    Dietary diversity and healthy lifestyle

    The aim of this study was to clarify the characteristics of lifestyle and health awareness according to dietary diversity in a Japanese worksite population. The participants were 1,312 men and women aged 20 to 63 years who were living in Tokushima Prefecture, Japan during the period 2012-2013. We obtained anthropometric data and information on lifestyle characteristics using a self-administered questionnaire. Dietary intake was assessed using a food frequency questionnaire, and dietary diversity was determined using the Quantitative Index for Dietary Diversity (QUANTIDD). The characteristics of lifestyle and health awareness according to quartiles of the QUANTIDD score were assessed using the chi-square test and a general linear model. The higher the QUANTIDD score was, the larger were the proportions of participants who knew the appropriate amount of dietary intake and participants who referred to nutritional component information when choosing and / or buying food. Among participants with higher QUANTIDD scores, the proportion of participants who considered their current diet was good was high in women, whereas the proportion of participants who wanted to improve their diet in the future was high in men. Those results indicate that higher dietary diversity was related to better characteristics of lifestyle and awareness of health

    Fermented soy food and inflammatory makers

    Epidemiological investigations have shown that consumption of soybeans or soy foods reduces the risk of the development of cardiovascular disease, cancer and osteoporosis. The aim of this study was to determine the associations between different soy foods and inflammatory markers, including high-sensitivity C-reactive protein (hs-CRP), interleukin (IL)-6, and IL-18, in Japanese workers. The cross-sectional study included 1,426 Japanese workers (1,053 men and 373 women) aged 20 to 64 years. Intake of 12 soy foods was estimated by a validated food frequency questionnaire. Associations of total soy foods, fermented soy food, non-fermented soy food, soy isoflavone with hs-CRP, IL-6, and IL-18 levels were examined by general linear model regression analysis. We found that total fermented soy food intake was inversely associated with multivariable-adjusted geometric concentration of IL-6 in men (Q1 : 1.03 pg/mL, Q5 : 0.94 pg/mL ; P for trend = 0.031). Furthermore, it was shown that IL-6 concentrations were inversely associated with miso intake (β= -0.068 ; p = 0.034) and soy sauce intake in men (β= -0.074 ; p = 0.018). This study suggests that intake of total fermented soy food, miso and soy sauce be associated with IL-6 concentrations in Japanese men

    When the East meets the West: Art as a medium for religious and spiritual education

    As a Buddhist female from Japan who has lived in the United Sates for 15 years, I examine how Buddhist spirituality and aesthetics influence religious inspiration through woman’s eyes; in other words, from a feminist perspective to the “practice” of justice based on Buddhism. Hence, the driving questions of this dissertation are, how can we define beauty and spirituality from a feminist perspective so that they empower women’s voice through art, and what kind of contribution can this study provide to feminist scholarship in the West? The study’s significance lies in its illustration of the concept of feminist aesthetics that nurtures spirituality based on Buddhism, Taoism and Asian traditional thought which are not well known to the Western world. Thus, through using art and feminist- based research, as well as symbolic interactionism as a perspective, principles for a feminist aesthetics theoretical model as a dimension of spiritual and religious education are generated based on Eastern thought. The use of symbols and their interpretation are crucial to understanding the relationship between art and human perception which fosters awareness for social justice. Therefore, this study addresses the following questions: (1) What does Buddhist feminist aesthetics mean? (2) What are the characteristics of feminist ecology in Eastern thought? (3) How does Buddhist or Eastern feminist aesthetics contribute to eco-justice in the context of religious education? (4) In what ways can a theoretical model of Buddhist or Eastern feminist aesthetics enhance and contribute to foster spirituality as dimension of religious education in the West? The dissertation has five chapters. The first chapter is an introduction to the study, while chapter two reviews art as a source of creating imagination. The third chapter describes Rima Fujita’s artistry based on an Eastern perspective of aesthetics. Chapter four reviews feminist theological aesthetics and suggests how a Buddhist feminist perspective can make a contribution to Western scholarship. The final chapter proposes educational application, in particular to interreligious education, which fosters spiritual growth. Drawing deeper insights from these and other scholars, a new perspective, which incorporates and contributes to Western scholarship is proposed

    Marine Os isotopic evidence for multiple volcanic episodes during Cretaceous Oceanic Anoxic Event 1b

    The Aptian-Albian boundary is marked by one of the major oceanic perturbations during the Cretaceous, called Oceanic Anoxic Event (OAE) 1b. Extensive volcanic episodes at the Southern Kerguelen Plateau has been suggested as the trigger of OAE1b, but compelling evidence remains lacking. Here, we reconstructed the temporal variations of marine Os isotopic ratios across the Aptian-Albian boundary in the Tethyan and Pacific pelagic sedimentary records to elucidate the causal links between OAE1b, the biotic turnover, and volcanic episodes. Our new Os isotopic records show two negative spikes that correlate with a period of planktonic foraminiferal turnover across the Aptian-Albian boundary during OAE1b and suggest multiple submarine volcanic events. By comparing our Os isotopic profile with carbon isotopic compositions of carbonate, CaCO3 content, and the relative abundances of agglutinated foraminifera, we conclude that ocean acidification caused by the massive release of CO2 through extensive volcanic episodes could have promoted the major planktonic foraminiferal turnover during OAE1b

    ERK1/ATF-2 signaling axis contributes to interleukin-1β-induced MMP-3 expression in dermal fibroblasts.

    Matrix metalloproteinases (MMPs) play a pivotal role in tissue remodeling by degrading the extracellular matrix (ECM) components. This mechanism is implicated in a variety of physiological and pathological cellular processes including wound healing. One of the key proteins involved in this process is the proinflammatory cytokine interleukin-1β (IL-1β, which induces the expression of MMP-3 mRNA and the secretion of MMP-3 protein by dermal fibroblasts. In this study, we first investigated the contribution of activating transcription factor 2 (ATF-2) to IL-1β-induced MMP-3 expression in dermal fibroblasts. Our results showed that in cells transfected with ATF-2 siRNA or treated with the ATF-2 inhibitor SBI-0087702, IL-1β-induced MMP-3 mRNA expression was reduced. We also demonstrated that IL-1β stimulates the phosphorylation of ATF-2. These observations suggest that ATF-2 plays an important role in IL-1β-induced MMP-3 expression. Next, we investigated the role of MAPK signaling in ATF-2 activation. In cells treated with the extracellular signal-regulated kinase (ERK) inhibitor FR180240, as well as in cells transfected with ERK1 and ERK2 siRNAs, IL-1β-induced MMP-3 mRNA expression was reduced. In addition, we showed that IL-1β induced the phosphorylation of ERK1/2. These observations suggest that ERK1 and ERK2 are involved in IL-1β-induced MMP-3 expression. However, ERK1 and ERK2 do seem to play different roles. While the ERK inhibitor FR180204 inhibited IL-1β-induced ATF-2 phosphorylation, only in cells transfected with ERK1 siRNA, but not ERK2 siRNA, IL-1β-induced ATF-2 phosphorylation was reduced. These findings suggest that the ERK1/ATF-2 signaling axis contributes to IL-1β-induced MMP-3 expression in dermal fibroblasts
