    THE PRODUCTION OF CONCENTRATED SUGAR BEET JUICE AND PERSPECTIVES OF ITS USE

    Summary. Different methods of obtaining the product given were tested and rational modes for the proposed technology were chosen in the development of technology for production of sugar beet concentrated juice. The sugar beet concentrated juice is obtained as follows: sugar beets are washed in the continuous action washing machine, checked, rotten or spoiled beets are removed from the cycle, and insufficiently treated roots are directed to re-washing. Then with the help of thermal processing the sugar beet is peeled. The peeled roots are white. They are crushed to the 3-4 mm particles size, mixed with acidified to pH 3,5-4,0 water (hydromodule 1-1.2), then the resulting mass is heated to 80 0C temperature. The use of acidified water is necessary to prevent the darkening initiation. Then the received sugar beet mass is fed to pressing to obtain its juice. The pressed juice depending on the beet source contains 12 % of DS and 1.5-3 % reducing substances (RS) of the total mass of dry substances. The juice concentration is under the suction of 0.008 MPa at the boiling temperature of up to 60 0C to the content of 70 % DS. Due to the delicate mode, the sugars breakdown is less intensive, the finished product is of good quality. At the simultaneous concentration with steam the volatile substances with a specific smell are removed, that improves the juice taste and smell. Under this mode, the sugar hydrolysis is intensive, there is a growth reducing substances up to 20 %, the color is increased to 40% density. The research results allow to recommend the product obtained as the sugar syrup substitute

    Diabetic jelly-fruit marmalade with the chokeberry

    Studied the technology of getting jelly fruit marmalade on pectin with the sugar replacement to fructose and 30% apple puree to pureed fruits of chokeberry molded by “extrusion” by the vacuum filler in a continuous metallized film of the type “flow-pack”. Studied the gelation process of jelly masses. Investigated rheological characteristics of jelly mass with fruit and pureed fruits of chokeberry. Determined that the effective viscosity of marmalade mass decreases with increasing shear rate, with adding fructose. The greater the content of fructose in the formulations, the less the viscosity change with increasing shear rate. Replacing sugar with fructose allows to get jelly masses with lower viscosity. Determined values of plastic strength of jelly masses. It was found that replacement of sugar to fructose reduces the plastic strength, but in spite of this strength is sufficient to maintain a good jelly structure. Defined organoleptic and physical-chemical indicators of marmalade quality. In formulation was saddled pureed fruits of chokeberry, which significantly increase the nutritional value of products. Presented an innovative production line of fruit-jelly marmalade with a vacuum syringe of continuous action, delivering high performance with minimal cost of products, simplifies the manufacturing process because drying step is eliminated, shortened processes of curing and cooling.     Functional whipped confection of new composition

    Was studied the technology of producing whipped products on agar with substitute of egg white with premium wheat flour. Was proved the choice - chicory powder. Determined dispersity of whipped masses and found that with the chicory powder proportion of air bubbles with size of less than 0.3 mm increases. This is due to reduction of moisture aerated intermediate product that leads to an increase in the mass and improve the dispersion of structural and mechanical properties of the finished product. Determined the antioxidant activity of the product with chicory powder. This rate is 40% higher than in the control sample, because of a high content of vitamin in the powder. Determined the organoleptic and physical-chemical indicators of quality. The intensity of color was determined using computer image processing in RGB color mode. The highest intensity of color is 244 conventional units, was observed in the sample taken for control, because the product contains the minimum amount of coloring substances. The intensity of the color of the sample with chicory powder is reduced by 50 conventional units, which indicates a change in the color of the product from light-colored to darker. Energy value of whipped product with chicory powder is 271 kcal (1134 kJ). Nutritional value of the product is more than in a control sample for potassium content in 2.2 times; vitamins A and C - 1.1 and 0.9 times respectively. carbohydrate content was reduced by 15%. Products enriched with chicory powder have a pleasant taste and aroma, attractive appearance, which eliminates the usage of chemical dyes and fragrances. In addition, the products have high nutritional value, contain inulin. They can be recommended for adults and children, especially those who suffer from intolerance to egg protein

    Summary. Developed a new system for producing concentrated semi-finished products in the form of pastes for the food industry. Currently, an important task of the food industry is the creation of new products with the aim of improving the structure of the range, saving scarce raw materials, as well as reduce sugar intake; development of product functionality and products with extended shelf life. The use of local non-traditional types of plant materials can contribute to solving existing problems. Fruit and vegetable pastes are a valuable food products which can be used as a semifinished product in the confectionery, bakery, food concentrates industry. Fruit and vegetable purees have a distinct structurally viscous or pseudo-plastic properties and concentration form a very viscous mass. Already in the beginning of the process of concentration, i.e. at a relatively low degree of evaporation that leads to a rapid increase in the viscosity of the concentrate mass and reduce evaporation. With increasing temperature is the burning mass, and also change its color and flavor. Therefore, for the concentration of fruit and vegetable purees, you must use equipment whose design takes into account the possible rheological and thermal problems. The analysis of literary data structures evaporators and studies, we developed a system for producing concentrated pastes of fruit and vegetable raw materials.     MILK CANDIES WITH INCREASED SHELF LIFE

    Summary. Technology for producing milk candies on molasses with increased shelf-life, molded by "extrusion" with a vacuum syringe of continuous action used in the meat industry, into metallized film like "flow-pack" is considered. Rheological characteristics of candy mass: strength, toughness, organoleptic, physical and chemical quality are determined. While increasing the temperature of milk mass the colour, texture, mass fraction of reducing substances and solids change. It was found out that molasses based milk mass is easily molded at a moisture content of 10-11 % and temperature of 60 ºС. The advantages of the new method of forming products are: manufactured products have individual package, which increases the shelf life and improves the quality of products, extend the range of use, the technological equipment has a high productivity, it is compact and reliable. According to the consumer qualities the product surpasses all known analogs. Possibility of using a single-piece product while gathering dinners and breakfasts in public catering, establishments and transport. The technological process is simplified. Energy value of products on molasses in comparison with the control samples on sugar is calculated. It is 51 kcal less than in the control sample on sugar. Thus, the technology of functional milk candies with reduced sugar content is developed. The products will be useful for anyone who leads a healthy lifestyle

    Summary. Was studied the technology of producing aerated candies "Souffle" with replacement of sugar to molasses with increased shelf life, molded by "jetting" with a vacuum syringe with continuous action, which is used in the meat industry, into metallized film type "flow-pack ". Studied the process of foaming disperse systems. Studied the process of gelation and gelation affected by various factors. To establish a relationship between the effective viscosity and jelly mass of gelation ability of agar were achieved the dependence according to the effective viscosity of the jelly mass shear rate and a shear rate on the shear stress at temperature of 65 ËšC and a mass fraction of solids of 78%. Viscosity reduction has a positive effect on the process of molding molasses candies by the "extrusion". Were definede values of the plastic strength of jelly masses and found that replacing sugar to molasses reduces the plastic strength, but it does not affect a good form-stable ability. Cinnamon was added into the prescription whipped composition to improve the nutritional value of products. Were defined organoleptic, physical and chemical qualities, calculated energy value of the products. High hygroscopic souffle on molasses requires hermetic packaging. Proposed a new progressive method of forming a souffle with a vacuum syringe with continuous action, which is used in the meat industry to form sausages. Curing and structure foarming implemented directly in the shell for 2 h, which is an important advantage of this method. Whipped products on molasses are functional
