    Resilience in agri-food supply chains: a critical analysis of the literature and synthesis of a novel framework

    Purpose: Resilience in Agri-Food Supply Chains (AFSCs) is an area of significant importance due to growing supply chain volatility. Whilst the majority of research exploring supply chain resilience has originated from a supply chain management perspective, many other disciplines (such as environmental systems science and the social sciences) have also explored the topic. As complex social, economic and environmental constructs, the priority of resilience in AFSCs goes far beyond the company specific focus of supply chain management works and would conceivably benefit from including more diverse academic disciplines. However, this is hindered by inconsistencies in terminology and the conceptual components of resilience across different disciplines. In response, this work utilises a systematic literature review to identify which multidisciplinary aspects of resilience are applicable to AFSCs and to generate a novel AFSC resilience framework. Design/methodology/approach: This paper employs a structured and multidisciplinary review of 137 articles in the resilience literature followed by critical analysis and synthesis of findings to generate new knowledge in the form of a novel AFSC resilience framework. Findings: Findings indicate that the complexity of AFSCs and subsequent exposure to almost constant external interference means that disruptions cannot be seen as a one off event and thus resilience must concern not only the ability to maintain core function but also to adapt to changing conditions. Practical implications: A number of resilience elements can be used to enhance resilience but their selection and implementation must be carefully matched to relevant phases of disruption and assessed on their broader supply chain impacts. In particular, the focus must be on overall impact on the ability of the supply chain as a whole to provide food security rather than to boost individual company performance. Originality/value: The research novelty lies in the utilization of wider understandings of resilience from various research fields to propose a rigorous and food specific resilience framework with end consumer food security as its main focus

    An overview of resilience factors in food supply chains

    Food supply chains face a number of unique vulnerabilities compared to other supply chains and there is concern that, as operating environment volatility increases, current “lean” supply chain management strategies may no longer be fit for purpose. There is a need to manage food supply chains in such a way that a return to the original state, or preferably an improved state, after being disturbed is possible. However, whilst the literature reveals a relatively large amount of work on resilience in supply chain management, there is poor consensus over how to define and implement a system of resilience, particularly one which takes into account food specific vulnerabilities. In response, this paper explores the current complexity of food supply chains, highlighting key dependencies, failure modes and key performance indicators. It then examines the interdependencies between capabilities and vulnerabilities in allowing balanced resilience and presents a framework to bring together and aid understanding of these factors across food supply chains

    Development of a pragmatic framework to help food and drink manufacturers select the most sustainable food waste valorisation strategy

    Food waste is a significant contemporary issue in the UK, with substantial environmental, social and economic costs to the nation. Whilst efforts to reduce food waste are laudable, a significant proportion of food and drink manufacturer waste is unavoidable. On the one hand, there is a drive from industry to reclaim as much value from this waste as possible, for example, by conversion to valuable products in what is known as “valorisation”. At the same time, growing social and legislative pressures mean that any attempts to valorise food waste must be performed in a sustainable manner. However, for every company and its specific food wastes, there will be multiple valorisation possibilities and few tools exist that allow food and drink manufacturers to identify which is most profitable and sustainable for them. Such a decision would need to not only consider environmental, social and economic performance, but also how ready the technology is and how well it aligns with that company's strategy. In response, this paper develops and presents a hybrid framework that guides a company in modelling the volumes/seasonality of its wastes, identifying potential valorisation options and selecting appropriate indicators for environmental, social and economic performance as well as technological maturity and alignment with company goals. The framework guides users in analyzing economic and environmental performance using Cost-Benefit Analysis and Life Cycle Assessment respectively. The results can then be ranked alongside those for social performance, technological maturity and alignment with company goals using a weighted sum model variant of Multi-Criteria Decision Analysis to facilitate easy visual comparison. This framework is demonstrated in the form of a case study with a major UK fruit consolidator to identify the optimal strategy for managing their citrus waste. Possibilities identified included sale of imperfect but still edible waste via wholesale at a significantly reduced profit and the investment in facilities to extract higher value pectin from the same waste stream using a microwave assisted pectin extraction process. Results suggest that continued sale of waste to wholesale markets is currently the most beneficial in terms of economic viability and environmental performance, but that in the medium to long term, the projected growth in the market for pectin suggests this could become the most viable strategy

    Selection of sustainable food waste valorisation routes: a case study with barley field residue

    Purpose: It is increasingly accepted in the food and drink manufacturing sector that there is a need to manage unavoidable food waste more sustainably. Yet to do so requires careful balancing of environmental, social and economic performance of any given treatment method alongside its technological maturity and alignment with that company’s wider business goals. The purpose of this article is to apply a novel Sustainable Waste Valorisation Identification (SWaVI) framework which considers these criteria to a case study with Molson Coors to identify whether the current strategy of using In Field Barley Straw Residue as animal feed is the most sustainable. Methods: Data was collected via a series of interviews with Molson Coors in spring 2017. Data analysis used a hybrid approach combining Cost–Benefit Analysis and Life-Cycle Assessment with a weighted summation variant of Multi-Criteria Decision Analysis to facilitate comparison of supercritical CO2 extraction of wax from straw, with the current strategy of selling that straw as animal feed. Results: Application of the SWaVI framework suggests that supercritical CO2 extraction of wax from straw offers a slightly worse Net Present Value compared to sale as animal feed (£89.1 million compared to £95.3 million) but superior social impacts, technological maturity and alignment with company goals making it superior overall. Conclusions: Whilst the supercritical CO2 extraction of wax offers the best sustainability and business case performance for Molson Coors, a range of other factors such as long-term market demand, alignment with relevant legislation, and displacement effects on supply chain stakeholders must be considered.     Opportunities for waste valorisation in the food industry – A case study with four UK food manufacturers

    Food manufacturing is comprised of a number of complex processes which generate vast amounts of food waste. Frequently, strategies for dealing with these materials are rudimentary and provide a low economic and environmental value, for instance animal feeding, anaerobic digestion, composting, incineration, landspreading and landfilling. However, food wastes contain numerous chemicals with a wide range of potential commercial applications, which makes these materials suitable feedstocks for valorisation. This paper applies a Waste Flow Modelling methodology to achieve two aims: to provide valuable food manufacturing and waste data in order to better understand current food manufacturing activities, and to analyse existing food waste management practices to lay the foundation for the implementation of alternative food waste valorisation solutions. Four UK industrial companies have been selected and assessed to represent four different food sectors where food waste valorisation could provide an economic and/or environmental advantage: a fruits supplier, a brewery, a potato supplier and a producer of peas. The production line of each of these four businesses is defined and characterised, which allows the identification of food wastes generated. Next, food wastes are categorised and quantified, and their patterns of generation and current waste management practices are described. Sankey diagrams and performance indicators are used to assess the efficiency of processes, combination of processes and the complete production line in terms of food waste generation. Finally, the results are analysed and used to obtain the main conclusions and provide recommendations for an improved food waste management system, with a focus on valorisation opportunities
