tested muscle tissue of goats. Liver lambs contrained less Fe (48.70 mg ・ kg–1). The kontent
