Minimizing food waste in grocery store operations: literature review and research agenda

    Get PDF
Research on grocery waste in food retailing has recently attracted particular interest. Investigations in this area are relevant to address the problems of wasted resources and ethical concerns, as well as economic aspects from the retailer’s perspective. Reasons for food waste in retail are already well-studied empirically, and based on this, proposals for reduction are discussed. However, comprehensive approaches for preventing food waste in store operations using analytics and modeling methods are scarce. No work has yet systematized related research in this domain. As a result, there is neither any up-to-date literature review nor any agenda for future research. We contribute with the first structured literature review of analytics and modeling methods dealing with food waste prevention in retail store operations. This work identifies cross-cutting store-related planning areas to mitigate food waste, namely (1) assortment and shelf space planning, (2) replenishment policies, and (3) dynamic pricing policies. We introduce a common classification scheme of literature with regard to the depth of food waste integration and the characteristics of these planning problems. This builds our foundation to review analytics and modeling approaches. Current literature considers food waste mainly as a side effect in costing and often ignores product age dependent demand by customers. Furthermore, approaches are not integrated across planning areas. Future lines of research point to the most promising open questions in this field

The present work deals with the search of a methodology that allows a chain of supermarkets, described in the present work, to make the most appropriate decisions about the assortment that they handle in their supermarkets, arriving at an assortment that allows them to retain their customers. and bring more profitability to the company; One of the main reasons for the need to study is the great variety of references and products that have in the categories of toilets mainly deodorants. A literature review is made to determine the way other countries attack this problem, we find terms of satisfaction of the assortment, profitability of the assortment and optimization based on own restrictions and the false mentality that a greater number of references in the Assortment guarantees a better perception of it. Impact of One Stop Shops on Consumer Buying Pattern

Supermarkets initially became famous in the 1950's when numerous staple shops progressed toward becoming 'self-benefit'. Until when shops at that point had all utilized the " over-the-counter strategy' of offering, where clients told a businessperson what they needed, and he/she got if off racking behind the counter. The new supermarkets used an open course of action design, which empowered customers to scrutinize along racking to pick stock for themselves. But increasing trend of one stop shop also created some negative outcomes by influencing consumer buying pattern. This quantitative research focused on finding the relationship between one independent variable one stop shop and 6 dependent variables inflation, impulse buying, Danger to health, Traffic jams, survival of small shops and rising property prices. The overall area target was one country i.e. Pakistan. The sample size selected from overall population was n=200. Primary data gathered here through questionnaires is based on both hardcopy and online survey forms. SPSS tool was used for data analysis. Findings proves that rising trend of one stop shops have a significant positive impact on economy and consumer buying pattern. Keywords: Consumer Buying Pattern, inflation, impulse buying, Danger to health, Traffic jams, survival of small shops, rising property prices, one stop shops, Quantitative, Questionnaire, Supermarkets. Using network analysis to explore the effects of road network on traffic congestion and retail store sales

The physical road system plays a critical role in environmental and city planning. In the context of retail store site-selection, measures of accessibility and the ease and willingness of consumers to shop at a store can be essential to revenue generation and retail success. To quantify accessibility requires a detailed examination of the road networks and in many cases modelling to estimate potential traffic congestion that would inhibit accessibility. The application of network theory to assess the accessibility of road segments and land parcels is non-existent. Research on the effects of the structure of the road network, via network analysis, can facilitate identifying potential congestion issues and subsequently the effects of congestion on commercial performance (e.g., retail sales). The application of network analysis to a road network is distinctive from applications in other disciplines (e.g., sociology, ecology), since, among other network attributes, the road network is a low-dimension, link-centroid, and relatively static system with time-variant traffic flow. In addition to conceptually interrogating the difference between social and road networks for network analysis, the presented research results show the relationship among different network metrics and simulated traffic congestion and the strength of the relationship between network metrics and retail sales relative to socio-demographic and site-location characteristics

Semantic discovery and reuse of business process patterns

    Get PDF
Patterns currently play an important role in modern information systems (IS) development and their use has mainly been restricted to the design and implementation phases of the development lifecycle. Given the increasing significance of business modelling in IS development, patterns have the potential of providing a viable solution for promoting reusability of recurrent generalized models in the very early stages of development. As a statement of research-in-progress this paper focuses on business process patterns and proposes an initial methodological framework for the discovery and reuse of business process patterns within the IS development lifecycle. The framework borrows ideas from the domain engineering literature and proposes the use of semantics to drive both the discovery of patterns as well as their reuse
