    Pasta-making properties of the new durum wheat variety biensur suitable for the northern mediterranean environment

    Industrial pasta is commonly made from mixtures of semolina from different durum wheat varieties, and there is a very low market presence of mono-varietal pasta from local, short supply chains. In this work, dough rheological properties and pasta quality traits of the new durum wheat cv. Biensur, which has a high HMW/LMW-GS ratio, were evaluated with a view to developing short-chain, mono-varietal pasta production in NE Italy. Chemical and sensory analyses on short-cut pasta, viz. tubetti, made with semolina from cv. Biensur at two drying temperatures revealed that it has good technological characteristics and stability, excellent cooking and sensory properties, and is comparable to the high-quality commercial reference cv. Aureo. We conclude that Biensur provides farmers and traders with new market opportunities and offers improvements to the environmental and economic sustainability of the durum wheat chain

    Multidimensional approximation of nonlinear dynamical systems

    A key task in the field of modeling and analyzing nonlinear dynamical systems is the recovery of unknown governing equations from measurement data only. There is a wide range of application areas for this important instance of system identification, ranging from industrial engineering and acoustic signal processing to stock market models. In order to find appropriate representations of underlying dynamical systems, various data-driven methods have been proposed by different communities. However, if the given data sets are high-dimensional, then these methods typically suffer from the curse of dimensionality. To significantly reduce the computational costs and storage consumption, we propose the method multidimensional approximation of nonlinear dynamical systems (MANDy) which combines data-driven methods with tensor network decompositions. The efficiency of the introduced approach will be illustrated with the aid of several high-dimensional nonlinear dynamical systems

    No. 10: The Hungry Cities Food Purchases Matrix: A Measure of Urban Household Food Security and Food System Interactions

    Recent theoretical work has suggested that urban food security is the result of food system interactions. This work highlights the challenge of assessing household-level food insecurity and relating it to the broader food system. One priority is to develop food security metrics that incorporate household interactions with the food system retail environment. The Hungry Cities Food Purchases Matrix (HCFPM) is one such metric that has been developed for situating household food sourcing behaviour within the urban food system. The matrix has been successfully administered in a number of cities in the Global South by the Hungry Cities Partnership. This paper discusses the administration of the HCFPM in a 2014 household survey of Maputo in Mozambique and illustrates how it can provide unique insights into the interactions between households and the broader food system. The HCFPM therefore paves the way for a new frontier in urban food system research in cities of the Global South

    X-ray observation of micro-failures in granular piles approaching an avalanche

    An X-ray imaging technique is used to probe the stability of 3-dimensional granular packs in a slowly rotating drum. Well before the surface reaches the avalanche angle, we observe intermittent plastic events associated with collective rearrangements of the grains located in the vicinity of the free surface. The energy released by these discrete events grows as the system approaches the avalanche threshold. By testing various preparation methods, we show that the pre-avalanche dynamics is not solely controlled by the difference between the free surface inclination and the avalanche angle. As a consequence, the measure of the pre-avalanche dynamics is unlikely to serve as a tool for predicting macroscopic avalanches

    Learning from others and receiving support: the impact of personal networks on fertility intentions in Poland

    Research about fertility has focused in the main on studying separately the influences of communication networks and social capital on reproductive behavior, but it has rarely tried to integrate both network properties theoretically or analytically. We therefore discuss a general model of purposeful behavior that perceives individuals’ subjective perceptions of the utilities of different courses of action to be affected by structures of interpersonal influence. Resources needed to realize desired goals are furthermore shaped by exchange relationships that build social capital. These considerations are empirically applied to explanations of the intentions of 758 Polish men and women ever to have a first, second, or third child. Personal networks are especially relevant for the considerations to have a first or a second child. The intentions of childless respondents are positively influenced by network partners that are in a similar stage of their reproductive biographies or that have already taken the step of having a first child. However, respondents with one child intend to have a second child with a higher probability the more they have access to fertility-related social capital.     Studies of thermal conductivity in Fermi-Pasta-Ulam like lattices

    The pioneering computer simulations of the energy relaxation mechanisms performed by Fermi, Pasta and Ulam can be considered as the first attempt of understanding energy relaxation and thus heat conduction in lattices of nonlinear oscillators. In this paper we describe the most recent achievements about the divergence of heat conductivity with the system size in 1d and 2d FPU-like lattices. The anomalous behavior is particularly evident at low energies, where it is enhanced by the quasi-harmonic character of the lattice dynamics. Remakably, anomalies persist also in the strongly chaotic region where long--time tails develop in the current autocorrelation function. A modal analysis of the 1d case is also presented in order to gain further insight about the role played by boundary conditions.Comment: Invited article to appear in the Chaos focus issue on "Studies of Nonlinear Problems.
