Selenium and copper in type 2 diabetes mellitus - more doubt than certainty
Type 2 diabetes mellitus (T2DM) is one of the most common chronic illnesses nearly all over the
world and the prevalence of this disorder is still growing. Particularly in industrialized countries,
it has become the most serious global medical and public problem, next to cancer and
cardiovascular diseases. Despite intensive developments in the research on T2DM pathogenesis,
the impact of nutritional factors, and particularly the effect of trace elements, on the development
of this disease has not been identified completely, although relationships between some
elements, e.g. Zn, Fe, Cr, and T2DM have been described in detail. Critical review of the literature
indicates that the majority of inconsistencies appear in studies on Cu and Se: on the one
hand, these minerals have strong antioxidant properties and even insulin-mimetic action; on the
other hand, an increased risk of T2DM positively correlates with a high dietary intake of Se and
Cu or supplementation with these elements. High content of these minerals in diets observed in
selected countries and/or increasing popularity of dietary supplementation with Se or Cu, especially
among chronically ill patients including ones with T2DM, can cause distortions in the
molecular pathways of glucose metabolism. The influence of these minerals on inducing diabetic
complications is even more vague and depends on several factors, e.g. the body status of these
and other trace elements, the type of complications and the duration of T2DM. The relationship
between T2DM and the status of Se and Cu is complex and bidirectional, thus a well-balanced
diet providing these trace elements in proper amounts, according to the demand of an organism,
may be one of the strategies in reducing the risk of T2DM and its complications
The fat content and fatty acids composition in selected products of the convenience food
Wprowadzenie. Coraz szybsze tempo życia i brak czasu na tradycyjne przygotowanie posiłków w domu doprowadziły
w wielu krajach świata do wzrostu spożycia żywności wygodnej. Pojęciem tym określa się produkty o wysokim stopniu
przetworzenia, przeznaczone do spożycia bezpośrednio lub po krótkiej obróbce kulinarnej. Do żywności wygodnej należą
dania obiadowe, sałatki, płatki, kremy, buliony, pizze, zapiekanki oraz potrawy mrożone gotowe do spożycia po szybkiej
obróbce termicznej.
Cel badań. Celem pracy była ocena zawartości tłuszczu i składu kwasów tłuszczowych w mrożonych produktach żywności
wygodnej.
Materiał i metody. Materiał do badań stanowiło 30 mrożonych produktów takich jak: wyroby z ryb i owoców morza,
pizze, zapiekanki i dania mięsne. Zawartość tłuszczu w badanych produktach oznaczono metodą Folcha, a skład kwasów
tłuszczowych metodą chromatografii gazowej.
Wyniki. Zawartość tłuszczu mieściła się w zakresie od 1,2% do 26,9%. Udział nasyconych kwasów tłuszczowych (SFA)
w sumie wszystkich kwasów kształtował się w granicach od 8,7% do 53,2%, jednonienasyconych (MUFA) od 24,0% do
68,7%, wielonienasyconych (PUFA) od 8,1% do 48,8%, a izomerów trans od 0,2% do 6,1%.
Wnioski. Zawartość tłuszczu i skład kwasów tłuszczowych w badanych produktach były bardzo zróżnicowane w zależności
od składników i receptury wyrobów zastosowanych przez producentów. Większość badanych produktów z ryb i owoców
morza charakteryzowała się zawartością tłuszczu w zakresie od 11% do 14% z wysokim udziałem korzystnych pod względem
żywieniowym jednonienasyconych kwasów tłuszczowych (MUFA) i wielonienasyconych kwasów tłuszczowych (PUFA).
Skład kwasów tłuszczowych w pizzy i zapiekankach ze względu na duży udział nasyconych kwasów tłuszczowych (SFA)
i izomerów o konfiguracji trans był mniej korzystny.Introduction. An increasing pace of life and a lack of time for meals preparation at home, observed in many countries
worldwide, have led to an increased consumption of convenient food products. This term refers to highly processed food
products that are either ready-to-eat or may be consumed after short culinary processing. Convenience foods include: dinner
courses, salads, cereals, creams, broths, pizzas, roasts, as well as frozen products ready-to-eat after short heat treatment.
Objective. The aim of this study was to assess the fat content and fatty acids composition of frozen products belonging to
convenience food.
Material and method. Material for analysis comprised of 30 following food products: fish and seafood products, pizza,
casseroles and meat products. The fat content was determined using Folch method and the fatty acids composition using
gas chromatography technique. Results. The analyzed products contained from 1.2% to 26.9% of fat. The saturated fatty acids (SFA) content ranged from
8.7% to 53.2%, while the monounsaturated fatty acids (MUFA) - from 24.0% to 68.7% of total fatty acids. The polyunsaturated
fatty acids (PUFA) percentage accounted for 8,1% to 48,8% and trans isomers - for 0.2% to 6.1% of total fatty acids.
Conclusions. The fat and fatty acid contents showed large differences in products depending on their composition and
preparation techniques declared by the producer. Most of the analyzed fish and seafood products were characterized by
the fat content ranged from 11% to 14% with the high percentage of fatty acids favorable from nutritional point of view,
MUFA and PUFA. The composition of fatty acids from pizza and casseroles was less favorable, due to high proportion of
SFA and also trans isomers
Natural mineral and spring waters and fruit juices as food sources of silicon
Napoje, szczególnie wody mineralne, uważa się za jedno z najlepszych źródeł pokarmowych krzemu. Celem pracy było
oznaczenie zawartości tego pierwiastka w butelkowanych wodach mineralnych i źródlanych oraz w sokach pomarańczowych,
jabłkowych, grejpfrutowych i wieloowocowych dostępnych w handlu. Zawartość krzemu oznaczano metodą absorpcyjnej
spektrometrii atomowej z elektrotermiczną atomizacją (GF-AAS). Badane wody mineralne zawierały od 3,33 do 30,05 mg
Si/dm3, wody źródlane od 3,66 do 11,23 mg Si/dm3, a soki owocowe od 0,21 do 1,93 mg/100g.Beverages especially mineral waters are considered as one of the best nutritional sources of silicon. The aim of this
work was to determine the silicon content in bottled mineral and spring waters, as well as in orange, apple, grapefruit and
mixed fruit juices available on the market. The electrothermal atomic absorption spectrometry (GF-AAS) was used for the

Wpływ intensywności uprawy na zawartość składników mineralnych w ziarnie, płatkach i otrębach z pszenicy ozimej (Triticum aestivum L.) - badania wstępne
Celem badań była ocena wpływu intensywności uprawy na zawartość Ca, Mg, Zn i Fe w ziarnie, płatkach i otrębach
pozyskanych z dwóch nowych odmian pszenicy ozimej. Materiał badawczy stanowiło ziarno, płatki i otręby z pszenicy ozimej
odmian Kobiera i Bogatka. Odmiany te pochodziły z upraw doświadczalnych z dwóch Stacji Oceny Odmian na terenie
Dolnego Śląska w Zybiszowie i Tomaszowie Bolesławieckim w latach 2007-2008. Uprawa prowadzona była na dwóch poziomach
intensywności: ekstensywnym i intensywnym. Zawartość składników mineralnych oznaczono metodą płomieniowej
spektrometrii absorpcji atomowej (ASA). Na podstawie przeprowadzonych badań stwierdzono, że poziom uprawy nie wywierał
istotnego wpływu na zawartość wszystkich analizowanych składników mineralnych zarówno w ziarnie jak i płatkach oraz
otrębach. Jedynie zawartość Ca w badanych próbach była stabilna, niezależnie od odmiany, warunków pogodowych oraz
intensywności i miejsca uprawy, natomiast ilość Fe istotnie zależała od warunków glebowych.The aim of the study was to assess the effect of cultivation intensity on the Ca, Mg, Zn and Fe contents in winter wheat
grain, flakes and bran. The initial material for the study comprised grain, flakes and bran of two winter wheat cultivars
Kobiera and Bogatka. These cultivars were from two strain testing stations located in Lower Silesia, Zybiszów and Tomaszów
Bolesławiecki in the years 2007-2008. The cultivation was conducted on two intensity levels: lower and higher. The mineral
content was determined by the flame atomic absorption spectrometry (FAAS). The investigation showed that the level of
cultivation had no significant effect on the content of all minerals analyzed in grain, flakes and bran. The Ca content in
wheat grain, flakes and bran was stable, regardless of varieties, weather conditions, tillage intensity and cultivation place,
furthermore soil conditions significantly affect Fe content in wheat grain, flakes and bran
Ocena sposobu żywienia pacjentów z zespołem jelita nadwrażliwego
The dietary intake of patients with irritable bowel syndrome was assessed using 24-h dietary recall. The energy value
and nutrient contents in the daily food rations were calculated by Nutritionist IV computer program with the Polish database.
Differentiations in the Polish RDA coverage for energy and nutrients were observed in the studied group. Fat, saturated fatty
acid, phosphorus and also vitamin A, E and C contents were above the RDA in the patients’ daily food ration. The majority
of IBS individuals did not meet recommendations for carbohydrate intake. Calcium and cooper intake was below the Polish
RDA. The insufficient vitamin B2 intake and excessive Fe supply have been shown in the male patients.Na podstawie wywiadu 24-godzinnego oceniono sposób żywienia pacjentów z zespołem jelita nadwrażliwego. Wartość
energetyczną oraz zawartość składników odżywczych w całodziennej racji pokarmowej obliczono za pomocą programu komputerowego
Nuritionist IV z polską bazą danych. Stwierdzono zróżnicowane pokrycie zapotrzebowania na energię i składniki
odżywcze w badanej grupie. Całodzienna racja pokarmowa pacjentów dostarczała nadmierną ilość tłuszczu, nasyconych
kwasów tłuszczowych, również zawartość fosforu oraz witamin A, E i C w diecie znacznie przekraczała bezpieczny poziom
spożycia. Większość badanych pacjentów nie spożywała zalecanej ilości węglowodanów. Wykazano zbyt małą zawartość
wapnia i miedzi w całodziennej racji pokarmowej. W grupie badanych mężczyzn zaobserwowano niedostateczną podaż
witaminy B2 oraz nadmierną podaż żelaza
