    The experiments described in this thesis are concerned with the physics of liquid "4He and "3He droplets and their application to the high resolution spectroscopy of embedded molecules. These droplets, formed in a supersonic expansion into vacuum, consist of several thousand atoms and cool to their final temperatures by evaporative cooling. They are easily doped with molecules by passing the droplet beam through a pick-up chamber. In order to explore the interaction between the chromophore and the quantum droplet, the doped droplets are studied by means of laser spectroscopy, subsequently ionized by electron impact and detected in a quadrupole mass spectrometer. We have studied the vibrational excitation of sulfur hexafluoride (SF_6) and carbonyl sulfide (OCS) in the droplets via beam depletion spectroscopy. The depletion spectra are red shifted with respect to the gas phase and are rotationally resolved. We have successfully fitted a free rotor Hamiltonian to the measured spectra. While for SF_6 and OCS in "4He droplets, no deviations from the symmetry of the free rotors were found, the quantum environment does influence the molecular motion. This is reflected in the change of the molecular constants with respect to the gas phase. The rotational constants are reduced by a factor of three, whereas the centrifugal distortion constants increase by several orders of magnitude. The analysis of the frequency shift of the SF_6 spectra as a function of droplet size gives first experimental evidence that a so called snowball like structure of helium is formed around the embedded molecule. The average temperature of "4He droplets can be derived from the rotational structure. For mean sizes of more than 2000 atoms the temperature of the droplets is found to be T = 0.37 #+-# 0.02 K.
