The aim of this paper is to analyze the role of coffee production function in the Arabian variety in the Basic Units of Cooperated Production (UBPC), Economic Agropecuaria Management Center "Limonar", "El Salvador" of Bayate, Guantanamo province, using an econometric model and techniques based on marginal analysis mainly partial derivatives. The analysis allowed the adoption of a group of organizational measures, which used in the allocation of resources, caused increase in yields, reducing costs and increasing revenues. These measures have proven to have advantages over the traditional method, confirmed by a rise in coffee production in 2,06 %. The use of the functions of production combined with the marginal analysis is a novel aspect of addressing these issues
