    Perception of healthy eating among adults participating in the Eat-Mot survey in Brazil.

    The purpose was to verify the association between sociodemographic and health characteristics with the perception of healthy eating among Brazilian participating in the international study Eat-Mot. The perception of healthy eating was investigated by frequency categorized into: never/rarely/sometimes and most of the times/always. Ordinal logistic regression was used to calculate “odds ratio” to verify the relationship between sociodemographic and health variables with the perception of healthy eating. Six hundred and sixty individuals participated, most of them women (74,7%) who have completed higher education or ongoing (77,6%). A good number of the interviewees perceived their diet as healthy (49,3%). In multivariate analysis, it was noted that there was a negative association between the perception of healthy eating with: be male (OR=0,45; IC95%: 0,31-0,64); have less education (high school: OR=0,51; IC95%: 0,35-0,74 and elementary school: OR=0,11; IC95%: 0,03-0,42); less practice of physical activity (>3 times/week: OR=0,40; IC95%: 0,25-0,63, 2-3 times/week: OR=0,29; IC95%: 0,16-0,52; <once/week: OR=0,24; IC95%: 0,14-0,41; and never: OR=0,13; IC95%: 0,08-0,22) and higher body mass index (OR=0,94; IC95%: 0,91- 0,97).     Pork skin-based emulsion gels as animal fat replacers in hot-dog style sausages

    Pork skin-based emulsion gels (EGs) elaborated with canola oil, bamboo fiber and inulin were used to replace 50% and 100% of pork back fat in hot-dog sausages made with a high content of mechanically deboned chicken meat (MDCM). Nutritional, technological, and microstructural characteristics of sausages were assessed. Sausages containing EGs presented a higher amount of ω3 polyunsaturated fatty acids (PUFAs), and reduction of saturated fatty acids (SFAs) and ω6/ω3 ratio up to 77% and 76%, respectively. pH, aw, and texture parameters of sausages were not affected by EGs addition. Color parameters presented a lightly increase in L* values and a reduction in a* values in the sausages. The replacement of 50% of pork back fat by EGs did not affect all sensory parameters of sausages.     Atividade do sistema antioxidante e desenvolvimento de aerênquima em raízes de milho 'Saracura' Antioxidant system activity and aerenchyma formation in 'Saracura' maize roots

    Este trabalho teve como objetivo avaliar a influência de sucessivos ciclos de seleção do milho 'Saracura' na atividade das enzimas do sistema antioxidante, e a relação dessas enzimas com a capacidade dessa variedade em desenvolver aerênquima. Sementes de 18 ciclos de seleção intercalados do milho 'Saracura' e da cultivar BR 107, sensível à hipoxia, foram semeadas em vasos e em casa de vegetação. As plantas foram submetidas ao alagamento intermitente de dois em dois dias. As amostras de raízes foram coletadas após 60 dias e analisaram-se as atividades das enzimas peroxidase do guaiacol, peroxidase do ascorbato e catalase, além da capacidade das plantas de cada ciclo desenvolverem aerênquima. Ao longo dos ciclos, as plantas apresentaram modificações na atividade das enzimas, com aumento na de peroxidase do ascorbato e diminuição na de catalase e de peroxidase do guaiacol. Observou-se, ainda, maior capacidade de desenvolver aerênquima nos últimos ciclos de seleção. A redução na atividade das enzimas do sistema antioxidante parece estar relacionada a um desbalanço na decomposição de H2O2.<br>This work aimed to assess the influence of successive selection cycles in 'Saracura' maize on the enzyme activity of the antioxidant system and the relationship of these enzymes with the aerenchyma development capacity of this variety. Seeds of 18 intercalated selection cycles of the 'Saracura' maize and of the cultivar BR 107, sensitive to hipoxia, were sown in pots in the greenhouse. Plants were submitted to intermittent soil flooding each two days. After 60 days, the roots were sampled and analysis were done for the guaiacol peroxidase, ascorbate peroxidase, and catalase activities and for the capacity of the plants of each cycle to develop aerenchyma. The plants showed modifications in enzyme activity along the cycles, increasing the ascorbate peroxidase activity and decreasing the catalase and guaiacol peroxidase ones. A greater capacity to develop aerenchyma was also observed in the last selection cycles. Reductions in the enzyme activity of the antioxidant system seem to be related to a disorder in the H2O2 decomposition capacity

    Scorpion stings in Brazil are important not only because of their incidence but also for their potential ability to induce severe, and often fatal, clinical situations, especially among children. In this report we present the clinical and laboratory data of 4 patients victims of scorpion stings by T. serrulatus, who developed heart failure and pulmonary edema, with 3 of them dying within 24 hours of the sting. Anatomopathologic study of these patients revealed diffuse areas of myocardiocytolysis in addition to pulmonary edema. The surviving child presented enzymatic, electrocardiographic and echocardiographic changes compatible with severe cardiac involvement, which were reversed within 5 days. These findings reinforce the need for continuous monitoring of patients with severe scorpion envenoming during the hours immediately following the sting.<br>Os acidentes escorpiônicos no Brasil, assumem grande importancia não só pela sua incidência como pela sua potencialidade em induzir quadros clínicos graves, muitas vezes fatais, principalmente em crianças. Apresentamos neste relato os dados clínicos e laboratoriais de 4 pacientes vítimas de escorpionismo, causado pelo T. serrulatus, que evoluíram com falência cardíaca e edema pulmonar, sendo que 3 foram a óbito dentro das primeiras 24 horas após acidente. O estudo anátomopatológico desses pacientes revelou áreas de miocardiocitólise, além do edema pulmonar. Na criança que sobreviveu foram detectadas alterações enzimáticas, eletro e ecocardiográficas compatíveis com grave comprometimento cardíaco, reversíveis dentro de 5 dias. Tais achados reafirmam a necessidade de monitorização contínua no paciente com escorpionismo grave, nas horas subsequentes ao envenenamento
