    Evaluating the Nutritional Risk of Older Adults Participating in the South Carolina Older Americans Act

    Older Americans Act (OAA) services are designed to help older adults maintain maximum independence in their homes and communities and to promote a continuum of care for the vulnerable elderly. Monitoring nutrition status of Area Agencies on Aging clients will help identify those at high nutritional risk for poor health outcomes and the factors contributing to that risk. This assessment will inform the development of strategies to enhance delivery of food and nutrition services to those with the greatest need. The purpose of this study is to determine population “hot spots†of high nutritional risk and their association with demographic indicators by analyzing data collected at senior centers using the South Carolina Lieutenant Governor’s Office on Aging Assessment/reassessment instrument. Preliminary results show that older adults receiving services from Area Agencies on Aging in the South Carolina’s I-95 Corridor Region have the higher nutrition risk scores. This research could be used to engage and solicit active participation of various key players in the state to improve nutritional status of older adults. Results could also be helpful in seeking to ensure adequacy of economic resources and minimize the risk of financial setbacks

    Anti-Helicobacter pylori activities were determined by agar dilution, confocal laser scanning microscopy, and cell proliferation assays following treatment with various grape extracts. Muscadine grape skin possessed the strongest activity, followed by grape synergy (skin and seed) and seed, suggesting that higher phenolic levels do not necessarily determine overall anti-H. pylori efficacy

    Selection and consumption of lunches by National School Lunch Program T participants

    The Healthy, Hunger-Free Kids Act of 2010 requires schools participating in the National School Lunch Program (NSLP) to offer a variety of healthy food options each day. Using digital photography data collected from two suburban elementary schools in the spring of 2013, we examine NSLP participant\u27s selection and consumption of all five NSLP lunch components ((1) milk, (2) vegetable, (3) fruit, (4) meat/meat alternate (MA), and (5) grain). We use logit regressions to analyze the selection of the various lunch components by race/ethnicity, gender, grade, and household income level. In addition, ordinary least squares regressions are used to analyze the se- lection and consumption of calories contained in the chosen lunch and by lunch component. Selection and consumption varied by race, ethnicity, gender, and eligibility for free or reduced-price lunch. For example, black students consumed fewer calories than white students, black and Hispanic students consumed fewer calories from milk than white students, and free and reduced-price lunch eligible students consumed more calories from milk and fewer calories from grains. Using National Health and Nutrition Examination Survey (NHANES) data, we determine that school lunches are an important part of school-day food intake for NSLP participants. These results provide guidance for making changes within a cafeteria\u27s offerings to increase the selection of healthy foods

    Assessing Anti-Adipogenic Effects of Mango Leaf Tea and Mangiferin within Cultured Adipocytes

    Obesity is a condition caused by surplus adipose tissue and is a risk factor for several diet-related diseases. Obesity is a global epidemic that has also been challenging to treat effectively. However, one promoted therapy to safely treat obesity is anti-adipogenic therapeutics. Therefore, identifying potent anti-adipogenic bioactive compounds that can safely be used clinically may effectively treat obesity in humans. Mango leaf has potential medicinal properties due to its many bioactive compounds that may enhance human health. Mangiferin (MGF) is a primary constituent in mango plants, with many health-promoting qualities. Therefore, this study investigated the effect of MGF, and tea brewed with mango leaves in cultured adipocytes. The anti-adipogenic efficacy of mango leaf tea (MLT) and MGF in 3T3-L1 cells were assessed, along with cell viability, triglyceride levels, adiponectin secretion, and glucose uptake analyzed. In addition, changes in the mRNA expression of genes involved in lipid metabolism within 3T3-L1 cells were determined using quantitative real-time PCR. Our results showed while both MLT and MGF increased glucose uptake in adipocytes, only MLT appeared to inhibit adipogenesis, as determined by decreased triglyceride accumulation. We also observed increased secretory adiponectin levels, reduced ACC mRNA expression, and increased FOXO1 and ATGL gene expression in 3T3-L1 cells treated with MLT but not MGF. Together, these results suggest that MLT may exhibit anti-adipogenic properties independent of MGF content

    Do School Lunch Menus Influence National School Lunch Program Participation?

    he National School Lunch Program (NSLP) is one of the largest nutrition assistance programs in the United States, providing free and reduced-price lunches for income-eligible students as well as minimally subsidizing paid lunches for students that do not qualify to receive free or reduce-price lunches. Although the levels of nutrient deficiencies vary slightly across studies, the majority of the research concedes that NSLP participants consume more fats and sodium than non-participants, which may lead to higher rates of overweight and obesity. Furthermore, differences across income in dietary intake among NSLP participants may be an underlying cause of the previous mixed results. In this study, we investigate the relationship between income-eligibility status (Free, Reduced, or Paid) and entrée selection. Using a unique dataset tracking daily entrée choices and their nutritional value among elementary students at a suburban school district, this paper provides a novel approach to understanding the healthfulness of the NSLP. We find that while controlling for age, gender, and race, students that purchase free lunch choose entrees with less sodium than students purchasing either reduced-price or paid lunches. Relative to students purchasing free-lunches, students purchasing paid lunches also choose entrees with more protein and fat and entrees with fewer carbohydrates
