    Effect of water activity in tortilla and its relationship on the acrylamide content after frying

    The objective of this study was to relate the tortilla minimum integral desorption entropy with acrylamide content during processing of tortilla chips. Tortilla pieces were stored at 30 °C at aw of 0.11-0.84 for 4 days and fried later in soybean oil at 180 °C for 25 s. The lowest acrylamide content was observed in tortilla chips made of non-stored tortilla (aw = 0.98) as well as in those prepared from tortilla stored in the minimum integral entropy (aw = 0.53). In addition, the color and texture values were similar in both cases. These results suggest that the reduction of the acrylamide content during processing of tortilla chips and other tortilla based foods thermally processed might be modified by factors such as moisture content, aw, and the physical state of water in the tortilla. Thus, the minimum integral entropy showed to be a reliable indicator to establish the most appropriate moisture conditions to obtain tortilla chips with reduced level of acrylamide when tortilla is dehydrated. © 2014 Elsevier Ltd.     Photoelectric evaluation of dye-sensitized solar cells based on prodigiosin pigment derived from Serratia marcescens 11E

    Prodigiosin, a natural pigment produced as a secondary metabolite by the non-photosynthetic bacterium Serratia marcescens, was tested as a sensitizer in dye-sensitized solar cells (DSSC). The strain S. marcescens 11E, which was isolated from a natural spring located in the northeastern Mexican state of Nuevo Leon, was cultivated on peanut oil broth 1% v/v, a culture medium which is known to enhance the production of prodigiosin. The resulting pigment was extracted with chloroform and identified as prodigiosin based on the spectroscopic and structural characteristics obtained by UV–Vis spectrophotometry along with FTIR and 1H NMR spectroscopies. The initial absorbance decomposition test performed on the bacterial pigment demonstrated that prodigiosin exhibited high photostability after five days, while the photovoltaic performance test of the sensitized DSSC, resulted in an open voltage circuit of 560 mV, a current density of 0.096 mA/cm2, and efficiency of 0.032%.     Unraveling the real magnitude of illegal wildlife poisoning to halt cryptic biodiversity loss

    Illegal wildlife poisoning is a global threat for biodiversity, yet the magnitude of its impact on ecosystems is largely underestimated as most of poisoning episodes remain undetected. Here, we conducted a large-scale field experiment to better understand the real dimension of the illegal wildlife poisoning in terms of composition and number of species and abundance of impacted individuals, as well as the ecological factors driving it. We used camera traps to monitor simulated poison baits placed in 25 study areas in SW Europe and applied Good–Turing theory to estimate the richness of species of the entire assemblage (observed plus undetected). We recorded 3095 individuals from 39 vertebrate species that consumed 94 % of the baits (N = 590). Yet, using sample completeness to estimate the entire species assemblage yielded a total of 47 species exposed to illegal poisoning. The observed assemblage included different trophic and functional groups (from lizards and snakes to apex species among birds and mammals), as well as a 38 % of threatened and near threatened species (according to Spanish and Portuguese vertebrate red list and UICN list). The size (weight) of the bait outstands as a reliable predictor of the number of species (0–8 species/bait, mean = 2) and individuals (0–99 individuals/bait, mean = 5) susceptible to poisoning. The habitat where the bait was placed modulated the abundance of individuals affected (greater in open than in closed habitats). Type of bait and habitat drove the compositional variation of species. Aquí asumimos que, a pesar del avasallamiento de las ciencias aplicadas y la tecnología en los contextos de Educación Superior; cabe seguir cuestionándonos sobre las “Humanidades” y sin renunciar al pensamiento crítico, ubiquemos su capacidad dialógica y de interpelación entre conocimientos y realidad. Diálogos Entre las humanidades, reúne textos de profesores de varias universidades de Santiago de Cali, México y Cuba, con variedad de enfoques, invitando a un ejercicio plural y concreto del pensamiento. Este texto se constituye en un punto de cruce de los clásicos diálogos con la filosofía, la historia, la estética y la ética con nuevos problemas de la comunicación social, la publicidad y a la educación para la paz. Las humanidades se encuentran hoy más vigentes que nunca, aportando claves e instrumentos teóricos para el análisis de temas y problemáticas de nuestro tiempo

    The CARBA-MAP study: national mapping of carbapenemases in Spain (2014–2018)

    Introduction:Infections caused by carbapenem-resistant Enterobacterales (CRE) and carbapenem-resistant Pseudomonas aeruginosa, including isolates producing acquired carbapenemases, constitute a prevalent health problem worldwide. The primary objective of this study was to determine the distribution of the different carbapenemases among carbapenemase-producing Enterobacterales (CPE, specifically Escherichia coli, Klebsiella pneumoniae, Enterobacter cloacae complex, and Klebsiella aerogenes) and carbapenemase-producing P. aeruginosa (CPPA) in Spain from January 2014 to December 2018.Methods: A national, retrospective, cross-sectional multicenter study was performed. The study included the first isolate per patient and year obtained from clinical samples and obtained for diagnosis of infection in hospitalized patients. A structured questionnaire was completed by the participating centers using the REDCap platform, and results were analyzed using IBM SPSS Statistics 29.0.0.Results: A total of 2,704 carbapenemase-producing microorganisms were included, for which the type of carbapenemase was determined in 2692 cases: 2280 CPE (84.7%) and 412 CPPA (15.3%), most often using molecular methods and immunochromatographic assays. Globally, the most frequent types of carbapenemase in Enterobacterales and P. aeruginosa were OXA-48-like, alone or in combination with other enzymes (1,523 cases, 66.8%) and VIM (365 cases, 88.6%), respectively. Among Enterobacterales, carbapenemase-producing K. pneumoniae was reported in 1821 cases (79.9%), followed by E. cloacae complex in 334 cases (14.6%). In Enterobacterales, KPC is mainly present in the South and South-East regions of Spain and OXA-48-like in the rest of the country. Regarding P. aeruginosa, VIM is widely distributed all over the country. Globally, an increasing percentage of OXA-48-like enzymes was observed from 2014 to 2017. KPC enzymes were more frequent in 2017–2018 compared to 2014–2016.Discussion: Data from this study help to understand the situation and evolution of the main species of CPE and CPPA in Spain, with practical implications for control and optimal treatment of infections caused by these multi-drug resistant organisms

    Integrative development of a short screening questionnaire of highly processed food consumption (sQ-HPF)

    Background: Recent lifestyle changes include increased consumption of highly processed foods (HPF), which has been associated with an increased risk of non-communicable diseases (NCDs). However, nutritional information relies on the estimation of HPF consumption from food-frequency questionnaires (FFQ) that are not explicitly developed for this purpose. We aimed to develop a short screening questionnaire of HPF consumption (sQ-HPF) that integrates criteria from the existing food classification systems. Methods: Data from 4400 participants (48.1% female and 51.9% male, 64.9 +/- 4.9 years) of the Spanish PREDIMED-Plus (PREvention with MEDiterranean DIet) trial were used for this analysis. Items from the FFQ were classified according to four main food processing-based classification systems (NOVA, IARC, IFIC and UNC). Participants were classified into tertiles of HPF consumption according to each system. Using binomial logistic regression, food groups associated with agreement in the highest tertile for at least two classification systems were chosen as items for the questionnaire. ROC analysis was used to determine cut-off points for the frequency of consumption of each item, from which a score was calculated. Internal consistency of the questionnaire was assessed through exploratory factor analysis (EFA) and Cronbach's analysis, and agreement with the four classifications was assessed with weighted kappa coefficients. Results: Regression analysis identified 14 food groups (items) associated with high HPF consumption for at least two classification systems. EFA showed that items were representative contributors of a single underlying factor, the HPF dietary pattern (factor loadings around 0.2). We constructed a questionnaire asking about the frequency of consumption of those items. The threshold frequency of consumption was selected using ROC analysis. Comparison of the four classification systems and the sQ-HPF showed a fair to high agreement. Significant changes in lifestyle characteristics were detected across tertiles of the sQ-HPF score. Longitudinal changes in HPF consumption were also detected by the sQ-HPF, concordantly with existing classification systems. Conclusions: We developed a practical tool to measure HPF consumption, the sQ-HPF. This may be a valuable instrument to study its relationship with NCDs

    Mediterranean, DASH, and MIND Dietary Patterns and Cognitive Function: The 2-Year Longitudinal Changes in an Older Spanish Cohort

    Background and Aims: Plant-forward dietary patterns have been associated with cardiometabolic health benefits, which, in turn, have been related to cognitive performance with inconsistent findings. The objective of this study was to examine the relationship between baseline adherence to three a priori dietary patterns (Mediterranean, DASH, and MIND diets) with 2-year changes in cognitive performance in older adults with overweight or obesity and high cardiovascular disease risk. Methods: A prospective cohort analysis was conducted within the PREDIMED-Plus trial, involving 6,647 men and women aged 55-75 years with overweight or obesity and metabolic syndrome. Using a validated, semiquantitative 143-item food frequency questionnaire completed at baseline, the dietary pattern adherence scores were calculated. An extensive neuropsychological test battery was administered at baseline and 2-year follow-up. Multivariable-adjusted linear regression models were used to assess associations between 2-year changes in cognitive function z-scores across tertiles of baseline adherence to the a priori dietary patterns. Results: Adherence to the Mediterranean diet at baseline was associated with 2-year changes in the general cognitive screening Mini-Mental State Examination (MMSE, β: 0.070; 95% CI: 0.014, 0.175, P-trend = 0.011), and two executive function-related assessments: the Trail Making Tests Part A (TMT-A, β: −0.054; 95% CI: −0.110, − 0.002, P-trend = 0.047) and Part B (TMT-B, β: −0.079; 95% CI: −0.134, −0.024, P-trend = 0.004). Adherence to the MIND diet was associated with the backward recall Digit Span Test assessment of working memory (DST-B, β: 0.058; 95% CI: 0.002, 0.114, P-trend = 0.045). However, higher adherence to the DASH dietary pattern was not associated with better cognitive function over a period of 2 years. Conclusion: In older Spanish individuals with overweight or obesity and at high cardiovascular disease risk, higher baseline adherence to the Mediterranean dietary pattern may be associated with better cognitive performance than lower adherence over a period of 2 years

    Buenas prácticas de manufactura y su contribución al sector panelero.

    Este libro aborda la investigación en el contexto educativo y su contribución al desarrollo en procesos productivos paneleros a través de la implementación de buenas prácticas de manufactura, como estrategia de mejoramiento en aspectos ambientales, de seguridad y salud en el trabajo, dando respuesta a necesidades del contexto local y desarrollo de su región. A través de la investigación se lleva a cabo una revisión de procesos productivos del municipio de Guaduas y sus alrededores, especialmente en el sector agrícola, lo que permite evidenciar que el sector panelero es un renglón económico de relevancia en la región, que requiere cualificación del personal que realiza dicha actividad; mejora en el proceso productivo con el fin de obtener un producto de calidad y que contribuya a minimizar los impactos ambientales en el entorno; es por ello que, a través de la implementación de buenas prácticas de manufactura, se desea contribuir al mejoramiento del proceso productivo, incentivando el uso adecuado de recursos naturales, fomentando la cualificación del personal que labora en dicha actividad, y propiciando la búsqueda de la expansión a mercados locales y nacionales de un producto de buena calidad para el consumidor
