Effect of probiotic fermentation on carbohydrate and mineral profile of an indigenously developed food blend
An indigenous food mixture was developed by mixing rice flour, whey, sprouted green gram paste and tomato pulp (2:1:1:1, w/w) and was coded as RWGT. The mixture was autoclaved (1.5 kg cm-2, 15 min, 121 °C), cooled and inoculated with 2% liquid culture (containing 106cells ml-1 broth). Two types of fermentations were carried out, single culture fermentation [L. casei, L. plantarum (37 °C, 24 h)] and sequential culture fermentation [S. boulardii (25 °C, 24 h)] + L. casei (37 °C, 24 h); S. boulardii (25 °C, 24 h) + L. plantarum (37 °C, 24 h)]. Single culture fermentations caused significant (P<0.05) reduction in the total soluble sugars (51-54%), non-reducing sugars (73-78%) and starch content (41-43%). Sequential culture fermentations decreased the total available carbohydrates by 62-64%. All the fermentations significantly (P<0.05) improved the HCl-extractability of minerals viz. iron (54-67%), calcium (22-32%), sodium (25-30%) and potassium (17-24%)
Interpretation of organic wine's flavour profile by multivariate statistical analysis
Organic wines produced by using organically cultivated grapes were evaluated using multivariate analysis and profiled by quantitative descriptive analysis. Trained judges rated the intensity of aroma and flavour descriptors. The statistical evaluation of the data demonstrated the close relation between Merlot and Cabernet sauvignon wines, considering their aroma descriptors and between Merlot and Carignan taking into account the taste descriptors. Significant differences among white wines were determined for sweet and bitter attributes and among red wines for sour, sweet, bitter, and astringency descriptors. The results of wine aroma characteristics demonstrated the following major descriptors for each wine type: metallic (Columbard); grape juice, wet wood, vine leaf (Semillon); burned wood (Grenache); dust, sour cherry, tobacco, yeast (Cabernet sauvignon); cork, unripe fruit, cinnamon (Carignan); grape molasses, dry plum (Merlot). Flavor profile of organic wines revealed specific descriptors for each wine type, namely raisin (Columbard); alcohol, rose, vine leaf, sulphur (Semillon); clove, salty (Grenache); flower, sour cherry, melon, cornelian cherry (Cabernet sauvignon), dry plum (Carignan, Merlot)
A preparative-scale synthesis of O-alkyl-b-D-glucosides by enzymatic reverse hydrolysis
A preparative-scale synthesis of O-substituted β-D-glucopyranosides catalyzed by immobilized β -glucosidase in reverse hydrolytic reactions was attempted by using our novel reaction system. In this system the alcohols as solvents were replaced with organic solvents as diluting components. We found that not only 1,2-diacetoxyethane, but also triacetin is a suitable diluting solvent, because they can reduce the heterogeneity in the reverse hydrolytic reaction mixtures. Because of the high boiling point of the solvents, an extraction method was used for the isolation of products after reverse hydrolysis. This method resulted in higher yields (15-25%) than our original evaporation method (11-19%)

a lengyelországi Szczytnoi Rendőrakadémián töltött el egy hetet, amelynek
során megismerkedtek egy olyan szimulációs szoftverrel, amely a tevékenységirányító központokban dolgozók meglévő készségeit fejleszti virtuális rendszerkörnyezetben. Jelen tanulmány ennek bemutatását célozza a hazai szakmai
közönség számára.
Módszertan: A tapasztalatok megosztása a megtekintett külföldi rendszer működésének bemutatásával, és egyúttal a hazai gyakorlat áttekintésével történik.
Megállapítások: Olyan javaslatokat tartalmaz, amelyek a hasznos tapasztalatokból kiindulva a hazai szakemberképzés megújítását célozzák. A képzés elméleti és gyakorlati ismeretek átadását is feltételezi.
Érték: Hazánkban ez két szervezet együttműködésével hatékonyan megvalósítható, a lengyel technológia és a kapcsolódó képzési metodika pedig – felsővezetői igény esetén – a magyar képzési rendszerbe beépíthető. | Aim: The field of law enforcement requires a quick response to new challenges and the use of technical innovations. Most of the authors of the study spent a week at the Police Academy in Szczytno, Poland, during which they learned about a simulation software that improves the existing skills of those working in operations management centers in a virtual system environment. This study aims to present this to the domestic professional audience.Methodology: The experience is shared by presenting the operation of the foreign system visited and at the same time by reviewing the domestic practice.Findings: It contains proposals that, based on useful experiences, are aimed at renewing domestic professional training. The training also assumes the transfer of theoretical and practical knowledge.Value: In our country, this can be effectively implemented with the cooperation of two organizations, and the Polish technology and the related training methodology can be incorporated into the Hungarian training system if required by top management
The impact of political-demographic considerations on European attitudes towards parenting and adoption by same-sex couples
This study investigates attitudes towards the adoption rights and parenting skills of same-sex couples in 25 European countries using data from the European Social Survey and the European Values Study. The aim is to explore how political-demographic processes and various types of pronatalism intersect and shape attitudes towards same-sex parenting issues. Our hierarchical regression analysis reveals that similar social groups generally accept both same-sex adoption rights and parenting skills. Additionally, attitudes towards these issues are influenced by views on immigration and voluntary childlessness, along with macro-level factors like legal regulations, gender inequality and religiosity. The study enhances the understanding of European political-demographic processes and the concept of selective patriotic pronatalism – defined as a preference for the reproduction of certain social groups over others, framed as a national or patriotic duty – by highlighting that various forms of pronatalism can actually impede reproductive empowerment
