There are approximately 88 million tonnes of food waste generated annually in the EU alone. Food spoilage during distribution accounts for some of this waste. To minimise this spoilage, it is of utmost importance to maintain the cold chain during the transportation of perishable foods such as meats, fruits, and vegetables. However, these products are often unfortunately wasted in large quantities when unpredictable failures occur in the refrigeration units of transport vehicles. This work proposes a real-time IoT anomaly detection system to detect equipment failures and provide decision support options to warehouse staff and delivery drivers, thus reducing potential food wastage. We developed a bespoke Internet of Things (IoT) solution for real-time product monitoring and alerting during cold chain transportation, which is based on the Digital Matter Eagle cellular data logger and two temperature probes. A visual dashboard was developed to allow logistics staff to perform monitoring, and business-defined temperature thresholds were used to develop a text and email decision support system, notifying relevant staff members if anomalies were detected. The IoT anomaly detection system was deployed with Musgrave Marketplace, Ireland’s largest grocery distributor, in three of their delivery vans operating in the greater Belfast area. Results show that the LTE-M cellular IoT system is power efficient and avoids sending false alerts due to the novel alerting system which was developed based on trip detection

Wireless Sensor Networks (WSN) consist of small, cheap devices that have a combination of sensing, computing and communication capabilities. They must be able to communicate and process data efficiently using minimum amount of energy and cover an area of interest with the minimum number of sensors. This thesis proposes the use of techniques that were designed for Geostatistics and applies them to WSN field. Kriging and Cokriging interpolation that can be considered as Information Fusion algorithms were tested to prove the feasibility of the methods to increase coverage. To reduce energy consumption, a compression method that models correlations based on variograms was developed. A second challenge is to establish the communication to the external networks and to react to unexpected events. A demonstrator that uses commercial Java-enabled devices was implemented. It is able to perform remote monitoring, send SMS alarms and deploy remote updates

Real-time monitoring system for shelf life estimation of fruit and vegetables

The control of the main environmental factors that influence the quality of perishable products is one of the main challenges of the food industry. Temperature is the main factor affecting quality, but other factors like relative humidity and gas concentrations (mainly C2H4, O2 and CO2) also play an important role in maintaining the postharvest quality of horticultural products. For this reason, monitoring such environmental factors is a key procedure to assure quality throughout shelf life and evaluate losses. Therefore, in order to estimate the quality losses that a perishable product can suffer during storage and transportation, a real-time monitoring system has been developed. This system can be used in all post-harvest steps thanks to its Wi-Fi wireless communication architecture. Several laboratory trials were conducted, using lettuce as a model, to determine quality-rating scales during shelf life under different storage temperature conditions. As a result, a multiple non-linear regression (MNLR) model is proposed relating the temperature and the maximum shelf life. This proposed model would allow to predict the days the commodities will reduce their theoretical shelf-life when an improper temperature during storage or in-transit occurs. The system, developed as a sensor-based tool, has been tested during several land transportation trips around Europe. The authors are grateful to Fruca Marketing S.L. for providing the lettuce used in this research, and to Transportes Directos del Segura SL and Transportes Mesa SL for the logistic support. We also are grateful to Miriam Montoya Gómez for the translation services

Continuous monitoring of food loss and waste (FLW) is crucial for improving food security and mitigating climate change. By measuring quality parameters such as temperature and humidity, real-time sensors are technologies that can continuously monitor the quality of food and thereby help reduce FLW. While there is enough literature on sensors, there is still a lack of understanding on how, where and to what extent these sensors have been applied to monitor FLW. In this paper, a systematic review of 59 published studies focused on sensor technologies to reduce food waste in food supply chains was performed with a view to synthesising the experience and lessons learnt. This review examines two aspects of the field, namely, the type of IoT technologies applied and the characteristics of the supply chains in which it has been deployed. Supply chain characteristics according to the type of product, supply chain stage, and region were examined, while sensor technology explores the monitored parameters, communication protocols, data storage, and application layers. This article shows that, while due to their high perishability and short shelf lives, monitoring fruit and vegetables using a combination of temperature and humidity sensors is the most recurring goal of the research, there are many other applications and technologies being explored in the research space for the reduction of food waste. In addition, it was demonstrated that there is huge potential in the field, and that IoT technologies should be continually explored and applied to improve food production, management, transportation, and storage to support the cause of reducing FLW

Lean Service (LS) methodology is known and used in today’s organizations, since they look to increase the success of their competitive advantage. In this research, different authors’ positions, some in favor and others against, are exposed about Lean Service and its tools, such as Warehouse Management, Value Stream Mapping, Lean Six Sigma and Just in Time, which during the present research have been the most relevant tools for improving the companies’ productivity. The positions in favor of a group of authors about the LS tools mentioned in the present research is that they are very efficient, due to they allow to reduce the different wastes in the production chain of organizations; while some positions against affirm that there are other Lean tools that are better for reducing waste, such is the case of Delphi technique, 5S, Kaizen, Kanban, Poka-Yoke, among others. On the other hand, it is important to highlight that we found limitations in the information search for the study topic, because, in principle, we found some non-free papers in quartile 1, which limited us to continue searching for sources in that quartile.

Given the tremendous growth of ubiquitous services in our daily lives, during the last few decades we have witnessed a definitive change in the way users' experience their surroundings. At the current state of art, devices are able to sense the environment and users’ location, enabling them to experience improved digital services, creating synergistic loop between the use of the technology, and the use of the space itself. We coined the term Senseable Space, to define the kinds of spaces able to provide users with contextual services, to measure and analyse their dynamics and to react accordingly, in a seamless exchange of information. Following the paradigm of Senseable Spaces as the main thread, we selected a set of experiences carried out in different fields; central to this investigation there is of course the user, placed in the dual roles of end-user and manager. The main contribution of this thesis lies in the definition of this new paradigm, realized in the following domains: Cultural Heritage, Public Open Spaces, Geosciences and Retail. For the Cultural Heritage panorama, different pilot projects have been constructed from creating museum based installations to developing mobile applications for archaeological settings. Dealing with urban areas, app-based services are designed to facilitate the route finding in a urban park and to provide contextual information in a city festival. We also outlined a novel application to facilitate the on-site inspection by risk managers thanks to the use of Augmented Reality services. Finally, a robust indoor localization system has been developed, designed to ease customer profiling in the retail sector. The thesis also demonstrates how Space Sensing and Geomatics are complementary to one another, given the assumption that the branches of Geomatics cover all the different scales of data collection, whilst Space Sensing gives one the possibility to provide the services at the correct location, at the correct time

The progressive transformation of scientific practices, driven by the development of new Information and Communication Technologies (ICT), which made it possible to increase access to information, gradually moving towards an opening of the research cycle. This opening makes it possible to resolve, in the long term, the adversity that has been placed on researchers, which involves the existence of barriers that limit access conditions, whether geographical or financial. Although large commercial publishers predominantly dominate scientific production and subject it to the rules imposed by them, the Open Access movement whose first public declaration, the Budapest Declaration (BOAI), was in 2002, proposes significant changes that benefit the authors and the readers. This Movement has gained importance in Portugal since 2003, with the constitution of the first institutional repository at the national level. Institutional repositories have emerged as a tool for disseminating the scientific production of an institution to open the results of the research, both before publication and the preprint process and postprint, increase the visibility of work done by an investigator and his or her institution. The present study, which underwent an analysis of the copyright policies of INESC TEC most relevant scientific publications, allowed not only to realize that publishers are increasingly adopting policies that make it possible to self-archive publications in institutional repositories, all the work of raising awareness, not only for researchers but also for the institution and the whole society. The production of a set of recommendations, which go through the implementation of an institutional policy that encourages the self-archiving of the publications developed in the institutional scope in the repository, serves as a motto for a greater appreciation of the scientific production of INESC TEC

Ambient Intelligence (AmI) is a recent paradigm emerging from Artificial Intelligence (AI), where computers are used as proactive tools assisting people with their day-to-day activities, making everyone’s life more comfortable. Another main concern of AmI originates from the human computer interaction domain and focuses on offering ways to interact with systems in a more natural way by means user friendly interfaces. This field is evolving quickly as can be witnessed by the emerging natural language and gesture based types of interaction. The inclusion of computational power and communication technologies in everyday objects is growing and their embedding into our environments should be as invisible as possible. In order for AmI to be successful, human interaction with computing power and embedded systems in the surroundings should be smooth and happen without people actually noticing it. The only awareness people should have arises from AmI: more safety, comfort and wellbeing, emerging in a natural and inherent way. ISAmI is the International Symposium on Ambient Intelligence and aiming to bring together researchers from various disciplines that constitute the scientific field of Ambient Intelligence to present and discuss the latest results, new ideas, projects and lessons learned, namely in terms of software and applications, and aims to bring together researchers from various disciplines that are interested in all aspects of this area
