    Arsenic intoxication represents a worldwide health problem and occurs mainly through drinking water. Arsenic, a metalloid and naturally occurring element, is one of the most abundant elements in the earth’s crust, whose toxicity depends on the reduction state. The trivalent arsenicals are more toxic than the pentavalent arsenicals. In the trivalent state, inorganic and organic arsenic may react with thiol groups in proteins inhibiting their activity, whereas inorganic arsenic in the pentavalent state may replace phosphate ions in several reactions. Arsenic induces various epigenetic changes in mammalian cells, both in vivo and in vitro, often leading to the development of various types of cancers, including skin, lung, liver, urinary tract, prostate, and hematopoietic cancers. Potential mechanisms of arsenic toxicity in cancer include genotoxicity, altered DNA methylation and cell proliferation, co-carcinogenesis, tumor promotion, and oxidative stress. On the other hand, the FDA-certified drug arsenic trioxide provides solutions for various diseases, including several types of cancers. Detoxification from arsenic includes chelation therapy. Recently, investigations of the capability of some plants, such as Eucalyptus camadulensis L., Terminalia arjuna L. and Salix tetrasperma L., to remove arsenic from polluted soil and water have been studied. Moreover, nanophytoremediation is a green technology including the nanoscale materials used for absorption and degradation of organic and inorganic pollutants, such as arsenic compounds.     Biological Activity of Selenium and Its Impact on Human Health

    Selenium (Se) is a naturally occurring metalloid element essential to human and animal health in trace amounts but it is harmful in excess. Se plays a substantial role in the functioning of the human organism. It is incorporated into selenoproteins, thus supporting antioxidant defense systems. Selenoproteins participate in the metabolism of thyroid hormones, control reproductive functions and exert neuroprotective effects. Among the elements, Se has one of the narrowest ranges between dietary deficiency and toxic levels. Its level of toxicity may depend on chemical form, as inorganic and organic species have distinct biological properties. Over the last decades, optimization of population Se intake for the prevention of diseases related to Se deficiency or excess has been recognized as a pressing issue in modern healthcare worldwide. Low selenium status has been associated with an increased risk of mortality, poor immune function, cognitive decline, and thyroid dysfunction. On the other hand, Se concentrations slightly above its nutritional levels have been shown to have adverse effects on a broad spectrum of neurological functions and to increase the risk of type-2 diabetes. Comprehension of the selenium biochemical pathways under normal physiological conditions is therefore an important issue to elucidate its effect on human diseases. This review gives an overview of the role of Se in human health highlighting the effects of its deficiency and excess in the body. The biological activity of Se, mainly performed through selenoproteins, and its epigenetic effect is discussed. Moreover, a brief overview of selenium phytoremediation and rhizofiltration approaches is reported

    We are grateful to Paknahad and coauthors for giving us the opportunity to consider the interesting papers by Kursun et al., Mortazavi S.M.J. et al., Mortazavi G. et al., Shahidi et al., Yilmaz et al., about the effects of electromagnetic fields (EMFs) produced by magnetic resonance imaging (MRI) or those generated by other sources such as mobile phones, mobile base stations, cordless phones, Wi-Fi routers, radio and TV broadcasting, and X-rays which can increase the mercury release from amalgam fillings [1–6]. The effects of these EMFs allow the release of mercury, which can adversely affect patients’ health, aside from being a high environmental pollutant. Nevertheless, “the mercury levels which normally can be released from amalgam fillings, even in the presence of EMFs, are not high enough to cause toxicity”, as Paknahad and coauthors assert in their Letter to Editor [7]. Nevertheless, we agree with the authors in that pregnant women, children, and hypersensitive members of the population may be subject to the toxicity of mercury. Moreover, it should be underlined that nowadays, the harmful effects of mercury released from amalgam fillings are generally accepted throughout the world, as it has been recognized several decades ago by the OMS, which recommends avoiding the use of mercury in amalgam fillings. This recommendation is followed in many Western countries including European countries where less dangerous and more aesthetic filling systems are used. Thus, the number of individuals whose caries are treated with mercury amalgam is getting lower. We apologize to the authors of the letter for not having mentioned their works in our review. Anyway, when writing a review it may happen that papers, although very interesting, may not be taken into account, as they are not considered relevant to the context of the paper. We would thank the authors for their positive criticism and feedback, and the editor for giving us the opportunity to provide a reply to the letter

    Resistant Starches and Non-Communicable Disease: A Focus on Mediterranean Diet

    Resistant starch (RS) is the starch fraction that eludes digestion in the small intestine. RS is classified into five subtypes (RS1–RS5), some of which occur naturally in plant-derived foods, whereas the others may be produced by several processing conditions. The different RS subtypes are widely found in processed foods, but their physiological effects depend on their structural characteristics. In the present study, foods, nutrition and biochemistry are summarized in order to assess the type and content of RS in foods belonging to the Mediterranean Diet (MeD). Then, the benefits of RS consumption on health are discussed, focusing on their capability to enhance glycemic control. RS enters the large bowel intestine, where it is fermented by the microbiome leading to the synthesis of short-chain fatty acids as major end products, which in turn have systemic health effects besides the in situ one. It is hoped that this review will help to understand the pros of RS consumption as an ingredient of MeD food. Consequently, new future research directions could be explored for developing advanced dietary strategies to prevent non-communicable diseases, including colon cancer
