Abstract

[insert link to document here].Mobile markets, also called grocery-stores-on-wheels, work to improve food access, food security, and dietary intake in underserved areas. With limited shelf-space, mobile markets have to make decisions on which products to stock to support a culturally-connected and nutritious food shopping environment, while also balancing price and respecting customer autonomy.
