The Interface of Technology in Culinary Arts Education
Introduction:
A culinary educator must make many decisions that affect the day-to-day activities in both the classroom and the lab. One of the more important decisions is how to select the most appropriate technology to implement for use in teaching and administrative activities. The research presented here is intended to help the educator identify specific needs, decide where the use of technology is desirable, and offer information designed to help the educator make an informed decision about using technology as a teaching tool.
Purpose Statement:
The purpose of this paper is to inform the culinary educator about the technology available for use in both the classroom and the lab setting. There is an ever-increasing pool of technology, making it more important than ever that the educator choose the appropriate lab/kitchen equipment and software programs for use in a specific culinary program. Making an informed decision ensures maximum usefulness of the technology in the setting
Obesity and Developmental Functioning Among Children Aged 2-4 Years
In developed countries, obesity tends to be associated with worse labor market outcomes. One possible reason is that obesity leads to less human capital formation early in life. This paper investigates the association between obesity and the developmental functioning of children at younger ages (2-4 years) than ever previously examined. Data from the German Socio-Economic Panel Study are used to estimate models of developmental functioning in four critical areas (verbal skills, activities of daily living, motor skills, and social skills) as a function of various measures of weight (including BMI and obesity status) controlling for various child and family characteristics. The findings indicate that, among boys, obesity is a significant risk factor for lagged development in verbal skills, social skills, and activities of daily living. Among girls, weight generally does not have a statistically significant association with these developmental outcomes. Further investigations show that the correlations exist even for those preschool children who spend no time in day care, which implies that the correlation between obesity and developmental functioning cannot be due to discrimination by teachers, classmates, or even day care providers.Obesity, human capital, children, child development, Germany, gender

Factor Substitution and Unobserved Factor Quality in Nursing Homes
This paper studies factor substitution in one important sector: the nursing home industry. Specifically, we measure the extent to which nursing homes substitute materials for labor when labor becomes relatively more expensive. From a policy perspective, factor substitution in this market is important because materials-intensive methods of care are associated with greater risks of morbidity and mortality among nursing home residents. Studying longitudinal data from 1991-1998 on nearly every nursing home in the United States, we use the method of instrumental variables (IV) to address the potential endogeneity of nursing home wages. The results from the IV models are consistent with the theory of factor substitution: higher nursing home wages are associated with lower staffing, greater use of materials (specifically, physical restraints), and a higher proportion of residents with pressure ulcers. A comparison of OLS and IV results suggests that empirical studies of factor substitution should take into account unobserved heterogeneity in factor quality.

Among girls, obesity is associated with reduced verbal skills. Further investigations show that the correlations exist even for those preschool children who spend no time in day care, which implies that it cannot be due solely to discrimination by teachers, classmates, or day care providers.
An Examination of the First Sediment Cores From Mountain Lake, Giles County, Virginia, for Diatoms and Pollen
Mountain Lake, Virginia is a small, unique, oligotrophic, subalpine ecosystem in the southern Appalachians. Its geology, origin, climate, and history have influenced its morphometry, and therefore its sedimentology and algal flora. Radiocarbon dates establish specific Mountain Lake sediment ages at 1800, 4100, and 6100 years BP. Sediment core analysis suggests at least 6 prolonged periods when Mountain Lake probably was nearly dry or very small in size. These individual low-water periods (at approximately 100, 400, 900, 1200, 1800 and 4100 years BP) are evidenced by changes in diatom and pollen content, sedimentary erosion features, and the presence of wood fragments, plant fibers, and abundant Sphagnum and fern spores. The ratio of planktonic-to-benthic diatom taxa was used to estimate approximate past water depths from sediment. One or more of these low-water intervals may correspond to a drier climate coincident with solar activity minima. Resolution of prolonged low water intervals probably has been enhanced by the continuous loss of water through the crevice or fault at the lake bottom. The sediment core record suggests also that some eutrophication has occurred during the 20th century, in parallel with anthropogenic impacts (i.e. increased sedimentation, induced eutrophication, and diatom diversity changes). These findings provide the first published diatom, pollen and sedimentology-based paleolimnology for this lake
