    Association between Sleep Quality with Overweight/Obesity and Other Factors among Adults in Indonesia Post-COVID-19 Pandemic

    The prevalence of adult overnutrition in Indonesia has increased from 26,3% to 35,4% in 2013 - 2018. One of the factors of overnutrition is poor sleep quality. Poor sleep quality increased appetite and decreased energy expenditure, leading to weight gain. Sleep quality also worsened during COVID-19 pandemic. The purpose of this study was to examine the relationship between sleep quality and the incidence of overweight/obesity in adults post-COVID-19 pandemic. The design of this study was cross-sectional using an online survey. The questionnaire included current weight and height and sleep quality using the Pittsburgh Sleep Quality Index (PSQI) questionnaire. Data were collected from June to August 2022 in Indonesia with convenience sampling. A Total 148 subjects filled out the questionnaire completely. The association was analyzed using Chisquare. This study found 58,8% of the subject had poor quality of sleep and 23,6% was overweight/obese. Age, sex, education, occupation, and marital status were associated with sleep quality. The higher proportion of poor sleep quality was found among overweight/overnutrition subjects but no association was found. In conclusion, there was no association between sleep quality and overweight/obesity. Most of the subjects had poor quality of sleep thus, further intervention is needed to improve it

    Non-communicable diseases can cause oxidative stress which have a role in the pathophysiology of non-communicable diseases. One of the recommended diets for preventing complications of non-communicable diseases is a rich–antioxidants diets. One of the foods rich in antioxidants is beetroots. This study aims to assess the antioxidant content of locally obtained beetroot juice. Analytical research uses laboratory experimental methods to test the antioxidant activity of beetroot juice. Before the laboratory test was carried out, a hedonic test was carried out by the panelists. The beets are then juiced and checked for DPPH′ (2,2-diphenyl-1-picrylhydrazyl).The beetroot is then juiced and checked for DPPH′ (2,2-diphenyl-1-picrylhydrazyl). Statistical analysis using the Kruskal Walis test.  Results: The hedonic test showed that panelists preferred beetroot juice with the addition of lemon juice with a 'like' range for the aroma and viscosity and a 'neutral-like' range for the taste and color of beetroot juice. The antioxidant content in 300 ml of beetroot juice is 53,34 ± 0,13%. Conclusion: Beetroot juice has a high antioxidant content and has health benefits for preventing PTM

    Gender role analysis in achieving farmer household food security in Jember District

    Food security is a problem that is still a global issue that has received serious attention from various international countries, including Indonesia. Indonesia, as one of the countries with the most significant agricultural sources, still has problems related to gender inequality which is a different value as a cause of food insecurity problems. This research aims to analyze the mapping related to the food security of Jember farmers and its relation to household decision-making and division of tasks related to food management in farming households in the Jember district. This study used a survey method by taking 251 samples of farming families from the area working in the Public Health Center in Jember Regency, this research was conducted over 3 months, from may to july 2023. Quantitative data were collected using questionnaires and supported by qualitative data through in-depth interviews and analyzed bivariately using Spearman rho test. The results of this study showed that gender’s role with food security (p<0,05) and  this study also found a positive relationship between gender roles and food security, as the higher the gender role assigned, the food security of farmers in Jember will also increase (r=0,504)

    Broccoli, a vegetable rich in fiber, vitamins, and minerals, holds considerable potential for daily consumption, either as a complementary dish alongside main courses or as a culinary component. However, its incorporation into cake recipes remains limited. To address this gap, a study was conducted to explore the integration of broccoli as a substitute ingredient in a specific type of moist cake known as Kue Lumpur, a renowned traditional Indonesian delicacy often enjoyed as a snack during various events. This research aimed to experiment with the creation of green broccoli puree, investigate the process of producing Kue Lumpur by incorporating the green broccoli puree, assess the responses of sensory panelists, and evaluate the nutritional composition of the resulting Kue Lumpur with the substituted green broccoli puree. Data collection techniques encompassed documentation and the utilization of a scoresheet-based questionnaire. Analytical methods included quantitative descriptive statistical analysis, mean comparison tests, ANOVA, and Duncan tests. The procedure for crafting broccoli puree involved sequential steps such as separation, blanching, steaming, and refinement. Similarly, the production process of Kue Lumpur with the substituted green broccoli puree encompassed stages of preparation, formulation weighing for four distinct formulations (F1: 10%, F2: 20%, F3: 30%, and F4: 40% puree content), ingredient mixing, and the baking process. Subsequently, a sensory evaluation was conducted by a panel of experts, assessing aspects such as color, aroma, texture, and taste of the Kue Lumpur with substituted green broccoli puree. The selected formulation, F2 (20% green broccoli puree and 80% potato), exhibited enhanced protein content and decreased ash content, making it the preferred choice

    Knowledge and food habits of hypertensive adults after counseling using nutrition & hypertension flipchart at Tanjung Priok Public Health Center

    Hypertension is a non-communicable disease that was experienced by approximately 22% of the global population, as reported by WHO in 2019. It also affects adults and elderly (63,49%) more than younger population (13,22%) in Indonesia. This research was determined the differences of knowledge and food habits of patients after counseling using nutrition and hypertension flipchart. The research used a pre-experimental design with one-group pretest-posttest. The research was conducted in Tanjung Priok Public Health Center in 2022 with 30 outpatients with hypertension as respondents. The respondents who met the inclusion criteria were chosen by accidental sampling. Knowledge levels were collected using questionnaires, and food habits were assessed using Food Frequency Questionnaires (FFQ). Statistical analysis of the data used a paired t-test (80% CI). The result showed a significant increase in the knowledge scores of patients, from 76,67 to 93,00 after counseling using nutrition & hypertension flipchart (p <0.001). After counseling, the descriptive analysis showed a reduction in the number of respondents who frequently consumed high-sodium and high-saturated foods. It concluded that knowledge levels and food habits of patients with hypertension can improve after counseling using nutrition and hypertension flipchart

    Effects of fiber and resistant starch in "Mangpis" cookies on changes in blood lipid profile in obese patients obesity

    An abnormal lipid profile is the cause of heart disease in obesity. Increased levels of total cholesterol, LDL (Low-Density Lipoprotein), TG (Triglycerides), and low levels of HDL (High-Density Lipoprotein) are indicators. Research purposes are  to identify dietary fiber and resistant starch in mangpis cookies and to analyze the effect of giving mangpis cookies on reducing lipid profiles. This study used a pre-test and post-test  design measure the lipid profile before and after eating mangpis cookies. Mangpis cookies are made without wheat flour and replace  them with 50% Bruguiera gymnorhiza mangrove flour and 50% kepok banana flour. This experiment was conducted on 16 obese subjects. The sampling technique is based on purposive sampling. The decrease in lipid profile was seen based on the results of blood tests before and after consuming mangpis cookies. Effect of consumption of mangpis cookies on reducing lipid profile using paired t-test  and Wilcoxon test . The results of the analysis of the content of food fiber and resistant starch contained in the mangpis cookies were 7,86 ± 004 and 6,65 ± 0,01 with p value TG (p=0,001 and HDL (p=0,01). The conclusion  is mangpis cookies were identified to contain 17,8% dietary fiber and 15% resistant starch, and could have an influence on the lipid profile, especially TG levels

    Stress Level and Emotional Eating in Obese and Non-Obese Adolescents

    The link between stress factors and emotional eating can contribute to the development of obesity. Boredom, stress, anxiety, and depression can lead to emotional eating, which involves consuming food to cope with negative emotions. Emotional eating often involves the consumption of high-calorie, comfort foods, which can contribute to weight gain. This research aims to analyze the differences in stress levels and emotional eating in obese and non-obese adolescents. This research was conduct in May 2023 using observational case-control study between obese and non-obese adolescent group in the special region of Yogyakarta. 139 respondents who attended this study were selected using multistage random sampling. Stress levels were measured with a questionnaire Perceived Stress Scale-10 (PSS-10) and emotional eating was collected with Emotional Eater Questionnaires (EEQ). The data were collected and then analyzed using Mann Whitney test. Results, respondents mostly had high-stress levels (49,6%) and low emotional eaters (43,9%). There are differences in stress levels (p=0,004) and emotional eating (p=0,000) between obese and non-obese adolescent group. Conclusions, stress levels and emotional eating were different in obese and non-obese adolescents

    The Dominant Factors Associated with Stunting Among Two Years Children of Five Provinces in Indonesia

    Stunting is still a major malnutrition problem in Indonesia. The 2021 Indonesian Nutritional Status Study (SSGI) reports that there are five provinces with high stunting prevalence (>30%). The age under two years (old age) is the golden period where children overgrow, and malnutrition during this period can still be corrected. This research analyses the dominant factors associated with stunting among toddlers in the five provinces, namely Aceh, NTB, NTT, West Sulawesi and Southeast Sulawesi. The research design is a cross-sectional study using secondary data from SSGI 2021 results. The subjects were 4,554. children (0-23 months) under five. The 2021 SSGI research was conducted in 34 Provinces and 514 Regencies/Cities in January-December 2021. Data from this study was collected by interviews using the SSGI 2021 questionnaire and anthropometric measurements. Data processing uses statistical applications. Data analysis used multiple logistic regression tests with criteria of p<0,05 and a confidence interval (CI) of 95%. The risk factors associated with stunting in children from the five provinces are underweight (OR=9,367), age 6-11 months (OR=1,386), age 12-23 months (OR=1,386), diagnosis of measles (2,5681 CI), male (OR=1,400), family size ≥ 8 people (OR=1,612), poor sanitation (OR=1,273 CI 95% 1,041-1,556), and father's occupation as farmer/labourer/fisherman/driver (OR=1,278). in conclusion, underweight is the dominant factor associated with stunting in toddlers

    Prevalence and Determinant Factors of Chronic Energy Deficiency (CED) in Pregnant Women

    Pregnant women with Chronic Energy Deficiency (CED) are prone to malnutrition due to prolonged imbalances in the intake of essential nutrients. The purpose of this study was to analyze the factors associated with the risk of CED incidence in pregnant women. This study was a quantitative, cross-sectional design that was conducted from June to August 2023 in the working area of Parung Panjang Health Center, Bogor Regency. The sample size in this study was 140 pregnant women by purposive sampling. Respondents’ characteristics were obtained through questionnaire interviews, MUAC were collected through MUAC tape, dietary intake using a Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ) form, and the hemoglobin through rapid test. Analysis using chi square statistical test at 95% CI. The results of the study showed that the prevalence of CED was 20,7%. There was a significant relationship between maternal age, parity, gestational age, history of infectious diseases, knowledge, energy, and protein adequacy with the CED in pregnant women (p 0,05). Determinant factors of CED are maternal age, parity, gestational age, history of infection, knowledge, energy, and protein intake

    Antioxidant activities (DPPH and ABTS method) from extract of Bangle rhizome (Zingiber cassumunar) using different method of extraction

    Antioxidants are important in preventing oxidative, which can cause various degenerative diseases. Bangle contains bioactive components with antioxidant potential. Processing affects active compounds in food, including in Bangle. This study aims to determine the effect of blanching and extraction methods on the antioxidant activity of Bangle. This study consisted of three factor: blanching treatment extraction technique and time and type of extraction solvent. Analyses of antioxidant using DPPH and ABTS method were conducted in triplicate for each sample.  The data were analyzed using ANOVA. This study result shows that the method, time, and type of solvent significantly affect the antioxidant activity of bangle rhizome extraction. The best treatment of antioxidant activity of Bangle rhizome is blanching treatment by adding 0,05% citric acid solution in the sonication extraction method and a time of 30 minutes with ethanol as the solvent. The IC50 value on the DPPH method was 20,61±0,76 mg/g, and the percent free radical scavenging value was 87,11±3,04%. The IC50 value on the ABTS method is 20,79±0,29 mg/g and a percent free radical scavenging activity value of 92,75±0,13%. The study provides key insights for choosing effective extraction methods to increase antioxidant activity in natural materials like Bangle rhizome
