    Opis svojstava ekstra djevičanskog maslinovog ulja dobivenog iz raznih kultivara

    The determination of some minor components of extra virgin olive oil, and in particular of the polyphenolic fraction of pigments and fragrances, can contribute to the characterization of the monovarietal productions: the quali-quantitative assessment of these substances can in fact contribute to the valorisation of typicalities and, at the same time, consent to the optimisation of the operational techniques during the processing and the eventual blending. The analytical techniques, applied here for the characterisation of extra virgin olive oil of Abruzzo and Istria, have highlighted that chemical composition can enhance the valorisation of these typical products. Nevertheless, further sampling program is needed to evidence typical composition profile that might be used as “origin markers”.Određivarije nekih manjih komponenata ekstra djevičanskog maslinovog ulja, naročito polifenolne frakcije pigmemta i mirisa, može doprinijeti svojstvima monovarijetetnih proizvoda: kvalitativna i kvalitativna procjena tih supstancija može zapravo doprinijeti valorizaciji tipičnosti te, istodobno omogućiti optimizaciju operativnih tehnika za vrijeme prerade i miješanja. Analitičke tehnike, ovdje primijenjene za opis svojstava ekstra djevičanskog maslinovog ulja iz Abruzza i Istre pokazuju da kemijski sastav može popraviti vrijednost ovih tipičnih proizvoda. Ipak, potreban je dodatni program uzorkovanja da se dokaže tipični profil sas¬tava, što se može upotrijebiti kao "oznaka podrijetla"

    This study investigates the perceptions, determinants, and behavioural intentions regarding healthy food choices of Italian people belonging to Gen-Z. By adopting the Health Belief Model (HBM), it combines into an overall framework perceptual (perceived benefits and barriers, perceived notion of healthy food), personal (healthy lifestyle, individual knowledge about healthy food), and emotional motives (satisfaction with healthy food) and investigates their mutual interactions. Moreover, since emotions are key elements in the decision-making process, the study analyses whether and how satisfaction can act as a mediator on the relationships between behavioural intention and the other antecedents, thus conditioning their occurrence. A quantitative survey based on 297 Gen-Z members, aged between 18 and 24 years, has been conducted. Data analysis uses structural equation modelling (SEM) based on partial least square (PLS) approach, to perform reliability and validity checks of the model and to test the relationships among variables. Before PLS-SEM, an exploratory factor analysis (EFA) is also performed to preliminarily investigate potential sub-groups of items, thus providing a deeper comprehension of the phenomenon. The findings indicate that perceived benefits, healthy lifestyle, healthy food knowledge and satisfaction are direct antecedents of behavioural intention. Different information sources improve knowledge, while healthy food perception and healthy food barriers are positively related to satisfaction. The mediating role of satisfaction emerges prominently, suggesting that the health decision making of Gen-Z is a complex cognitive process resulting from a mix of both rational and emotional forces. Implications for theory and practice are discussed, providing recommendations for improving people of Gen-Z satisfaction with healthy foods and increasing their overall intention to buy and consume them

    Objectives: In the wake of the ongoing Covid-19 pandemic, this study aims to investigate the conditions and assumptions that have prompted numerous companies, especially small ones, to undertake important actions to reconvert their business. In particular, the main objective of this paper is to provide suggestions and knowledge that will be necessary in the post-Covid period, in which many of the approaches and business paradigms will be subject to profound changes and new perspectives to be implemented. Literature review: The occurrence of a crisis is to be understood as a cyclical and non-extraordinary phenomenon that can often occur in business activities (Giacosa, Mazzoleni, 2018). It is therefore possible to state that in modern market economies, corporate crises have become a permanent part of the business operating system (Sirleo, 2009). However, the present crisis is to be considered as the most serious after that of 1929 (Carnazza, Giorgio 2020). The economy of the European area witnessed a contraction of 7.8% in autumn 2020. It is estimated that only at the beginning of 2023, the European states will be able to return to a pre-pandemic economic phase. Approach/Method: It has been developed a qualitative multiple case study research based on the empirical method of the semi-structured interview, leading the interviewee through very specific questions on topics and salient points, which stimulated the subject to provide well-defined notions and opinions. The study analyzes five small business realities, strongly rooted in their home territories, which have made very courageous choices, undertaking different and particular paths of reconversion of the business. Findings: The companies analyzed in this work have shown to have an adaptive and resilient strategic approach as a minimum common denominator, which has allowed them not only to survive during the crisis, but to trigger new scenarios and new opportunities to be exploited in the future. The typical reactivity of small and medium-sized enterprises is pushing these realities to seek their own emergency management strategy, breaking away from traditional schemes and betting on something completely new. Value & Implications: The considerations derived from this study cannot be extrapolated and decontextualized from the emergency in progress, but are presented as methods and examples, if not imitative, but of important reference for future emergency occasions of this magnitude. New approaches and paradigms seem to emerge, based on an adaptive strategy that is indispensable in an unpredictable environment, which require greater flexibility and speed of response

    Healthy and quality food attitudes and lifestyle: a generational cohort comparison.

    Purpose The purpose of this study is to investigate how the different generations of consumers behave in the field of healthy and quality food consumption, considering their perceptions about healthy attributes and healthy eating style, what are the main trusted sources influencing consumption or the attention towards healthy and quality food, how do they behave towards healthy and quality foods and which benefits and barriers affect their consumption. Design/methodology/approach Data for this study were obtained from a questionnaire survey carried out over a six-month period in 2021. The questionnaire was administered online. The sampling procedure was based on a convenient non-random sampling method applied to the Italian population aged between 18 and 75 years old. The data collection process resulted in 1,646 completed questionnaires. Findings The results show that, in line with the theory of generational cohorts, each generation has its own specificities regarding food behaviour. The study reveals a highly sensitive approach towards healthy and quality food consumption from both Z-ers and the Baby Boomers, whilst X-ers are quite aligned with the other generations. Millennials show specific, sometimes contradictory, attitudes and habits. Originality/value The present results offer new insights into the analysis of healthy and quality food consumption, highlighting significant differences amongst generations, which can inspire public and private intervention aimed at encouraging the overall attention and consumption of healthy and quality food with related implications in terms of society's well-being and longevity improvements
