    Estudio de prefactibilidad para la instalaci贸n de una planta productora de premezclas de panqueques con harina de quinua (Chenopodium quinoa) y de kiwicha (Amaranthus caudatus)

    El presente estudio eval煤a la prefactibilidad de instalar una planta productora de premezclado de panqueques elaborados a base de harina de quinua, kiwicha y avena, fortificada con insumos como la Stevia y frutas deshidratadas. De esta forma, se pretende ofrecer al mercado un producto nutritivo libre de gluten que logre incorporarse en las dietas de las familias peruanas frente a la creciente tendencia de consumo saludable. La viabilidad del negocio fue evaluada a nivel comercial, t茅cnico, econ贸mico, financiero y social. Inicialmente, se definieron los objetivos, hip贸tesis y los lineamientos de la investigaci贸n a trav茅s de una problem谩tica actual debidamente analizada. Luego, se realiz贸 un estudio de mercado donde se define el p煤blico objetivo, la demanda potencial y se analiz贸 la oferta de los competidores con sus respectivos precios. La estrategia comercial se basa en un enfoque de desarrollo de producto, puesto que atiende a una poblaci贸n espec铆fica obtenida por segmentaci贸n de mercado y ofrece un producto con caracter铆sticas 煤nicas que lo distinguen de la competencia. La demanda obtenida fue de 551 386 unidades para el a帽o 2023 y se pretende realizar las actividades productivas en una planta ubicada dentro del distrito de La Victoria. Posteriormente, se obtuvo el tama帽o de planta seg煤n los factores limitantes, siendo el principal el tama帽o de mercado. Con respecto a la ingenier铆a empleada en el estudio, se definieron las operaciones a realizar, la capacidad de planta, las m谩quinas a utilizar, el programa de producci贸n y la disposici贸n de planta. En cuanto al 谩rea organizacional, se definieron los cargos, jefaturas y la jerarqu铆a dentro del personal en la empresa. Finalmente, se realiz贸 la evaluaci贸n econ贸mica y financiera a partir de indicadores como el VANF y TIRF, donde junto con la evaluaci贸n social, se concluye que el proyecto es viable.The present study evaluates the pre-feasibility of installing a pancake ready mix production plant made from quinoa, kiwicha and oatmeal flour, fortified with organic inputs such as stevia and dehydrated fruits. In this way, the intention is to offer a nutritional product that is gluten-free and which manages to introduce into the diets of Peruvian families in the face of the growing trend of healthy consumption. The viability of the business was evaluated at a commercial, technical, economic, financial, and social level. Initially, the objectives, hypotheses and guidelines of the research were defined through a current problem duly analyzed. Then, a market study was carried out in which the target audience was defined, as well as the potential demand and the current situation of the competitors with their respective prices were analyzed. The commercial strategy is based on a product development approach, since it serves a specific population obtained by market segmentation and offers a product with unique characteristics that distinguish it from the competition. The demand obtained was 551 386 units for the year 2023, and with the factory location chapter, the business will carry out the productive activities in a plant located inside La Victoria district. Subsequently, the plant size was obtained according to the limiting factors, the main one being the market size. Regarding the engineering used in the study, the operations to be carried out, the plant capacity, the machines to be used, the production schedule and the plant layout were defined. Regarding the organizational area, the positions, heads and hierarchy including all the company staff were described. Finally, the economic and financial evaluation was carried out from indicators such as the VANF and TIRF, where together with the social evaluation, it is concluded that the project is viable
