Influenza di diversi pre-trattamenti sulle cinetiche di disidratazione di olive
In this paper, the drying behaviour of three
olive cultivars (Olea europea sativa Hoffm.
and Link), was studied. In particular, the
influence of different pre-treatments on
dehydration kinetics was investigated. Olives
were calibrated and subjected to several
preliminary treatments, in order to
break the peel, before being dehydrated.
Dehydration was carried out at 60°C with
constant flow rate and humidity. Fruits
were placed on trays according to a completely
randomised design. Dehydration
kinetics were computed by weighing fruits
during dehydration. Results show that the
dehydration rate was drastically increased
by piercing the fruit cuticle, while the others
systems did not give appreciable beneficial
effects. Dried olives were appreciated
by panellists.
In questo lavoro è stata studiata la risposta
alla disidratazione di tre varietĂ di olive
(Olea europea sativa Hoffm. and Link).
In particolare, si è verificata l’influenza di
diversi pre-trattamenti sulle cinetiche di disidratazione.
Le olive, dopo la calibratura,
sono state sottoposte a diversi pre-trattamenti,
nell’intento di creare delle microlesioni
superficiali, poi disidratate in un armadio
con aria a flusso ed umiditĂ costanti
alla temperatura di 60°C, disponendo i
frutti delle tesi secondo un piano completamente
randomizzato. Ad intervalli prestabiliti
durante la disidratazione sono
stati effettuati dei prelievi di frutti, al fine
di determinarne le cinetiche.
I risultati mostrano che la tecnica della
scarificatura superficiale ha incrementato
la velocitĂ di disidratazione, mentre gli altri
trattamenti non hanno dato risultati degni
di nota. I frutti disidratati sono stati
giudicati favorevolmente dagli assaggiatori
Evoluzione dei principali acidi organici in salamoie di olive da mensa preparate al naturale
In this study, the changes in organic acids and ethanol on brines of naturally fermented
green olives “Nocellara del Belice” cv have been monitored. The olives were processed
with acidified to pH 4 or not brines. Results clearly indicate that the fermentation was
carried out by yeasts. We detected three organic acids and ethanol, which were in
significantly higher amounts in the acidified brines, with respect to control ones. Both
acids and ethanol increased significantly during the fermentation.
Nel presente studio è stato monitorato, tramite analisi HPLC, il profilo degli acidi organici
e dell’etanolo, oltre che le variazioni di tutti gli altri parametri chimico-fisici, durante la
fermentazione al naturale di olive verdi della varietà “Nocellara del Belice”. Il piano
sperimentale prevedeva una tesi acidificata a pH 4 ed una tesi di controllo. I risultati
ottenuti evidenziano una fermentazione condotta da lieviti. Sono stati riscontrati tre acidi
organici (citrico, acetico e malico) e l’alcol etilico, in concentrazioni significativamente
superiori nella tesi acidificata. Tali composti hanno mostrato una tendenza all’incremento
durante la fermentazione
Texture and sensory changes of a fresh ewe's cheese packed under different modified atmospheres
Shelf-life extension of fresh ewe's milk cheese packaged with three different
MAP conditions was studied. Fresh cheeses were stored in barrier trays, hermetically
sealed with a barrier to gas and water film. The gas mixtures used were:
20%CO2/80%N2, 30%CO2/70%N2 and 50%CO2/50%N2. Trays were stored at 4°C and inspected at 0,7, 14 and 21 days. Physical-chernical and rnicrobiological
analyses (pH, colour, dry matter, aw, mesophilic micro-organisms, psychrotrops,
total coliforrns, Escherichia coli, Salmonella, Staphilococcus aureus and Listeria
monocytogenes), gas composition inside the packaging (CO2, O2 and N2),
texture analysis (puncture test and Texture Pro file Analysis-TPA) and sensory
evaluation (acceptability test by scoring for colour, flavour, taste and texture)
were carried out. Samples packaged with 30%CO2/70% N2 and 50%CO2/50% N2
had a shelf life of 21 days. Pathogens were not found during all the storage.
Cheese stored with 30%CO2/70%N2 reached the best acceptability score to the
sensory evaluation
Dalle susine alle prugne: influenza della temperatura di disidratazione sulla composizione fenolica e sulla capacitĂ anitossidante
Prunes are obtained by dehydrating plums at 85
to 90°C. Reports are available on ascorbic acid, phenolic
composition and antioxidant activity of prunes, but there
is lack of publications on the influence of drying parameters.
A study was carried out on a plum cultivar using two
sets of air drying temperatures. Fresh and dried fruits
were assessed for: main phenolics, ascorbic acid and
antioxidant activity. Hydroxicinnamic acids changes were
affected by process parameters. Drying destroyed
anthocyanins and decreased significantly the flavonol content.
Ascorbic acid was drastically reduced in relation to
process temperature. Drying at the higher temperature doubled antioxidant activity.
L'essiccazione delle susine è condotta a temperature
tra gli 85 e i 90°C. Esiste una discreta bibliografia
sul contenuto in composti fenolici e sulla capacità antiossidante delle prugne, sono pero scarse le notizie sugli effetti del processo. A tal fine è stato condotto uno studio sulla disidratazione di una varietà di susino con due temperature differenti. Sui frutti freschi ed essiccati sono stati determinati: composti fenolici principali, acido ascorbico e capacità antiossidante. Gli acidi idrossicinnamici variavano con la temperatura; gli antociani venivano degradati pressoché totalmente; i flavonoli e l'acido ascorbico venivano
ridotti drasticamente. La temperatura maggiore ha
piĂą che raddoppiato la capacitĂ antiossidante
Effetto dei sistemi di estrazione e della denocciolatura sulla conservabilitĂ di un olio extravergine di oliva (cv. Bosana)
Comparison between oils two-phase and three-phase extracted pointed out a better stability
to oxidation and higher antioxidant activity for the two-phase oils. Destoned oils
showed a higher antioxidant activity, stability to oxidation and α-tocopherol content, with
respect to the whole oil. Exposure to the dark is better for all oils analyzed, as expected.
Il raffronto tra i campioni di olio della cv Bosana ottenuti dal separatore a due e tre fasi
evidenziano per i primi una maggiore stabilità all’ossidazione e una più alta attività antiossidante,
maggior conservazione del patrimonio fenolico ma decrementi piĂą intensi
dei pigmenti. Gli oli ottenuti da olive denocciolate evidenziano, dopo 16 mesi di conservazione,
una maggiore stabilità all’ossidazione, maggiore attività antiossidante e più alti
valori di α-tocoferolo. Nelle quattro tesi l’esposizione al buio ha fornito gli attesi migliori
risultati
Influenza del periodo e dei metodi di conservazione sulla shelf-life di un olio monovarietale ottenuto con tecnologie differenti
Stability of olive oil during shelf-life depends on several factors, such as cultivar, technology, and storage conditions. In this research the influence of different processing parameters and of packaging and storage conditions on some quality parameters was
studied, in order to evaluate the shelf-life of a mono-varietal oil. The oil samples have
been extracted with a two-phase decanter from whole or destoned olives, and with a
three-phase decanter from whole olives (Bosana cv.). The oils have been hermetically
packaged in glass bottles, half of them with a 3 mL headspace, and the other half filled
up. Containers have been stored at ambient temperature and under diffused light or in
the dark. Data show that oil degradation is not always affected by storage conditions.
Moreover, due to the very high original content in antioxidants, the oil keeps its high
quality characteristics.
La stabilitĂ degli oli extra vergini di oliva durante la shelf-life dipende da fattori primari
di tipo varieta1e, colturale e tecnologico e dai parametri di conservazione. In questo lavoro si è voluta studiare l'influenza di differenti condizioni di processo e di confezionamento/stoccaggio su alcuni parametri di qualità , al fmine di valutare la shelf-life di un
olio monovarietale. L'olio, ottenuto da olive della varietà "Bosana", è stato estratto con
il sistema a due fasi, utilizzando olive intere o denocciolate, e con il sistema a tre fasi con
olive intere. E' stato confezionato ermeticamente in contenitori di vetro trasparente, la
metĂ con uno spazio di testa di 3 mL, l'altra metĂ colmi, e poi esposto a luce diffusa o al
buio a temperatura ambiente. I dati mostrano che non sempre le condizioni di conservazione
hanno influito significativamente sulla degradazione dell'olio. Inoltre, dato l'alto
contenuto iniziale in antiossidanti, l'olio mantiene le sue caratteristiche di alta qualitĂ
Influence of different drying parameters on the composition of volatile compounds of thyme and rosemary cultivated in Sardinia
The shelf life of spices is traditionally extended by drying. Fresh herbs, due to their high water content, undergo microorganism growth and adverse biochemical reactions. On the other hand drying may result in a lot of physical and chemical alterations. Air and oven-dehydration are the main methods used to stabilize spices. During oven drying, in general, losses of volatile compounds are directly dependent on the temperature and time used.
This paper deals with the effect of different drying temperatures and air fluxes on the volatiles in rosemary (Rosmarinus officinalis L.) and thyme (Thymus officinalis L.) cultivated in Sardinia. Fresh leaves were collected and soon divided in two batches, which were subjected to hydro distillation and GC-MS analysis, the first batch as fresh, the second one after drying in a laboratory pilot dryer. Three drying temperatures were used, 30, 38 and 45°C, and for each one two airflow rates were set.
The fresh and dried plant material were hydro distilled for 4 hours using a Clevenger-type apparatus (Italian Official Pharmacopeias X). The oils (liquid and light yellow) were recovered directly from above the distillate without adding any solvent and stored at –20°C before analyses, which were carried out on two replicates of each sample by gas chromatography, using a flame ionization detector. The diluted samples were injected using a split/splitless automatic injector (using 2,6-dimethylphenol as internal standard). Qualitative analysis was done by GC/Mass and mass units were monitored from 10 to 450 at 70 eV.

Distinctive anthocyanin accumulation responses to temperature and natural UV radiation of two field-grown (<i>Vitis vinifera</i> L.) cultivars
The responses of two red grape varieties, Bovale Grande (syn. Carignan) and Cannonau (syn. Grenache), to temperature and natural UV radiation were studied in a
three-years field experiment conducted in Sardinia (Italy), under Mediterranean climate conditions. Vines were covered with plastic films with different transmittances to UV
radiation and compared to uncovered controls. Light intensity and spectral composition at the fruit zone were monitored and berry skin temperature was recorded from veraison. Total skin anthocyanin content (TSA) and composition indicated positive but inconsistent effects
of natural UV light. Elevated temperatures induced alterations to a greater extent, decreasing TSA and increasing the degree of derivatives acylation. In Cannonau total soluble solids increases were not followed by increasing TSA as in Bovale Grande, due to both lower
phenolic potential and higher sensitivity to permanence of high temperatures. Multi linear regression analysis tested the effects of different ranges of temperature as source of variation on anthocyanin accumulation patterns. To estimate the thermal time for anthocyanin accumulation, the use of normal heat hours model had benefit from the addition of predictor variables that take into account the permanence of high (>35 °C) and low (<15 °C and <17 °C) temperatures during ripening
Ruolo della microssigenazione sul contenuto fenolico, colore e attivitĂ antiossidante del vino rosso sardo Cagnulari
E’ stato studiato l’effetto nel tempo della microssigenazione su diversi parametri analitici di due vini
ottenuti da un vitigno autoctono della Sardegna, il Cagnulari. I due campioni, relativi alla
vendemmia 2005 e raccolti a distanza di 20 giorni uno dall’altro, sono stati analizzati a partire da
febbraio 2006. In aprile i vini sono stati sottoposti al trattamento di microssigenazione. I campioni
sono stati prelevati direttamente dalle vasche d’acciaio e analizzati fino al mese di febbraio 2007
per un totale di 7 campionamenti. Sono state effettuate le seguenti analisi: grado alcolico, aciditĂ
totale, anidride solforosa totale e libera, pH; polifenoli totali, antociani totali, liberi e polimerizzati e
colore per spettrofotometria UV-VIS; polifenoli in HPLC-DAD; attivitĂ antiossidante con il radicale
DPPH. Il campione vendemmiato tardivamente e microssigenato piĂą intensamente e piĂą a lungo
è risultato essere maggiormente stabile di colore, con un aumento significativo della % di blu e con
un contenuto polifenolico più elevato. L’attività antiossidante invece non sembra essere stata
influenzata dalla microssigenazione
Influenza della temperatura di essiccamento sui polifenoli e sulla capacitĂ antiossidante delle susine Stanley
Changes in phenolic content, antioxidant capacity and ascorbic acid in prunes dried at 85°C
and 60°C, were studied. Results obtained showed a significant decrease for ascorbic acid. It
has to be highlighted that drying at 85°C resulted in keeping the polyphenolic pool and
sharply raising the antioxidant activity, while the opposite happened for plums dried at 60°C.
Lo studio ha riguardato l'evoluzione dei composti fenolici e dell'attivitĂ antiossidante di
susine della varietà Stanley in seguito all’essiccamento a due temperature. Sui frutti freschi ed
essiccati sono stati analizzati i composti fenolici, l’acido ascorbico e la capacità antiossidante.
I risultati ottenuti hanno evidenziato un decremento significativo dell’acido ascorbico nei
campioni essiccati. Si evidenzia che l’uso di un’alta temperatura porta ad un mantenimento
della componente polifenolica ed a un aumento di oltre 9 volte dell’attività antiossidante in
vitro, rispetto ai frutti freschi, mentre nelle susine essiccate a 60°C si ha una diminuzione di
entrambi i parametri
