    A Study of the Sensory Characteristics of Food produced by the Sous Vide system: the measure of pleasure.

    Consumers now demand higher quality in all aspects of life. This has had a particular effect on the food industry where the need for quality encompasses both food safety and sensory characteristics. The sous vide process was developed to produce food on a large scale but with superior sensory qualities compared to the products of cook-chill and cook-freeze systems. This research aimed to determine whether the sous vide process could produce meals with superior sensory properties as claimed. A literature survey indicated that craft-based assessors (chefs) claimed improved qualities in sous vide products which were not consistently supported by sensory analysts (scientists). Empirical studies were conducted to test whether sous vide and conventionally processed dishes could be distinguished by untrained assessors in a controlled laboratory environment and with assessors in an ecologically valid environment, a restaurant. In the laboratory, the sous vide meals were easily distinguishable from and less acceptable than the conventionally produced dish. In the restaurant, few significant differences were found. Thus the ecologically valid environment of the restaurant where the many extrinsic factors affect consumers' perceptions, effectively masked differences between the sous vide and conventionally prepared meals. To explore the reasons for this, a survey (n188) was conducted to determine the relative importance of the intrinsic and extrinsic factors affecting the acceptability of foods when eating out. Results included a factor analysis which clearly showed components of 'customer care' had the greatest influence on the pleasure of eating out, followed by 'drink', and the absence of 'entertainment'. The factor which included 'enjoyment of food' was eleventh in the level of influence. Two scales were also devised to assess consumers' attitudes towards complaining about problems with meals and towards the technology used to produce them. This work has demonstrated that although consumers assume that the intrinsic qualities of food are the most important facator giving them pleasure when eating out, many extrinsic factors will have a much greater influence on affecting their overall pleasure from the experience

We identify technological constraints of current stereoscopic displays and image separation techniques as the potential underlying cause and generate a set of hypotheses concerning the implications for end users. Furthermore we outline a proposed study to examine these hypotheses

    A utilitarian antagonist: the zombie in popular video games

    This article takes as its starting point the prevalence of the zombie in video games. I argue that, although the zombie games often superficially resemble filmic texts in their use of aesthetic and narrative, they must be understood, less as a set of conventions and thematic metaphors in the way that the zombie text has been read in film and television scholarship, and more as a utilisation of the zombie as a utilitarian antagonist that facilitates and permits the pleasures of violence and fantasy in video game play. Beginning with the Resident Evil and Left 4 Dead series of games I examine the way that games necessarily update the notion zombie as mass antagonist via the need to vary gameplay activity through different styles of adversary for players. At the same time I will demonstrate that, far from simply being the province of the survival horror genre, the zombie appears across an array of game forms, game cultures and game productions. The zombie highlights the participatory nature of game culture in the array of zombie 'mods' that users create to transform existing games into zombie based games, in particular in relation to titles such as the Call of Duty series. At the other end of the production spectrum the zombie features heavily in the little studied area of online flash games where the zombie can be found in a variety of game genres and forms. The zombie here often operates as a pastiche of popular zombie narratives in survival games (The Last Stand), parodic engagements with zombie conventions (Jetpacks and Zombies) or play with the notion of zombie pandemics (the Infectionator games). Here I situate the zombie game as a aesthetic genre that works to provide an easily understandable context for such interactive genres as survival horror, text adventures, shooting games, physics games and driving games, with the popularity of these enough to drive numerous dedicated hosting and link sites such as zombiegames.net. The pastiche element of these games extends into gamers social engagement with games. Online debates over the the appropriate actions or preparation for a zombie holocaust are commonplace on the internet in such spaces as Zombieresearch.net. Whilst many of these sites feature decidedly tongue in cheek engagement with the notion of the zombie apocalypse, the users of fora for games like Left 4 Dead and Dead Island tend to debate this directly in the terms of the games themselves, discussing their relative merits or realism. Some of these games also highlight the specific pleasures of identifying the zombie as protagonist of sorts. In discussing this I will return to online gaming and the Left 4 Dead games in which players may compete online as part of the zombie horde. Such games raise major questions for the issues of identification and immersion that are said to be at the centre of the game experience. I will also explore the parodic pleasures of many flash games that situate the player in the role of spreading zombie infections. Throughout this article I aim to demonstrate that the zombie in game culture is less a cultural metaphor than a combination of utilitarian antagonist and a persistent aesthetic; a means of providing style or pleasure to many games that relies on the intertextual and flexible nature of the zombie as popular cultural phenomenon

    Sexual Trauma History Does Not Moderate Treatment Outcome In Attachment-Based Family Therapy (ABFT) For Adolescents With Suicide Ideation

    Despite the well-documented association between history of sexual trauma (HSA) and suicide ideation, HSA is largely overlooked in suicide treatment studies. Existing studies showed that patients with a HSA have a weaker treatment response. In this randomized clinical trial for suicide ideation, HSA did not moderate treatment outcome for Attachment-Based Family Therapy (ABFT). Adolescents responded better to ABFT than a control condition, regardless of HSA status. At baseline, adolescents with HSA were also more likely to report past suicide attempts than those without HSA, indicating that they are a particularly important subgroup to consider when developing and evaluating interventions that target suicide ideation.     Predictors of new onsets of irritable bowel syndrome, chronic fatigue syndrome and fibromyalgia:the lifelines study

    BACKGROUND: It has been claimed that functional somatic syndromes share a common etiology. This prospective population-based study assessed whether the same variables predict new onsets of irritable bowel syndrome (IBS), chronic fatigue syndrome (CFS) and fibromyalgia (FM). METHODS: The study included 152 180 adults in the Dutch Lifelines study who reported the presence/absence of relevant syndromes at baseline and follow-up. They were screened at baseline for physical and psychological disorders, socio-demographic, psycho-social and behavioral variables. At follow-up (mean 2.4 years) new onsets of each syndrome were identified by self-report. We performed separate analyses for the three syndromes including participants free of the relevant syndrome or its key symptom at baseline. LASSO logistic regressions were applied to identify which of the 102 baseline variables predicted new onsets of each syndrome. RESULTS: There were 1595 (1.2%), 296 (0.2%) and 692 (0.5%) new onsets of IBS, CFS, and FM, respectively. LASSO logistic regression selected 26, 7 and 19 predictors for IBS, CFS and FM, respectively. Four predictors were shared by all three syndromes, four predicted IBS and FM and two predicted IBS and CFS but 28 predictors were specific to a single syndrome. CFS was more distinct from IBS and FM, which predicted each other. CONCLUSIONS: Syndrome-specific predictors were more common than shared ones and these predictors might form a better starting point to unravel the heterogeneous etiologies of these syndromes than the current approach based on symptom patterns.     A finite volume shock-capturing solver of the fully coupled shallow water-sediment equations

    This paper describes a numerical solver of well-balanced, 2D depth-averaged shallow water-sediment equations. The equations permit variable variable horizontal fluid density and are designed to model watersediment flow over a mobile bed. A Godunov-type, HLLC finite volume scheme is used to solve the fully coupled system of hyperbolic conservation laws which describe flow hydrodynamics, suspended sediment transport, bedload transport and bed morphological change. Dependent variables are specially selected to handle the presence of the variable density property in the mathematical formulation. The model is verified against analytical and semi-analytical solutions for bedload transport and suspended sediment transport, respectively. The well-balanced property of the equations is verified for a variable-density dam break flow over discontinuous bathymetry. Simulations of an idealised dam-break flow over an erodible bed are in excellent agreement with previously published results ([1]), validating the ability of the model to capture the complex interaction between rapidly varying flow and an erodible bed and validating the eigenstructure of the system of variable-density governing equations. Flow hydrodynamics and final bed topography of a laboratory-based 2D partial dam breach over a mobile bed are satisfactorily reproduced by the numerical model. Comparison of the final bed topographies, computed for two distinct sediment transport methods, highlights the sensitivity of shallow water-sediment models to the choice of closure relationships

    Substâncias químicas de defesa contra consumidores e competidores podem ser usadas por espécies invasoras marinhas como estratégia de colonização e perpetuação em novo ambiente. Entretanto, há poucos estudos experimentais que demonstrem as possíveis interações negativas entre corais escleractínios. Este trabalho tem como objetivo caracterizar os metabólitos secundários dos corais invasores Tubastraea tagusensis e T. coccinea; avaliar através da técnica de amostragem in situ quais são as substâncias de T. tagusensis liberadas na água do mar, com o auxílio de aparelho subaquático com colunas Sep-Paks®. Colônias dos corais invasores Tubastraea spp foram coletadas na Baía de Ilha Grande, RJ, e extraídas com MeOH. Os extratos foram submetidos à eluições com hexano, DCM e MeOH, e analisados por CG-EM. Estearato de metila e palmitato de metila foram as substâncias majoritárias das frações hexânicas e hexano: DCM, enquanto o colesterol foi a substância mais abundante das frações DCM e DCM:MeOH de Tubastraea spp. O material orgânico retido nas colunas Sep-Paks® foi identificado como hidrocarbonetos. Diferenças significativas entre controle e tratamento foram relacionadas a diferentes quantidades de 1-hexadeceno, n-hexadecano e n-eicosano. A produção de substâncias de defesas em Tubastraea spp permite especular sobre a ameaça que estes corais invasores representam para as comunidades bentônicas da Ilha Grande.Defensive chemistry may be used against consumers and competitors by invasive species as a strategy for colonization and perpetuation in a new area. There are relatively few studies of negative chemical interactions between scleratinian corals. This study characterizes the secondary metabolites in the invasive corals Tubastraea tagusensis and T. coccinea and relates these to an in situ experiment using a submersible apparatus with Sep-Paks® cartridges to trap substances released by T. tagusensis directly from the sea-water. Colonies of Tubastraea spp were collected in Ilha Grande Bay, RJ, extracted with methanol (MeOH), and the extracts washed with hexane, dichloromethane (DCM) and methanol, and analyzed by GC/MS. Methyl stearate and methyl palmitate were the major components of the hexane and hexane:MeOH fractions, while cholesterol was the most abundant in the DCM and DCM:MeOH fractions from Tubastraea spp. The organic material retained in Sep-Paks® cartridges was tentatively identified as hydrocarbons. There was a significant difference between treatments and controls for 1-hexadecene, n-hexadecane and n-eicosane contents. The production of defensive substances by the invasive corals may be a threat to the benthic communities of the region, which include endemic species

    An algebraic theory of complexity for valued constraints: Establishing a Galois connection

    Abstract. The complexity of any optimisation problem depends critically on the form of the objective function. Valued constraint satisfaction problems are discrete optimisation problems where the function to be minimised is given as a sum of cost functions defined on specified subsets of variables. These cost functions are chosen from some fixed set of available cost functions, known as a valued constraint language. We show in this paper that when the costs are non-negative rational numbers or infinite, then the complexity of a valued constraint problem is determined by certain algebraic properties of this valued constraint language, which we call weighted polymorphisms. We define a Galois connection between valued constraint languages and sets of weighted polymorphisms and show how the closed sets of this Galois connection can be characterised. These results provide a new approach in the search for tractable valued constraint languages

    Leptin modifies the prosecretory and prokinetic effects of the inflammatory cytokine interleukin-6 on colonic function in Sprague–Dawley rats

    Leptin ameliorates the prosecretory and prokinetic effects of the pro-inflammatory cytokine interleukin-6 on rat colon. Leptin also suppresses the neurostimulatory effects of irritable bowel syndrome plasma, which has elevated concentrations of interleukin-6, on enteric neurons. This may indicate a regulatory role for leptin in immune-mediated bowel dysfunction. In addition to its role in regulating energy homeostasis, the adipokine leptin modifies gastrointestinal (GI) function. Indeed, leptin-resistant obese humans and leptin-deficient obese mice exhibit altered GI motility. In the functional GI disorder irritable bowel syndrome (IBS), circulating leptin concentrations are reported to differ from those of healthy control subjects. Additionally, IBS patients display altered cytokine profiles, including elevated circulating concentrations of the pro-inflammatory cytokine interleukin-6 (IL-6), which bears structural homology and similarities in intracellular signalling to leptin. This study aimed to investigate interactions between leptin and IL-6 in colonic neurons and their possible contribution to IBS pathophysiology. The functional effects of leptin and IL-6 on colonic contractility and absorptosecretory function were assessed in organ baths and Ussing chambers in Sprague–Dawley rat colon. Calcium imaging and immunohistochemical techniques were used to investigate the neural regulation of GI function by these signalling molecules. Our findings provide a neuromodulatory role for leptin in submucosal neurons, where it inhibited the stimulatory effects of IL-6. Functionally, this translated to suppression of IL-6-evoked potentiation of veratridine-induced secretory currents. Leptin also attenuated IL-6-induced colonic contractions, although it had little direct effect on myenteric neurons. Calcium responses evoked by IBS plasma in both myenteric and submucosal neurons were also suppressed by leptin, possibly through interactions with IL-6, which is elevated in IBS plasma. As leptin has the capacity to ameliorate the neurostimulatory effects of soluble mediators in IBS plasma and modulated IL-6-evoked changes in bowel function, leptin may have a role in immune-mediated bowel dysfunction in IBS patients
