Aprendizaje y servicio en análisis económico de las organizaciones: el caso de una cooperativa de consumo responsable
[Resumen] Los Proyectos de Aprendizaje y Servicio (ApS) se caracterizan por ser propuestas educativas que
combinan procesos de aprendizaje y de servicio comunitario en un proyecto bien articulado, donde los
participantes aprenden a trabajar en necesidades reales del entorno, con el fin de mejorarlo. En este
contexto, y con la finalidad de incrementar la empatía y compromiso de los estudiantes universitarios
con la economía social y colaborativa y el consumo consciente y responsable, se ha desarrollado un
Proyecto ApS en la asignatura troncal Análisis Económico de las Organizaciones del grado en
Economía, grado en Administración y Dirección de Empresas (ADE) y doble grado de ADE y Derecho de
la Universidade da Coruña.
En este sentido, el Proyecto ApS se desarrolló con la cooperativa de consumo responsable
Zocamiñoca, de tal forma que los estudiantes elaboraron informes que respondían a sus problemas
organizativos, lo que les permitió la adquisición de competencias relacionadas con el desempeño de
labores de gestión, asesoramiento y evaluación de empresas, la aplicación de conocimientos a su
trabajo de forma profesional y el respeto de los derechos fundamentales, la promoción de los Derechos
Humanos y principios de igualdad (acción de aprendizaje).[Abstract] The Service-Learning Projects are characterised by being educational proposals that combine learning
processes and community service. Students learn how to work in the real needs of the environment with
the aim of improving it. In this context, and with the objective of increasing students´ empathy and
commitment to social problems, a Service-Learning Project was developed
in the subject Organisations Economic Analysis. It is a core subject in the grade of Business and
Economics, as well as, in the double degree in Business-Law of the University of A Coruna.
This project was developed with the responsible consumption cooperative Zocamiñoca. Students wrote
reports that solved organizational problems that allowed them to acquire competences related to
organization management and consulting, the application of knowledge to their professional life and the
respect for fundamental rights, the promotion of human rights and principles of equality (learning
action)
Las relaciones interpersonales como herramienta esencial para optimizar el clima organizacional en la Facultad de Ciencias de la Educación y Humanidades de la Universidad Nacional de la Amazonia Peruana
El presente estudio de investigación tuvo como objetivo central establecer la
relación que existe entre las relaciones interpersonales como herramienta esencial para
optimizar el clima organizacional en la Facultad de Ciencias de la Educación y
Humanidades de la Universidad Nacional de la Amazonía Peruana. Por su naturaleza el
estudio tuvo un enfoque cuantitativo, de tipo sustantivo o de base, con diseño descriptivo
– correlacional y método hipotético deductivo. La muestra se definió a través del tipo de
muestreo no probabilístico, intencionado y censal, conformándose con 26 docentes de la
institución mencionada. La técnica utilizada fue la encuesta y como instrumentos se utilizó
el Cuestionario sobre relaciones interpersonales y Cuestionario sobre clima organizacional. Los
datos estadísticos fueron procesados a través del programa SPSS en su última versión. Las
conclusiones a las cuales se arribó son las siguientes: Existe relación significativa entre las
relaciones interpersonales como herramienta esencial para optimizar el clima
organizacional en la Facultad de Ciencias de la Educación y Humanidades de la
Universidad Nacional de la Amazonía Peruana.The main objective of this research study was to establish the relationship that
exists between interpersonal relationships as an essential tool to optimize the
organizational climate in the Faculty of Education Sciences and Humanities of the
National University of the Peruvian Amazon. By its nature, the study had a quantitative
approach, of a substantive or basic type, with a descriptive-correlational design and a
hypothetical deductive method. The sample was defined through the type of non-
probabilistic, intentional and census sampling, conforming to 26 teacher from the
aforementioned institution. The technique used was the survey and the questionnaire on
interpersonal relationships and the questionnaire on organizational climate were used as
instruments. Statistical data were processed through the SPSS program in its latest version.
The conclusions reached are the following: There is a significant relationship between
interpersonal relationships as an essential tool to optimize the organizational climate in the
Faculty of Education Sciences and Humanities of the National University of the Peruvian

Personal assistance in Spain. Perspective of its protagonists: beneficiaries, responsible for the personal assistance of the provider entities and personal assistants
La asistencia personal es un recurso humano que pone en práctica el derecho a una vida independiente de las personas con diversidad funcional, un derecho reconocido internacionalmente. Aunque tiene una larga trayectoria en los Estados Unidos y en algunos países europeos como Suecia, Noruega y Reino Unido, sin embargo, en nuestro país es de reciente implantación. En los últimos años, la asistencia personal ha despertado el interés de algunas administraciones públicas y del mundo asociativo de la discapacidad, pero aún sigue siendo escaso su desarrollo académico en nuestro país. El objetivo de esta investigación es conocer y analizar la situación actual de este recurso en España. Para ello, se han estudiado las características y opiniones de las personas beneficiarias, los/as asistentes personales y los/as responsables de la asistencia personal de las entidades proveedoras. Se ha utilizado una metodología mixta para una mejor comprensión del problema investigado. Los resultados muestran la escasa información existente sobre la asistencia personal, el limitado acceso a este recurso y la precariedad laboral en la profesión de asistente personal.The personal assistance is a human resource that puts into practice the right to an independent life of people with disabilities, an internationally recognized right. Although it has a long history in the United States and in some countries of Europe such as Sweden, Norway and the United Kingdom, in our country it has been recently established. In recent years, personal assistance has aroused the interest of some public administrations and the associative world of disability, implementing different projects, but in our country, there is still weak academic development. The aim of this research is to know and analyse the current situation of this resource in Spain. To this end, the characteristics and opinions of the beneficiaries, the personal assistants and the responsibles for the personal assistance of the provider entities have been studied. A mixed methodology has been used for a better understanding of the researched issue. Application of lactic acid bacteria for the biopreservation of meat products: A systematic review
Systematic ReviewThe increasing concern of consumers about food quality and safety and their rejection of chemical additives has
promoted the breakthrough of the biopreservation field and the development of studies on the use of beneficial
bacteria and their metabolites as potential natural antimicrobials for shelf life extension and enhanced food
safety. Control of foodborne pathogens in meat and meat products represents a serious challenge for the food
industry which can be addressed through the intelligent use of bio-compounds or biopreservatives. This article
aims to systematically review the available knowledge about biological strategies based on the use of lactic acid
bacteria to control the proliferation of undesirable microorganisms in different meat products. The outcome of
the literature search evidenced the potential of several strains of lactic acid bacteria and their purified or semi-
purified antimicrobial metabolites as biopreservatives in meat products for achieving longer shelf life or
inhibiting spoilage and pathogenic bacteria, especially when combined with other technologies to achieve a
synergistic effect.S

Effect of Non-Thermal Atmospheric Plasma on Food-Borne Bacterial Pathogens on Ready-to Eat Foods: Morphological and Physico-Chemical Changes Occurring on the Cellular Envelopes
[EN] Currently, there is a need for new technological interventions to guarantee the microbiological safety of ready-to-eat (RTE) foods. Non-thermal atmospheric plasma (NTAP) has emerged as a promising strategy for inactivating microorganisms on thermo-sensitive foods, and the elucidation of its mechanisms of action will aid the rational optimization and industrial implementation of this technology for potential applications in the food industry. In this study, the effectiveness of NTAP for inactivating strains of Salmonella Enteritidis, Salmonella Typhimurium, Escherichia coli O157:H7 and Listeria monocytogenes contaminating the surface of different sliced RTE foods (“chorizo”, salami, bacon, smoked salmon, tofu and apple) was investigated. In addition, to further assess the bacterial inactivation mechanisms of NTAP, the morphological and physico-chemical damages in bacterial cells were analyzed. NTAP was effective for the surface decontamination of all products tested and, especially, of cut apple, where the microbial populations were reduced between 1.3 and 1.8 log units for the two Salmonella strains and E. coli O157: H7, respectively, after 15 min of exposure. In the rest of foods, no significant differences in the lethality obtained for the E. coli O157:H7 strain were observed, with inactivation rates of between 0.6 and 0.9 log cycles after a 15-min treatment. On the other hand, the strains from the rest of pathogenic microorganisms studied were extremely resistant on tofu, where barely 0.2–0.5 log units of inactivation were achieved after 15 min of plasma exposure. S. Enteritidis cells treated for 10 min exhibited noticeable morphological and structural changes, as observed by transmission electron microscopy, which were accompanied by a loss in membrane integrity, with an increased leakage of intracellular components and uptake of propidium iodide and marked changes in regions of their FTIR spectra indicating major alterations of the cell wall components. Overall, this indicates that loss of viability was likely caused for this microorganism by a significant damage in the cellular envelopes. However, the plasma-treated cells of L. monocytogenes did not show such obvious changes in morphology, and exhibited less marked effects on the integrity of their cytoplasmic membrane, what suggests that the death of this pathogenic microorganism upon NTAP exposure is more likely to occur as a consequence of damages in other cellular targetsSIThe authors would like to acknowledge the financial support from Junta de Castilla y León (LE077-G18
