Studies in Physico-Chemical Characteristics of Fruit During Growth and Development in 'TN6' Pineapple (Ananans comosus [L] Merrill)

Abstract

Changes in physico-chemical characteristics of fruit during growth and development of pineapple variety ‘TN6” where investigated. The curves representing growth rate with fruit length, width and weight were sigmoid. Flesh ratio and soluble colids concentrations were increases with fruit development. The pH of juice were decreased with fruit development. Titratable acidity was decreased 77 days after anthesis. Ascorbic acid concentration was increase with fruit development until 63 days after anthesis. During fruit development fructose and glucose concentrations were not changes but sucrose and citic acid concentrations were increased when fruit mature.Changes in physico-chemical characteristics of fruit during growth and development of pineapple variety ‘TN6” where investigated. During fruit development fructose and glucose concentrations were not changes but sucrose and citic acid concentrations were increased when fruit mature.探討'台農6號'鳳梨果實之發育,並調查果實成分之變化情形。調查結果,果實發育期間果長、果寬及果重均呈單S型的生長曲線。果肉率、可溶性固形物均隨發育日數增加而增加。果肉之含水量及果汁pH值均隨果實的發育而下降,果實發育初期可滴定酸隨果實發育呈明顯上升,但於花後77日起開始下降,抗壞血酸含量隨發育而增加,但於花後63日起開始下降。果汁中果糖及葡萄糖濃度在果實發育期間變化並不明顯,但果實發育後期蔗糖濃度明顯累積,檸檬酸含量亦顯著增加
