    Consumer Preference on Traceable Information of Dairy Products

    Diary industry in China has been in deep crisis since a series of quality scandals were exposed to public in 2008. Thanks to the traceability system in dairy supply chain and the growth of the internet, providing traceable dairy product information to the public is viewed as one of the best ways, mostly in terms of feasibility , to overcome the trust crisis and to promote the development of the dairy industry in China. However, among the tons of information available from the supply chain, there is a lack of knowledge on consumer preference. Based on choice-based conjoint analysis, this paper investigated consumer preference on dairy product traceable information query service. Specifically , this paper measured the value that consumers place on the dairy product traceable information. We used a multinomial logit model to estimate the preferences and offered 3 ways to explain the value of each kind of information that consumers are concerned about.     Chinese Consumers’ Perception and Willingness to Pay for Traceable Dairy Products

    To reduce food safety risks and prevent serious food safety incidents, and enhance consumer confidence in food safety, the Chinese government has undertaken various policy measures to improve the safety and quality of dairy products in recent years. The implementation of traceability systems could lead consumers to perceive a higher value and to be willing to pay a premium price for dairy products. This research contributes valuable information to the dairy product supply chain, providing insights to producers, distributors, and other actors of the dairy production chain. Results showed that the importance of information about food traceability for improving market demand for traceable dairy products. Further work will be needed to improve consumers' understanding of the potential benefits of traceable systems in the dairy product quality and security system. Moreover, encouraging producers to produce diversified traceable dairy products, decrease the production cost, decreasing the price of traceable dairy products may be the most effective way of increasing the traceable dairy food market share

    In light of recent food safety crises and international trade concerns associated with food or animal associated diseases, traceability has once again become important in the minds of public policymakers, business decision makers, consumers and special interest groups. This study reviews studies on traceability, government regulation and consumer behaviour, provide case studies of current traceability systems and a rough breakdown of various costs and benefits of traceability. This report aims to identify gaps that may currently exist in the literature on traceability in the domestic beef supply chain, as well as provide possible directions for future research into said issue. Three main conclusions can be drawn from this study. First, there is a lack of a common definition of traceability. Hence identifying similarities and differences across studies becomes difficult if not impossible. To this end, this study adopts CFIA’s definition of traceability. This definition has been adopted by numerous other agencies including the EU’s official definition of traceability however it may or may not be acceptable from the perspective of major Canadian beef and cattle trade partners. Second, the studies reviewed in this report address one or more of five key objectives; the impact of changing consumer behaviour on market participants, suppliers incentive to adopt or participate in traceability, impact of regulatory changes, supplier response to crisis and technical description of traceability systems. Drawing from the insights from the consumer studies, it seems as if consumers do not value traceability per se, traceability is a means for consumers to receive validation of another production or process attribute that they are interested in. Moreover, supply chain improvement, food safety control and accessing foreign market segments are strong incentives for primary producers and processors to participate in programs with traceability features. However the objectives addressed by the studies reviewed in this paper are not necessarily the objectives that are of most immediate relevance to decision makers about appropriate traceability standards to recommend, require, subsidize etc. In many cases the research objectives of previous work have been extremely narrow creating a body of literature that is incomplete in certain key areas. Third, case studies of existing traceability systems in Australia, the UK, Scotland, Brazil and Uruguay indicate that the pattern of development varies widely across sectors and regions. In summary, a traceability system by itself cannot provide value-added for all participants in the industry; it is merely a protocol for documenting and sharing information. Value is added to participants in the marketing chain through traceability in the form of reduced transactions costs in the case of a food safety incident and through the ability to shift liability. To ensure consumer benefit and have premiums returned to primary producers the type of information that consumers value is an important issue for future research. A successful program that peaks consumer interest and can enhance their eating experience can generate economic benefits to all sectors in the beef industry. International market access will increasingly require traceability in the marketing system in order to satisfy trade restrictions in the case of animal diseases and country of origin labelling, to name only a few examples.     U.S. Consumers’ Preference and Willingness to Pay for Country-of-Origin-Labeled Beef Steak and Food Safety Enhancements

    The mandatory Country of Origin Labeling (COOL) troubles beef exporters to the U.S. This study evaluates the extent that U.S. consumers are receptive to imported steak and their perception of food safety level of beef from various countries. In addition, using conjoint analysis, willingness to pay for strip loin steak from Australia, Canada and the United States is estimated along with several increasingly important food safeties and quality attributes in beef.     Trade-offs Between Consumer Concerns: An Application for Pork Production

    This paper studies multiple attributes of pork production and analyses the trade-offs that consumers make between them. Results show that without considering the trade-offs, animal welfare and food safety are on average perceived as the most important attributes. However, including trade-offs, Taste and Price become major concerns. Conclusions are nuanced as for a number of segments and specific trade-offs Taste and Price are relatively less important.     The development of agricultural biotechnology offers the opportunity to increase crop production, lowers farming costs, improves food quality and could reduce costs to consumers. For the food importing economies, the import quantities as well as prices will be affected through world market as the production technology of GM crops is adopted by the exporting countries. Many sectors will be affected by the use of these crops through vertical (or backward) and horizontal (or forward) linkages. The purpose of this paper is to develop an economy-wide quantitative assessment of the economic impacts of the introduction of GM products with and without labeling. The modeling framework used in this analysis is TAIGEM (Taiwan General Equilibrium Model), a multi-sectoral computable general equilibrium (CGE) model of the Taiwan¡¦s economy which is derived from ORANI model (Dixon, Parmenter, Sutton and Vincent, 1982). TAIGEM is amended by splitting corn and soybeans into GM and non-GM varieties. It also endogenizes the decision of producers and consumers to use GM vs. non-GM corn and soybeans in their intermediate uses and consumption, respectively. We also consider the consumers¡¦ acceptance of GM food so that the mandatory labeling policy can be examined. Our simulation results indicate that the most extreme import ban on GM crops would be very costly in terms of total production values, ranging from NT$ 40 to 90 billions per year.Research and Development/Tech Change/Emerging Technologies,

    In 2007, consumer focus groups and online surveys using choice sets were conducted to examine South Korean’s perceptions of and willingness-to-pay for Australian, U.S. and domestic beef. Consumers indicated higher positive perceptions of Australian beef than of U.S. beef, particularly in the area of environmentally friendly, cleanliness, standards and credibility; and thus Korean consumers discount Australian beef less than U.S. beef relative to domestic beef.     Sustainable diets in the UK—developing a systematic framework to assess the environmental Impact, cost and nutritional quality of household food purchases

    Sustainable diets should not only respect the environment but also be healthy and affordable. However, there has been little work to assess whether real diets can encompass all three aspects. The aim of this study was to develop a framework to quantify actual diet records for health, affordability and environmental sustainability and apply this to UK food purchase survey data. We applied a Life Cycle Assessment (LCA) approach to detailed food composition data where purchased food items were disaggregated into their components with traceable environmental impact data. This novel approach is an improvement to earlier studies in which sustainability assessments were based on a limited number of “food groups”, with a potentially high variation of actual food items within each group. Living Costs and Food Survey data for 2012, 2013 and 2014 were mapped into published figures for greenhouse gas emissions (GHGE, taking into account processing, transport and cooking) and land use, a diet quality index (DQI) based on dietary guidelines and food cost, all standardised per household member. Households were classified as having a ‘more sustainable’ diet based on GHGE, cost and land use being less than the median and DQI being higher than the median. Only 16.6% of households could be described as more sustainable; this rose to 22% for those in the lowest income quintile. Increasing the DQI criteria to >80% resulted in only 100 households being selected, representing 0.8% of the sample. The framework enabled identification of more sustainable households, providing evidence of how we can move toward better diets in terms of the environment, health, and costs
