Estimated carboxylic acid ester hydrolysis rate constants for food and beverage aroma compounds

    Get PDF
Aroma compounds in the Flavornet database were screened for potentially hydrolyzable carboxylic acid ester functionalities. Of the 738 aroma compounds listed in this database, 140 molecules contain carboxylic acid ester groups that may be amenable to hydrolysis in various food and beverage products. Acid- (k~A~) and base- (k~B~) catalyzed and neutral (k~N~) hydrolysis rate constants in pure water at 25°C were estimated for these aroma compounds. Where available, good agreement between theoretical and experimental hydrolytic half-lives was obtained at various pH values. Wide ranges and broad frequency distributions for k~A~, k~B~, and k~N~ are expected among the various hydrolyzable aroma compounds, with estimated k~A~ ranging from 3.7×10^-8^ to 4.7×10^-4^ M^-1^ s^-1^, estimated k~B~ ranging from 4.3×10^-4^ to 43 M^-1^ s^-1^, and estimated k~N~ ranging from 4.2×10^-17^ to 7.6×10^-9^ M^-1^ s^-1^. The resulting hydrolytic half-lives also range widely, from 10 days to 370 years at pH 2.8, 18 days to 4,900 years at pH 4.0, 1.8 days to 470 years at pH 7.0, and 26 minutes to 5.1 years at pH 9.0. The findings presented herein attest to the importance of considering abiotic hydrolysis and matrix pH when modeling the evolution of sensory characteristics for foods and beverages with carboxylic acid ester based aroma compounds

The Effects of Environmental Factors on the Dynamic Growth Pattern of Mangrove Avicennia Marina

Avicennia marina is a species of mangrove tree occurs in the intertidal zones of estuarine areas in Asia, including Indonesia. Mangrove within the genus member of Avicennia have long dominated many coastal areas along Semarang and Demak coasts. The aim of this research was to analyze the effect pattern of several environment parameters to Avicennia seedling growth rate. Observation was held by setting 8 stations with 3 transects, each including mangrove survey and environment parameter measurements. Mangrove survey including seedling and sapling stage occupying 1 x 1 m and 5 x 5 m transect plot respectively. While environmental factor measurements including on site measurement for temperature, salinity, pH and DO and laboratory analysis for organic matter, nutrient (N,P,K) and sediment structure. The results showed there were 2 effect pattern for environmental parameters observed including polynomial quadratic and logarithmic patterns. Parameters which had polynomial quadratic pattern including salinity, DO, P, sand and silt, while parameters which had logarithmic pattern were temperature, pH, organic matter and N

Monotone loop models and rational resonance

Let Tn,m=Zn×ZmT_{n,m}=\mathbb Z_n\times\mathbb Z_m, and define a random mapping Ï•â€‰âŁ:Tn,m→Tn,m\phi\colon T_{n,m}\to T_{n,m} by ϕ(x,y)=(x+1,y)\phi(x,y)=(x+1,y) or (x,y+1)(x,y+1) independently over xx and yy and with equal probability. We study the orbit structure of such ``quenched random walks'' ϕ\phi in the limit m,n→∞m,n\to\infty, and show how it depends sensitively on the ratio m/nm/n. For m/nm/n near a rational p/qp/q, we show that there are likely to be on the order of n\sqrt{n} cycles, each of length O(n), whereas for m/nm/n far from any rational with small denominator, there are a bounded number of cycles, and for typical m/nm/n each cycle has length on the order of n4/3n^{4/3}.Comment: 22 pages, 3 figure

Participatory Ranking of Fodders in the Western Hills of Nepal

Fodder is an important source of feed of the ruminants in Nepal. In the mid hills of Nepal, farmers generally practice integrated farming system that combines crop cultivation with livestock husbandry and agroforestry. Tree fodders are good sources of protein during the forage and green grass scarcity periods especially in dry season. Local communities possess indigenous knowledge for the selection of grasses and tree fodders at different seasons in mid hills of western Nepal. A study was conducted on the perception of farmers with respect to selection of fodder species in eight clusters in Kaski and Lumjung districts that range 900-2000 meter above sea level and receive average precipitation of 2000- 4500mm per annum. During the fodder preference ranking, farmers prepared the inventory of fodders found around the villages and nearby forests and selected top ten most important fodders in terms of their availability, palatability, fodder yield, milk yield and milk fat yield. In total, 23 top ranking fodders species were selected from the eight clusters. These fodder species were also ranked using pairwise ranking and weighted scoring methods and ranking was done on the basis of merit numbers obtained from weighted scores. The analysis revealed Artocarpus lakoocha as best tree fodder followed by Ficus semicordata, Thysanolena maxima and Ficus calvata. Similarly, the calendar of fodders trees for lopping season and the best feeding time was prepared on the basis of farmers\u27 local knowledge. This study suggests strategies for promotion of locally preferred tree fodder species and supplementing tree fodder with feed in different seasons depending on their availability and local preferences
