    Apple pomace powder as natural food ingredient in bakery jams

    The aim of the present study was to investigate whether apple pomace powder produced by a simple drying method is suitable for replacing pectin in bakery jam products. Rheological properties of bakery jams were tested by oscillatory tests using amplitude sweep method. Apple pomace addition decreased gel strength and stability of bakery jams, while 12-month storage increased the gel strength of samples. Based on our results, dried apple pomace powder seems to be suitable to replace pectin up to 40% without changing rheological properties of bakery jams

    Distribution of antioxidant components in roots of different red beets (Beta vulgaris L.) cultivars

    The beetroot is typically on the table in winter in form of pickles or juice, but for its nutritional values it would deserve more common consumption. Its curative effect in great part is due to the several vitamins, minerals, and compounds with antioxidant activity. But the division of biological active compounds is very different in the parts of the root. Based on our results, we could compare the differences between the morphology and some inner contents (soluble solid content, colour, betacyanin, betaxanthin, and polyphenol contents, antioxidant activity, and some flavonoids) of two beetroot cultivars. The results of the morphological investigations showed that the ‘Cylindre’ cultivar had more favourable crop parameters than the ‘Alto F1’ cultivar. In the ‘Cylindre’ cultivar the polyphenol content and the antioxidant capacity were significantly higher than in the ‘Alto F1’ cultivar. By determination of the betanin contents of the investigated beetroots, our results showed both betacyanin and betaxanthin contents were higher in the ‘Cylindre’ cultivar. The chlorogenic acid, gallic acid, the cumaric acid have been identified based on the peaks of HPLC in the studied beetroot cultivars

    Potassium acetate solution as a promising option to osmotic distillation for sour cherry (Prunus cerasus L.) juice concentration

    Different osmotic agents (OA), such as potassium acetate (CH3COOK), potassium carbonate (K2CO3) and ammonium nitrate (NH4NO3), have been examined as alternatives to the traditionally used calcium chloride (CaCl2) for osmotic distillation concentrating of clarified and pre-concentrated sour cherry (Prunus cerasus L.) juice. Comparison of the process performances based on the permeate fluxes has been carried out. Regarding the permeate flux results, simplified estimation of the overall mass transfer coefficient of the most effective osmotic agent and the reference (CaCl2) solution has been also performed. Furthermore, analytical methods such as total antioxidant activity (TAA) and total polyphenolic content (TPC) using spectrophotometric assays have been also carried out to evaluate the effect of the osmotic distillation on the valuable compounds content of concentrated sour cherry juice. CH3COOK was found to be the most effective, resulted more than 25% higher permeate flux during the sour cherry juice concentration. K2CO3 and NH4NO3 were less effective. The simplified mass transfer estimation showed that the CH3COOK is more effective only at near saturated concentrations compared to the CaCl2. Regarding the TAA and TPC contents, a significant loss was found in case of all OAs during the concentration procedures

    Evaluation of elder (Sambucus nigra) varieties and candidates for the canning industry. Results of the composition studies

    Sambucus nigra is a very common elder species in Europe. Due to its excellent composition, natural dye content and healing power it can be considered as a biological active plant. In Hungary the cultivation of Sambucus nigra started in the nineties and since that time there is a growing demand for this plant. Sambucus nigra is a special fruit due to its sole.-application for processing industry. Partly fruit products are made of it, partly it is used as a natural dye. In both cases the first step is the knowledge and evaluation of the composition of the various elder varieties and candidates. For that reason composition studies of different elder types were performed in several years at the Department of the Canning Technology of the Szent Istvan University. The most important sample was the Haschberg variety, which is the sole elder type accepted and allowed for propagation by the government. This plant is grown in the Pilot Plant of the Szent IstvĂĄn University in SzigetcsĂ©p. Among the studied samples there were some varieties cultivated in the FertƑd Research Station. They were the following types: No. 33, 480 and 481. Besides elder collected wild in Szigetcsep and the very promising early-ripened SZ-CS 21-23 variety originated also from SzigetcsĂ©p were investigated. One year it was possible to study the Sambu variety, too. Department of the Fruit Culture of the Szent IstvĂĄn University helped to obtain the various elder types and candidates. Along our experimental activities, the following components and parameters were studied: the content of pectin, organic acid, carbohydrate, mineral, vitamin C, total acid, aquesoluble dry material, anthocyanin and the pH. After having obtained a juice, a concentrate from the species has been made and — after freezing — the aquesoluble dry substance and the acid content, as well as the colour parameters were monitored. Studies were performed in two years (1997-98). On the basis of these results classes were established for all compounds, from which an overall ranking was derived. It was found that in both years the Haschberg variety proved to have the best composition. Therefore regarding to the overall series of order the experiments performed in the second year supported the results obtained in the previous year. Results have shown that Sambucus nigra has excellent composition beside its curative effect. Its mineral content has surpassed that of the other fruits and it had advantageous acid-and carbohydrate composition. The ascorbic acid content of the Haschberg variety is striking. It can be concluded from the experiments that the Haschberg type has the most advantageous composition, therefore it is suitable for making special curative and exclusive products. &nbsp

    Investigation of colourant content and stability in elderberry (Sambucus nigra L.)

    For colouring of foods anthocyanins are widely used, which are present in great quantity in black elderberry (Sambucus nigra). Experiments were done to study the anthocyanin content of several varieties and candidates, from which the highest value was found in the Haschberg cultivar. Further experiments were performed with this cultivar to study the anthocyanin stability ofS. nigraunder different circumstances (heat-treatment at various pH and temperatures).     Application of Photothermal Methods for Quantification of Carotenoids in Apricot Jams

    Carotenes, found in a diversity of fruit-containing foods, are important sources of antioxidants; a good example is apricot jam. In the study described in this paper, both the total carotenoid content (TCC) as well as the content of \upbeta ÎČ-carotene in six different apricot jams were quantified using traditional (UV–VIS) spectrophotometry (SP), high-performance liquid chromatography (HPLC), laser photoacoustic spectroscopy (LPAS), and the optothermal window (OW) method. Unlike SP and HPLC, LPAS and the OW methods require the minimum of sample preparation and only a one time calibration step which enables practically direct quantification of the TCC. Results were verified versus data obtained with SP as the reference technique. It was shown that LPAS and the OW method (at 473 nm) provide satisfactory results with R2=0.9884R^{2}=0.9884R2=0.9884 and 0.9766 for LPAS and OW, respectively

    Examination of valuable ingredients of some wild fruits

    A possible way of the development of Hungarian agriculture is the selection and growing of new fruit species and varieties featuring special qualities, with high biological nutritive and health protecting properties due to their natural composition. A reserve for such new fruits is the native dendroflora, e.g. those wild-growing trees and shrubs of Hungary, which bear edible fruits. The publication is giving a summary of chemical analyses done on the fruits of the plants listed below. The research team on the project started the work in 2001 with woody species (genera) as follows: common elder (Sambucus nigra) clone named Szcs-1, Szcs-2, Szcs-3, Szcs-4, Szcs-5, SzcsK-1, SzcsK-2 dog rose (Rosa canina) types: clones named Sz-1, Sz-2, Sz-3, Sz-4 and Sz-5 . native rowans: Sorbus dacica, S.rotundifolia, S. degenu, S.bakonyensis cv. Fånivölgy hawthorns: Crataegus monogyna, C. orientalis,C..v lavallei. cornel cherry: Cornus mas cv. Csåszló. The present paper is reporting on the content of the following compounds in the fruits: dry matter (refractometric values), total acid content, ascorbic acid, 13-carotene, pectin, minerals and carbohydrates. The results have shown that these wild fruits have excellent composition. Besides their curative effects, their content of minerals, ascorbic acid and 13-carotene has surpassed that of the traditional fruits. These fruits are rich in ascorbic acid, 13-carotene and pectin. The high content of the above-listed, biologically active compounds makes the new wild fruits studied suitable for the preparation (and later: mass-production) of special curative and exclusive products
