    Changes in Water Holding Capacity and Shear Force in Fallow Deer Muscles during Ageing

    The aim of the study was to determine changes in water-holding and water-binding capacities in relation to the tenderness of fallow deer semimembranosus (SM) and longissimus thoracis et lumborum (LTL) muscles during ageing. In the study, muscles obtained from 18-month-old farm-raised fallow deer bucks were used. The quality of the meat was determined during ageing for 48 h, 168 h, and 288 h post slaughter. It was noted that ageing had a negative effect on water retention in fallow deer meat. It decreased the ability of meat tissue to bind added water (p < 0.01) and increased cooking losses (p < 0.01), though it also increased tenderness (p < 0.01). Generally, SM showed lower (p < 0.001) tenderness than LTL. SM and LTL muscles were similar in terms of free water content, ability to bind added water, and cooking losses (p > 0.05). The way the meat was heated (cooked in water vs. roasted in the dry air) affected only cooking losses (p < 0.05), which were higher in roasted samples but had no effect either on volume loss or meat tenderness. In conclusion, the main factor affecting the water holding and binding capacities, as well as fallow deer meat tenderness, is ageing. The time enough to obtain tender meat is 168 h for LTL, whereas SM should be aged for 288 h

    Marinating and Grilling as Methods of Sensory Enhancement of Sous Vide Beef from Holstein-Friesian Bulls

    An attempt was made to identify technological solutions that would improve the quality of products from the meat of Holstein-Friesian (HF) bulls, with particular emphasis on standardising the quality of the longissimus lumborum (LL) and semimembranosus (SM) muscles. Marinating (Mar) and grilling (Grill) were used in combination with the sous vide (SV) method. The effects of the type of muscle (LL or SM) and the applied treatments (SV, SVMar, and SVGrill) on the yield, colour, maximum shear force (WBSF), tenderness, juiciness, and aroma intensity of grilled and marinated meat were determined. The applied treatments had a significant influence on the meat yield (p < 0.001), WBSF (p < 0.001), tenderness (p < 0.01), and juiciness (p < 0.05) assessed in sensory evaluation. Additional treatments supported the optimisation of the aroma and taste of LL and SM and reduced the WBSF. The SVMar method optimised the beef’s tenderness, and therefore, it can be recommended for preparing meat from HF bulls for consumption

    The study was aimed at determining the effects of the rearing system and intensity of fattening on beef physicochemical properties and sensory quality, fatty acid composition, and mineral compounds and vitamins concentration. The study was conducted using meat from 38 young, crossbred bull calves, which were reared with nurse cows (C) or were fed milk replacer (R). In the study, intensive (Int) or semi-intensive (SInt) fattening system were applied. The bulls were slaughtered at the age of 560 days and samples of the longissimus lumborum (LL) muscle were collected. Meat from C bulls was juicier (p p p < 0.05), compared with the SInt system. Meat from Int bulls had a better eating quality and a higher monounsaturated fatty acid (MUFAs), Zn, and Fe; however, it had a lower proportion of polyunsaturated fatty acids (PUFAs) and α-tocopherol concentration than meat obtained from SInt bulls

    Investigation of the Possibility of <i>Listeria monocytogenes</i> Growth in Alternatively Cured Cooked Sausages—A Case Study

    The aim of this study was to investigate the possibility of Listeria monocytogenes growth in cooked sausages produced in the same meat processing plant without or with a direct nitrite addition (alternatively cured, AC, and nitrite cured, control). The AC and control sausages were inoculated with a mix of three L. monocytogenes strains. Products (n = 24 sausages for each product type) were vacuum-packed and stored for 10 days at 6 °C. Residual nitrite and salt contents, water activity and the number of L. monocytogenes were determined in products. A higher nitrite content was found in the control (44.9 mg/kg) compared with AC (12.1 mg/kg). Significantly higher L. monocytogenes counts at the 6th and the 8th day were noted in AC sausages, however at the 10th day they did not differ significantly between the treatments (2.96 and 3.27 log10 CFU/g in the control and AC, respectively). AC sausages showed a growth potential value of 0.64, which indicates the possibility of L. monocytogenes growth on the surface of alternatively cured products. In contrast, a growth potential value of 0.21 was found in control sausages, which indicates that nitrite cured sausages did not support the pathogen growth at 6 °C

    The Influence of Sous Vide Parameters on Nutritional Characteristics and Safety of Pikeperch Fillets

    The aim of the study was to investigate the influence of temperature and time combination on the quality of pikeperch fillets and to propose settings which allow high nutritional quality fish fillets to be obtained. The material for the study consisted of 24 farmed pikeperch (Sander lucioperca) fillets, which were evaluated raw and after sous vide (SV) cooking proceeded at 65 &deg;C for 45 min (SV65), 75 &deg;C for 20 min (SV75), and 90 &deg;C for 10 min (SV90). The chemical composition was affected by SV procedure; SV90 was similar to raw samples in terms of moisture, protein, and fat content, whereas SV65 differed the most. Carnosine contents decreased in all SV samples compared with raw ones, and anserine only decreased in SV90. There were no differences in terms of fatty acid composition (% of total) between SV and raw samples. In SV75 and SV90 total viable counts, Enterobacteriaceae, Enterococcus sp., and Staphylococcus sp. were reduced below a detection level but not in SV65. These samples also showed a better sensory quality than SV65. Therefore, SV75 and SV90 might be recommended for pikeperch fillets preparation, taking into account safety and nutritional aspects

    The Applicability of Total Color Difference ΔE for Determining the Blooming Time in Longissimus Lumborum and Semimembranosus Muscles from Holstein-Friesian Bulls at Different Ageing Times

    This study was conducted to determine the optimal blooming time in beef muscles based on &Delta;E, and to analyze the effects of muscle type and ageing time on beef color and blooming. Beef color was determined on freshly cut longissimus lumborum (LL, n = 8) and semimembranosus (SM, n = 8) muscles on days 1, 9, and 14 of ageing during 60 min blooming at 5 min intervals. It was found that &Delta;E0, representing the difference in color between freshly cut muscles and subsequently analyzed samples, supported the determination of the optimal blooming time, which varied across ageing times (15, 20, 25 min for the LL muscle, and 10, 15, 20 min for the SM muscle on days 1, 9, and 14 of ageing, respectively). Beef color was affected by both muscle type and ageing. The values of color parameters increased between days 1 and 9 of ageing. The results may have practical applications because beef should be presented to consumers and restaurant owners approximately 25 min after cutting, when its color has fully developed
