    The 12th Weurman Flavour Research Symposium contributed 177 lectures and posters to the wealth of flavor knowledge; these were presented in eight sessions: biology, retention and release, psychophysics, quality, thermal generation, bioflavors, impact molecules, and analytics. Emerging topics were discussed in three workshops dealing with flavor and health, in vivo flavor research, and flavor metabolomics. It has been an excellent forum for passionate exchange of recent results obtained in traditional and emerging fields of flavor research. The symposium allowed coverage of the broad diversity of flavor-related topics: comprising odor and taste; applying targeted and holistic approaches; using sensorial, chemical, biological, physical, and chemometric techniques; as well as considering nutrition and health aspects

    `Fried chicken belongs to all of us': The Zooarchaeology of Enslaved Foodways on the Long Green, Wye House (18TA314), Talbot County, Maryland

    This project analyzes the zooarchaeological remains excavated from three slave quarters, located on the Long Green of the Wye House Plantation (18TA314). The zooarchaeological data used dates from about 1650 until 1865. The dissertation focuses on how the late 18th century - archaeologically c. 1770 - was a period of immense change at Wye House and this caused coinciding changes in food consumption. Faunal data is combined with historical and archaeological information to assess the validity of utilizing African-American food patterns. The dissertation interrogates the role of archaeologists in reifying racism and in the reproduction of inferior histories for African-Americans based on dominant narratives. The research incorporates the consideration of other social, political, historical, and economic variables to assess the development of local and regional cuisines. This dissertation evaluates why designations of Soul Food and African-American foodways emerged, how this cuisine compares to Southern Cooking, and the ideologies behind keeping the two cuisines separate

    This open access book studies breath and breathing in literature and culture and provides crucial insights into the history of medicine, health and the emotions, the foundations of beliefs concerning body, spirit and world, the connections between breath and creativity and the phenomenology of breath and breathlessness. Contributions span the classical, medieval, early modern, Romantic, Victorian, modern and contemporary periods, drawing on medical writings, philosophy, theology and the visual arts as well as on literary, historical and cultural studies. The collection illustrates the complex significance and symbolic power of breath and breathlessness across time: breath is written deeply into ideas of nature, spirituality, emotion, creativity and being, and is inextricable from notions of consciousness, spirit, inspiration, voice, feeling, freedom and movement.     Dipterocarps protected by Jering local wisdom in Jering Menduyung Nature Recreational Park, Bangka Island, Indonesia

    Apart of the oil palm plantation expansion, the Jering Menduyung Nature Recreational Park has relatively diverse plants. The 3,538 ha park is located at the north west of Bangka Island, Indonesia. The minimum species-area curve was 0.82 ha which is just below Dalil conservation forest that is 1.2 ha, but it is much higher than measurements of several secondary forests in the Island that are 0.2 ha. The plot is inhabited by more than 50 plant species. Of 22 tree species, there are 40 individual poles with the average diameter of 15.3 cm, and 64 individual trees with the average diameter of 48.9 cm. The density of Dipterocarpus grandiflorus (Blanco) Blanco or kruing, is 20.7 individual/ha with the diameter ranges of 12.1 – 212.7 cm or with the average diameter of 69.0 cm. The relatively intact park is supported by the local wisdom of Jering tribe, one of indigenous tribes in the island. People has regulated in cutting trees especially in the cape. The conservation agency designates the park as one of the kruing propagules sources in the province. The growing oil palm plantation and the less adoption of local wisdom among the youth is a challenge to forest conservation in the province where tin mining activities have been the economic driver for decades. More socialization from the conservation agency and the involvement of university students in raising environmental awareness is important to be done
