Characterization of rigor mortis of longissimus dorsi and triceps brachii muscles of male cattle carcasses
In this work, six bovine carcasses butchered in a slaughterhouse in Rio de Janeiro State, Brazil (SIE 504) were studied and temperature, pH, sarcomere length in different periods after slaughter (1, 5, 8, 12, 15 and24 h) of the longissimus dorsi (LD) and triceps brachii (TB) muscles as well as the shear force (meat tenderness) and colour were evaluated, aiming at characterizing the rigor mortis in the meat during industrial processing. Data statistic treatment demonstrated that carcass temperature and pH decreased gradually during the industrial chilling. The chilly room temperature varied from 10.2 to 4.0°C, the mean initial temperature of longissimus dorsi was 34.03°C and the final one was 7.12°C; the mean initial temperature of Triceps brachii was 39.00°C and the final one was 6.42°C. The mean initial pH of Longissimus dorsi was 6.47 and the final one was 5.46; the mean initial pH of Triceps brachii was 6.66 and the final one was 5.54. The smallest sarcomere size obtained in both muscles occurred at 12 h post mortem, and the sarcomere lengths were 1.44 and 1.41 μm, respectively. As for the colour parameters, the b* value presented higher correlation with the ultimate pH. The absence of cold shortening and the non-occurrence of dark firm and dry (DFD) meat indicate better quality of the meat analyzed.Keywords: Bovine carcass, muscles, rigor morti
Efetividade de escovas dentais de baixo custo, com ou sem o uso de dentifrício, na remoção da placa bacteriana em dentes decíduos
O principal objetivo deste estudo foi comparar a efetividade de uma escova dental de baixo custo (monobloco) à efetividade de uma escova convencional, com ou sem adição de dentifrício, em relação à remoção da placa dentária.Participaram deste estudo trinta e duas crianças de 4 a 6 anos de idade, que foram avaliadas sob quatro condições experimentais, definidas pela combinação de dois fatores: escova dental (convencional ou monobloco) e uso de dentifrício (com ou sem dentifrício). A efetividade dos tratamentos foi definida em termos de redução do índice de placa bacteriana, avaliado antes e após a escovação.Não foram encontradas diferenças estatisticamente significativas entre os dois tipos de escovas no que diz respeito à redução de placa bacteriana. Similarmente, não houve evidências estatísticas de que o uso de dentifrício aumenta o controle mecânico da placa. Esses resultados são importantes do ponto de vista de saúde pública, principalmente em países em desenvolvimento, onde a disseminação de técnicas educacionais e preventivas de baixo custo são fundamentais.The main objective of this study was to compare the effectiveness of a low cost toothbrush ("monoblock") to that of a conventional toothbrush with and without addition of dentifrice with respect to the removal of dental plaque. Thirty-two 4- to 6-year-old children took part in this study: they were evaluated under four experimental conditions defined by the combinations of the values of two factors, toothbrush (conventional or monoblock) and use of dentifrice (with or without). The effectiveness of the treatments was defined in terms of the reduction of a bacterial plaque index evaluated before and after toothbrushing. No statistically significant differences were detected between the two types of toothbrushes with respect to the reduction of the bacterial plaque index. Similarly, there were no statistical evidences that the use of dentifrice improves the mechanical control of dental plaque. These results are important from a public health point of view, specially in developing countries, where the dissemination of educational and preventive techniques of low cost are fundamental
Reducing fat and sodium content in pork sausage
This work aimed to prepare pork sausage using xanthan gum and light salt (NaCl/KCl) to replace the fat and common salt (NaCl), respectively, and to assess the impact of the changes in the chemical and sensory characteristics of the product. The consumers evaluated sensory acceptance with respect to flavor, odor, texture and appearance (mixed 9-point structured hedonic scale). The use of xanthan gum resulted in a decrease of 27.27% in fat content, 19.54% in the energy value and an increase in the percentage of moisture, thus giving a higher industrial yield. With the use of light salt, there was a reduction of 71.77% in sodium and an increase of 124.73% in potassium content. Formulation 1 scored the highest means for acceptance of appearance. QTL and candidate gene mapping for polyphenolic composition in apple fruit
<p>Abstract</p> <p>Background</p> <p>The polyphenolic products of the phenylpropanoid pathway, including proanthocyanidins, anthocyanins and flavonols, possess antioxidant properties that may provide health benefits. To investigate the genetic architecture of control of their biosynthesis in apple fruit, various polyphenolic compounds were quantified in progeny from a 'Royal Gala' × 'Braeburn' apple population segregating for antioxidant content, using ultra high performance liquid chromatography of extracts derived from fruit cortex and skin.</p> <p>Results</p> <p>Construction of genetic maps for 'Royal Gala' and 'Braeburn' enabled detection of 79 quantitative trait loci (QTL) for content of 17 fruit polyphenolic compounds. Seven QTL clusters were stable across two years of harvest and included QTLs for content of flavanols, flavonols, anthocyanins and hydroxycinnamic acids. Alignment of the parental genetic maps with the apple whole genome sequence <it>in silico </it>enabled screening for co-segregation with the QTLs of a range of candidate genes coding for enzymes in the polyphenolic biosynthetic pathway. This co-location was confirmed by genetic mapping of markers derived from the gene sequences. <it>Leucoanthocyanidin reductase </it>(<it>LAR1</it>) co-located with a QTL cluster for the fruit flavanols catechin, epicatechin, procyanidin dimer and five unknown procyanidin oligomers identified near the top of linkage group (LG) 16, while <it>hydroxy cinnamate/quinate transferase </it>(<it>HCT</it>/<it>HQT</it>) co-located with a QTL for chlorogenic acid concentration mapping near the bottom of LG 17.</p> <p>Conclusion</p> <p>We conclude that <it>LAR1 </it>and <it>HCT</it>/<it>HQT </it>are likely to influence the concentration of these compounds in apple fruit and provide useful allele-specific markers for marker assisted selection of trees bearing fruit with healthy attributes.</p
Unusual winter Saharan dust intrusions at Northwest Spain: Air quality, radiative and health impacts
[EN] Saharan air masses can transport high amounts of mineral dust particles and biological material to the Iberian Peninsula. During winter, this kind of events is not very frequent and usually does not reach the northwest of the Peninsula. However, between 21 and 22 February 2016 and between 22 and 23 February 2017, two exceptional events were registered in León (Spain), which severely affected air quality. An integrative approach including: i) typical synoptic conditions; ii) aerosol chemical composition; iii) particle size distributions; iv) pollen concentration; v) aerosol optical depth (AOD); vi) radiative forcing and vii) estimation of the impact of aerosols in the respiratory tract, was carried out. In the global characterization of these events, the exceedance of the PM10 daily limit value, an increase in the coarse mode and a rise in the iron concentration were observed. On the 2016 event, an AOD and extinction-related Ångström exponent clearly characteristic of desert aerosol (1.1 and 0.05, respectively) were registered. Furthermore, pollen grains not typical of flowering plants in this period were identified. The chemical analysis of the aerosol from the 2017 event allowed us to confirm the presence of the main elements associated with mineral sources (aluminum, calcium, and silica concentrations). An increase in the SO42−, NO3− and Cl− concentrations during the Saharan dust intrusion was also noted. However, in this event, there was no presence of atypical pollen types. The estimated dust radiative forcing traduced a cooling effect for surface and atmosphere during both events, corroborated by trends of radiative flux measurements. Bullying escolar: um fenômeno multifacetado
School bullying can involve children in different ways, making them play different roles, among them, victims, bullies and bully-victims. The aim of this study was to describe how bullying occurs in high social vulnerability schools of Florianópolis metropolitan area and the roles played by students in this phenomenon. Overall, 409 children and adolescents from the 3rd to 5th grades and of two public elementary schools aged 8-16 years (X = 11.14) participated in this study. As a tool, the Olweus Questionnaire adapted to the Brazilian population was used. For data analysis, descriptive statistics and inferential statistics were applied by the Mann Whitney and Kruskal Wallis tests. As for results, 29.8% of boys and 40.5% of girls reported being victims; 32.3% of boys and 24.6% of girls reported being bullies. Victims were the most willing to help a colleague who is suffering from bullying (X = 1.54; p> 0.001), even if they do not know the victims (X = 1.57; p> 0.004). Bullies are differentiated from the group that does not participate (X = 1.73) and the group of victims (X = 2.34), being those who felt less alone (x = 1.47; p> 0.001). It was concluded that the information obtained in this study is indispensable in the search for alternatives to reduce school bullying. The strengthening of relations between school and students and a better preparation of teachers and school staff are extremely necessary to try to minimize the effects of risk factors to which these children are exposed and consequently violence at school.O bullying escolar pode envolver crianças de diferentes

Dentre estes, têm-se vítimas, agressores e vítimas-agressoras. O
objetivo deste estudo foi descrever como ocorre o bullying em
escolas de alta vulnerabilidade social da Grande Florianópolis
e os papéis assumidos pelos alunos nesse fenômeno. Quanto ao
método, participaram 409 crianças e adolescentes do terceiro
ao quinto ano e da quarta à sexta série do ensino fundamental,
de duas escolas públicas municipais, com idades entre 8 e 16
anos (X=11,14). Como instrumento, utilizou-se o Questionário
de Olweus adaptado à população brasileira. Para a análise
dos dados, empregaram-se a estatística descritiva e estatística
inferencial por meio dos testes Mann Whitney e Kruskal Wallis.
Quanto aos resultados, 29,8% dos meninos e 40,5% das meninas
relataram terem sido vítimas; já 32,3% dos meninos e 24,6%
das meninas relataram terem sido agressores. As vítimas foram
as que se mostraram mais dispostas a ajudar como podem um
colega que esteja sofrendo agressão (X=1,54; p>0,001), mesmo
que não o conheçam (X=1,57; p>0,004). Em contrapartida,
os agressores se diferenciaram do grupo que não participa
(X=1,73) e do grupo das vítimas (X=2,34), sendo aqueles que
menos se sentiram sozinhos (X=1,47; p>0,001). Concluiu-se
que as informações obtidas neste estudo são indispensáveis
na busca de alternativas para redução do bullying escolar. O
fortalecimento das relações entre escola e alunos, e um maior
preparo dos professores e funcionários são extremamente
necessários para tentar minimizar os efeitos dos fatores de
risco a que essas crianças estão expostas e consequentemente a

Taking the pulse of Earth's tropical forests using networks of highly distributed plots
Tropical forests are the most diverse and productive ecosystems on Earth. While better understanding of these forests is critical for our collective future, until quite recently efforts to measure and monitor them have been largely disconnected. Networking is essential to discover the answers to questions that transcend borders and the horizons of funding agencies. Here we show how a global community is responding to the challenges of tropical ecosystem research with diverse teams measuring forests tree-by-tree in thousands of long-term plots. We review the major scientific discoveries of this work and show how this process is changing tropical forest science. Our core approach involves linking long-term grassroots initiatives with standardized protocols and data management to generate robust scaled-up results. By connecting tropical researchers and elevating their status, our Social Research Network model recognises the key role of the data originator in scientific discovery. Conceived in 1999 with RAINFOR (South America), our permanent plot networks have been adapted to Africa (AfriTRON) and Southeast Asia (T-FORCES) and widely emulated worldwide. Now these multiple initiatives are integrated via ForestPlots.net cyber-infrastructure, linking colleagues from 54 countries across 24 plot networks. Collectively these are transforming understanding of tropical forests and their biospheric role. Together we have discovered how, where and why forest carbon and biodiversity are responding to climate change, and how they feedback on it. This long-term pan-tropical collaboration has revealed a large long-term carbon sink and its trends, as well as making clear which drivers are most important, which forest processes are affected, where they are changing, what the lags are, and the likely future responses of tropical forests as the climate continues to change. By leveraging a remarkably old technology, plot networks are sparking a very modern revolution in tropical forest science.
