    Practical Approaches to the Control of Milk Fermentation with Kefir Grains

    In the chapter, milk fermentation for kefir production is studied. The traditional kefir production process based on inoculating kefir grains into milk is considered. The quality and quantity of the produced kefir also depend on the dynamics of the fermentation process. The chapter presents the design and synthesis of the closed-loop control system in which changing the bioreactor’s temperature is used to control the time course of the concentration of dissolved CO2. In the chapter: (1) a nonlinear dynamic mathematical model of the fermentation process, which allows evaluating the influence of the bioreactor’s temperature on the dynamics of the fermentation process, is presented; (2) the design and synthesis of a conventional linear control system with constant parameters are carried out; (3) an adaptive control system that enables the tracking of the courses of the quantities of the fermentation process to the desired reference trajectories without the time-consuming preliminary identification of the parameters of the fermentation process model is developed. The numerical, experimental, and analytic outcomes of the study are presented

    In our globalized world, the need to produce quality and safe food has increased exponentially in recent decades to meet the growing demands of the world population. This expectation is being met by acting at multiple levels, but mainly through the introduction of new technologies in the agricultural and agri-food sectors. In this context, agricultural, livestock, agro-industrial buildings, and agrarian infrastructure are being built on the basis of a sophisticated design that integrates environmental, landscape, and occupational safety, new construction materials, new facilities, and mechanization with state-of-the-art automatic systems, using calculation models and computer programs. It is necessary to promote research and dissemination of results in the field of mechanization and agricultural structures, specifically with regard to farm building and rural landscape, land and water use and environment, power and machinery, information systems and precision farming, processing and post-harvest technology and logistics, energy and non-food production technology, systems engineering and management, and fruit and vegetable cultivation systems. This Special Issue focuses on the role that mechanization and agricultural structures play in the production of high-quality food and continuously over time. For this reason, it publishes highly interdisciplinary quality studies from disparate research fields including agriculture, engineering design, calculation and modeling, landscaping, environmentalism, and even ergonomics and occupational risk prevention

    The THIESEL 2022. Conference on Thermo-and Fluid Dynamic Processes in Direct Injection Engines planned in Valencia (Spain) for 8th to 11th September 2020 has been successfully held in a virtual format, due to the COVID19 pandemic. In spite of the very tough environmental demands, combustion engines will probably remain the main propulsion system in transport for the next 20 to 50 years, at least for as long as alternative solutions cannot provide the flexibility expected by customers of the 21st century. But it needs to adapt to the new times, and so research in combustion engines is nowadays mostly focused on the new challenges posed by hybridization and downsizing.
