Supply Chain Management is at the heart of competitive advantage for any organisation. Without Supply Chains, the Hospitality Industry would quickly grind to a halt. There would be no fruit or vegetables in our restaurants, no beer or wine in our bars and no beds or toilets in our hotels. There would be no recycling of glass or the disposal of food products. There would be no customers. Given the importance of Supply Chains to the Hospitality Industry it is perhaps surprising that so little is published about Supply Chains and how Supply Chains can be managed. The aim of this working paper is to define SCM and establish an agenda for undertaking research into this important but neglected topic

Knowledge sharing in organic food supply chains
Although local, short supply chains are regarded as most suitable for organic products, most organic food is sold through general retailers. The extended supply chains create challenges: (1) how to sustain the connection between farmers and consumers and deliver the multifaceted value of organic food and (2) how to cooperate to meet both the needs of consumers and of each independent company involved in the supply chain. Sustainable fibre for sustainable fashion supply chains: where the journey to sustainability begins
Adopting a sustainable business model is an essential element of gaining competitive advantage. Specifically, the management of fashion and textile supply chains characterized by geographical extension requires paying particular attention to environmental and social sustainability. Following an analysis of the literature on sustainable supply chains in the fashion and textile industries, this qualitatively based research examines – from a supply chain perspective – the sustainability initiatives implemented by a yarn and garment producer through a single case study. Subsequently, the classification of potential sustainability initiatives is presented. From this investigation, several good practices for sustainable fashion supply chains can be identified, providing a reference point for similar companies. This paper presents a research agenda on innovation through (international) food supply chains and networks in developing countries. It derives major topics from a multi-perspective view on international food chains (economic, technology, social/legal and environment) and from different theoretical streams dealing with chains and networks (Supply Chain Management, Industrial Organization theory and Network Theory). Three agri-supply chain projects in developing countries (Thailand, South-Africa, Ghana) are analyzed to identify focus areas in supply chain development projects and important gaps. Traceability in Meat Supply Chains
Traceability through the agri-food supply chain has become the focus of recent industry initiatives and policy discussions in Canada. Traceability can be part of a strategy to reduce the risk or minimize the impact of a foodborne disease problem. It can also be part of a larger quality assurance strategy, facilitating the verification of specific quality attributes. This paper examines the economic incentives for implementing traceability systems in the meat and livestock sector, including ex post cost reduction, enhanced effectiveness of liability law, and reduced information costs for consumers.
