Activity Budgets and Forage Selection of Podolian Cattle, a Semiwild Bovine Breed
This study aimed to describe the behaviour of Podolian breed, a semiwild cattle breed kept in a natural environment (as either a small group of young bulls or cows within a family herd), and the interaction of these animals with the environment in terms of ingestion from natural pastures. Diurnal grazing behavioural pattern was monitored through continuous focal animal recording method. The activity budget of free-ranging animals was characterized by high locomotor and feeding activities. They exhibited a high degree of adaptability to the local phytocoenosis with high levels of ferns' and tree foliage intakes performed by cows and the selection of a diet more nutritious than pasture performed by young bulls. These results along with the low levels of agonistic interactions recorded in the two experiments suggest that extensive systems based on grazing allow social stability and provide a natural environment for the expression of cattle species-specific behaviour
Perception of Ecosystem Services from Podolian Farming System in Marginal Areas of Southern Italy
Ecosystem services (ESs) are gaining increasing interest among researchers, local communities, and policymakers. The farming of Podolian cattle in the remote and marginal areas of southern Italy plays an important socio-economic role. This study aimed to assess the perception of ESs provided by Podolian cattle farming in the Basilicata region among the local actors and stakeholders. Using a questionnaire administered to 198 respondents, the level of agreement and disagreement was assessed on a 1–5 scale for the four main ESs: cultural, regulating, supporting, and provisioning. On average, the perception of ESs related to Podolian cattle farming was positive. However, the role of promoting tourism in the region was somewhat controversial, and the results in terms of regulation were divisive. The perception of provisioning services had a highly positive result. Further research is needed to better understand the role of Podolian cattle farming in the Basilicata region, providing more explicit guidance for local communities and policymakers
Image analysis with the computer vision system and the consumer test in evaluating the appearance of Lucanian dry sausage
The object of the investigation was the Lucanian dry sausage appearance, meant as color and visible fat ratio. The study was carried out on dry sausages produced in 10 different salami factories and seasoned for 18 days on av- erage. We studied the effect of the raw material origin (5 producers used meat bought from the market and other 5 producers used meat from pigs bred in their farms) and of the salami factories or brands on meat color, fat color and visible fat ratio in dry sausages. The sausages slices were photographed and the images were analysed with the computer vision system to measure the changes in the colorimetric characteristics L*, a*, b*, hue and chroma and in the visible fat area ratio. The last parameter was assessed on the slice surface using image binarization. A consumer test was conducted to determine the relationship between the perception of visible fat on the sausage slice surface and acceptability and preference of this product. The consumers were asked to look carefully at the 6 sausages slices in a photo, minding the presence of fat, and to identify (a) the slices they considered unacceptable for consumption and (b) the slice they preferred. The results show that the color of the sausage lean part varies in relation to the raw material employed and to the producer or brand (P b 0.001). Besides, the sausage meat color is not uniform in some salami factories (P b 0.05–0.001). In all salami factories the sausages show a high unifor- mity in fat color. The visible fat ratio of the sausages slices is higher (P b 0.001) in the product from salami facto- ries without pig-breeding farm. The fat percentage is highly variable (P b 0.001) among the sausages of each salami factory. On the whole, the product the consumers consider acceptable and is inclined to eat has a low fat percentage (P b 0.001). Our consumers (about 70%) prefer slices which are leaner (P b 0.001). Women, in particular, show a higher preference for the leanest (P b 0.001)
Cheese liking and consumer willingness to pay as affected by information about organic production
The present study aimed to assess the effect of information about organic production on Pecorino cheese liking and consumer willingness to pay. Mean scores of perceived liking were similar for organic cheese (OC) and conventional cheese (CC). Expected liking scores were higher for OC than for CC (P<0.001). For OC the expected liking was significantly higher (P<0.001) than the perceived liking expressed in blind conditions (negative disconfirmation), whereas for CC the expected liking was significantly lower (P<0.001) than the perceived liking expressed in blind conditions (positive disconfirmation). Consumers assimilated their liking for OC in the direction of expectations, as the difference actual vs. perceived liking was significant (P<0.001). However the assimilation was not complete, as also the difference actual liking vs. expected liking was significant (P<0.001). Consumers showed a willingness to pay OC (mean+/-se=4.20+/-0.13 euro/100 g) higher than the local retail price for conventional (1.90 euro/100 g) and even organic cheese (3.00 euro/100 g). We conclude that the information about organic farming can be a major determinant of cheese liking and consumer willingness to pay, thus providing a potential tool for product differentiation, particularly for small scale and traditional farm
Life Cycle Assessment of Dairy Buffalo Calves in an Italian Farm
The aim of this paper was to examine the environmental consequences of raising buffalo calves, as assessed by life cycle assessment. Life cycle assessment has been widely used to assess the environmental impact of different livestock production systems. The primary data were collected from 32 animals aged 0-90 days. Calves were allowed to uptake colostrum before separation from their mothers within 24-h after birth. After separation, the animals were kept individually (1 x 2 m) for 8 weeks and then housed in groups of 8 in straw-bedded pens (5 x 8 m). According to the results of the analysis, the contributions from all calves to global warming potential, acidification potential, eutrophication potential, non-renewable energy use was high. In particular, the impact generated from global warm potential was 7 kg CO2 - eq per day, and the impact of non-renewable energy use was 38 MJ - eq per day. Our results estimated for the first time the environmental impact generated from buffalo calves. We conclude that the strategies to mitigate the effects on the environment impact must start from the birth of the buffalo calves and then continue throughout its life cycle
Sensory Profile and Consumer Liking of Sustainable Salamis Differing in Wild Boar Meat and Seasoning Ingredients Addition
: The production of game meat is a proven way of promoting sustainable food, which is also consistent with the proper management of the expansion of the wild boar population in Italy. In the present study, we investigated consumer response to sensory attributes and consumer preference for ten types of "cacciatore" salamis prepared with different mixtures of wild boar/pork (30/50 or 50/50) and spice ingredients. PCA analysis showed a clear characterization of the salamis based on the first component with the hot pepper powder and fennel types differing from the others. For the second component, salamis without flavorings could be discriminated by those flavored with aromatized garlic wine or with black pepper only. The main findings of the hedonic test revealed that products with hot pepper and fennel seeds received the highest ratings, as well as satisfactory acceptance in the consumer test sensory analysis for eight out of ten products. The panelists and consumers' ratings were influenced by the flavors used, but not by the ratio of wild boar to pork. This gives us the opportunity to produce more cost-effective and environmentally friendly products, as doughs with a high proportion of wild boar meat can be used without affecting product preference
Food neophobia, odor and taste sensitivity, and overall flavor perception in food
Smell, which allows us to gather information about the hedonic value of an odor, is affected by many factors. This study aimed to assess the relationship among individual factors, odor sensitivity, and enjoyment, and to evaluate how overall flavor perception and liking in actual food samples are affected by odor sensitivity. A total of 749 subjects, from four different Italian regions, participated in the study. The olfactory capabilities test on four odors (anise, banana, mint, and pine), as well as PROP (6-n-prpyl-2-thiouracil) status and food neophobia were assessed. The subjects
were clustered into three groups of odor sensitivity, based on the perceived intensity of anise. The liking and intensity of the overall flavor were evaluated for four chocolate puddings with increasing sweetness (C1, C2, C3, and C4). The individual variables significantly affected the perceived intensity and liking of the odors. Even if all of the odor sensitivity groups perceived the more intensely flavored samples as the C1 and C4 chocolate puddings, the high-sensitivity group scored the global flavor of all of the samples as more intense than the low-sensitivity group. The low-sensitive subjects evaluated the liking of the sweeter samples with higher scores than the moderate-sensitive subjects, whereas the high-sensitive subjects gave intermediate scores. In conclusion, odor sensitivity plays a pivotal role in the perception and liking of real food products; this has to be taken into account in the formulation of new products, suitable for particular categories with reduced olfactory abilities
Moving Buffalo Farming beyond Traditional Areas: Performances of Animals, and Quality of Mozzarella and Forages
An observational case study was designed to highlight issues associated with a possible
expansion of dairy buffalo (Bubalus bubalis) farming outside the traditional coastal plains of southern
Italy. Twenty pregnant buffaloes were transferred to a hilly inland farm. After calving, production
and reproduction data were collected monthly throughout lactation. From 4 to 6 months of lactation,
buffaloes were enrolled in a feeding trial to evaluate the effects of locally grown forages (maize
silage vs. hay) on milk production and in vivo digestibility. Sensory properties of mozzarella cheese
produced at a local dairy were also evaluated. No obvious effects of diet were found. Compared to
the data recorded in the previous lactation completed in the farm of origin, milk yield was reduced
by 37.2%, and milk protein by 6.1%, whereas milk fat improved (+4.5%). A lower pregnancy rate
(−13.3%), increased days open (+122%), and a prolonged intercalving period (+26.9%) were also
observed. Lactation length was shorter than the standard value of 270 d. The results showed that
peculiar reproductive characteristics, lower environmental temperatures, and the specificity of the
mozzarella production process are the main problems to be addressed in an expansion of buffalo
farming outside traditional area
Hay or silage? How the forage preservation method changes the volatile compounds and sensory properties of Caciocavallo cheese.
The aim of this study was to determine the effect of the forage preservation method (silage vs. hay) on volatile compounds and sensory properties of a traditional Caciocavallo cheese during ripening. A brown-midrib sudangrass hybrid was cultivated on a 7-ha field and at harvesting it was half ensiled in plastic silo bags and half dried to hay. Forty-four lactating cows were equally allotted into 2 groups fed a isonitrogenous and isoenergetic total mixed ration containing as the sole forage either sorghum hay (H group) or sorghum silage (S group). Milk from the 2 groups was used to produce 3 batches/diet of Caciocavallo ripened for 30, 60, and 90 d. Milk yield and composition as well as cheese chemical and fatty acid composition were not markedly affected by the diet treatment and ripening time. By contrast, ripening induced increased levels of the appearance attribute "yellowness," along with the "overall flavor," the odor/flavor attributes "butter" and "hay," the "salty," "bitter," and "umami" tastes, and the texture attribute "oiliness," whereas the appearance attribute "uniformity" and the texture attribute "elasticity" were reduced. The silage-based diet induced higher perceived intensities of several attributes such as "yellowness"; "overall flavor"; "butter"; "grass" and "hay" odor/flavors; "salty," "bitter," and "umami" tastes; and "tenderness" and "oiliness" textures. In S cheese we also observed higher amounts of ketones and fatty acids. Conversely, H cheese showed the terpene α-pinene, which was not detected in S cheese, and a higher intensity of the appearance attribute "uniformity." These differences allowed the trained panel to discriminate the products, determined an increased consumer liking for 90-d ripened cheese, and tended to increase consumer liking for hay cheese
