    Architectural typology of intergenerational shared sites

    In the conditions of the modern world, there is an increasing socio-cultural gap between generations. To create sustainable development and functioning of society, to maintain its stability in the present and future, it is necessary to create conditions for strengthening intergenerational relations. All social programs must be accompanied by architectural programs, so there is a need for the architectural and urban planning transformation of the existing urban space in favor of the development of intergenerational ties. The purpose of this study is to determine the typological features of intergenerational centers based on a comparative analysis of existing facilities. Several different intergenerational shared sites examples around the world were analyzed. The analysis revealed a general typology of intergenerational environments: outdoor spaces for short-term intergenerational communication; indoor and outdoor spaces for intergenerational communication at centers; specialized housing estates and co-living buildings with public indoor and outdoor zones for intergenerational communication. The results of this work are the basis for further research, the purpose of which is to form the principles of an environment that promotes the development of intergenerational relations in Russian conditions and their approbation in the design of a residential area in Yakutsk

    The purpose of this study is to identify the facilities of green infrastructure that are able to improve living conditions in an urban environment in high-rise residential apartments buildings on steep slopes in the city of Vladivostok. Based on the analysis of theoretical sources and practices that can be observed in the world, green infrastructure facilities have been identified. These facilities meet the criteria of the sustainable development concept, and can be used in the city of Vladivostok. They include green roofs, green walls, and greening of disturbed slopes. All the existing high-rise apartments buildings situated on steep slopes in the city of Vladivostok, have been studied. It is concluded that green infrastructure is necessary to be used in new projects connected with designing and constructing of residential apartments buildings on steep slopes, as well as when upgrading the projects that have already been implemented. That will help to regulate the ecological characteristics of the sites. The results of the research can become a basis for increasing the sustainability of the habitat, and will facilitate the adoption of decisions in the field of urban design and planning

    The use of pectin extracts from chaenomeles fruits in bakery

    Currently, an urgent task is the creation of food products with directed biological activity through the use of natural ingredients. The mass consumption of bread gives reason to consider it as a product with exceptional potential and significance for improving the quality of nutrition and protecting the organism from the effects of harmful environmental factors. The aim of the research is to study the chaenomeles fruits, to determine the rational parameters for obtaining pectin extracts and to evaluate their effect on the baking properties of flour, the course of the technological process and the quality of finished bakery products. The objects of the research were chaenomeles fruits; pectin extracts; wheat flour; prototype bread samples. It has been studied the kinetics of pectin substances extraction and has been proposed the process rational parameters, which make it possible to obtain extracts with high functional and technological properties. It is shown that the addition of pectin extract from chaenomeles fruits at a dosage of up to 15 % improves the quality characteristics of bread. The proposed recipe allows obtaining high-quality enriched bakery products

    Improvement of the technology of bakery products using the wholemeal spelt flour

    Bread is one of the most popular mass-consumption products in Russia and in the world. The improvement of the bread quality, the development of new varieties with increased nutritional and biological value will improve the nutrition patterns of the population in the most rational way. The objective of this study is to justify the use of wholemeal spelt flour in the formulation of wheat bread. Generally accepted standard research methods were used. It is experimentally proved that the addition of spelt flour to the flour blend increases the activity of amylolytic enzymes, as well as decreases the mass fraction of crude gluten in all dough samples. When adding the spelt flour in the proportion 40% of the flour weight, physical and chemical parameters did not deteriorate and fell within the normal range, compared with the control sample of wheat bread. It is proved that the use of spelt flour in the production of bakery products will increase the biological and nutritional value of products, as well as expand the range of products for healthy nutrition

    Nowadays, most manufacturers are strategically focused on making healthy food products. Flour confectionery is a promising group of food products in this respect. The expansion of the range of flour products is due to the introduction of additional raw materials, one of the options for which is pectin. The aim of the research is to study the effect of different types of pectin on the detoxifying properties of biscuits and their quality indicators. The objects of research are three types of pectin (beet, apple, watermelon) and samples of butter biscuits. In the course of the work, generally accepted methods were used. The influence of the type and dosage of pectin on the quality of butter biscuits has been determined. It has been experimentally proven that the complexing ability of butter biscuits depends on both the type of pectin and its dosage. Cookies with the addition of beet pectin when kneading the dough have a greater complex-forming ability. The optimal dosage of pectin was established - 0.3% to the flour mass. The results obtained show that the addition of pectin to the recipe for butter biscuits improves its quality indicators, allows you to remove xenobiotics from the human body
