    Expediency of the development of formulae and innovative technologies for production of prophylactic application drinks possessing antioxidant, probiotic and hepatoprotective properties with the use of the secondary dairy product – whey, as well as the domestic vegetable raw materials having a high content of bioactive substances has been substantiated. Formulation composition of the prophylactic drinks based on cheese whey, extract of Tagetes patula flowers and the berry filler “Strawberry” with the use of the response surface method has been developed. Bioactivity of the drinks and the complex quality indicator which accounts for the total influence of the bioactivity, organoleptic assessment and weight coefficients of the specified unit indicators were taken as the optimization criteria; as the independent factors that were varied in the course of the experiment, the mass fractions of the marigold flowers extract and the strawberries filler were selected. It is recommended that the mass fractions of the berry filler “Strawberry” and the extract of Tagetes patula flowers in the prophylactic drinks are set as 7 and 20 % of the finished product, accordingly. The practical mass fraction of the citric acid of 0.2 % was determined as it ensures high organoleptic characteristics of the finished drinks. Recommendations are given concerning development of innovative technologies of unfermented and fermented strawberry whey drinks of prophylactic application enriched with the extract of Tagetes patula flowers.Обґрунтовано доцільність розроблення рецептур та інноваційних технологій напоїв профілактичного призначення з антиоксидантними, пробіотичними та гепатопротекторними властивостями з використанням вторинної молочної сировини – сироватки, а також вітчизняної сировини рослинного походження з високим вмістом біологічно активних речовин. Розроблено рецептурний склад напоїв профілактичного призначення на основі сирної сироватки, екстракту квітів Tagetes patula і ягідного наповнювача «Полуниця» з використанням методології поверхні відгуку. У якості критеріїв оптимізації обрано біологічну активність напоїв і комплексний показник якості, який враховує сукупний вплив біологічної активності, органолептичної оцінки і коефіцієнтів вагомості зазначених одиничних показників; незалежними факторами, які варіювалися, в експерименті – масові частки екстракту квітів чорнобривців і полуничного наповнювача. Рекомендовано масову частку ягідного наповнювача «Полуниця» та екстракту квітів Tagetes patula в напоях профілактичного призначення встановити 7 і 20 % від маси готового продукту відповідно. Визначено раціональну масову частку лимонної кислоти – 0,2 %, яка забезпечує високі органолептичні характеристики готових напоїв. Наведено рекомендації з розробки інноваційних технологій неферментованих і ферментованих сироватково-полуничних напоїв профілактичного призначення, збагачених екстрактом квітів Tagetes patula

    We find an interpretation of the recent connection found between topological strings on Calabi-Yau threefolds and crystal melting: Summing over statistical mechanical configuration of melting crystal is equivalent to a quantum gravitational path integral involving fluctuations of Kahler geometry and topology. We show how the limit shape of the melting crystal emerges as the average geometry and topology of the quantum foam at the string scale. The geometry is classical at large length scales, modified to a smooth limit shape dictated by mirror geometry at string scale and is a quantum foam at area scales g_s \alpha'.Comment: 55 page

    Optical orientation and alignment of excitons in direct and indirect band gap (In,Al)As/AlAs quantum dots with type-I band alignment

    The spin structure and spin dynamics of excitons in an ensemble of (In,Al)As/AlAs quantum dots (QDs) with type-I band alignment, containing both direct and indirect band gap dots, are studied. Time-resolved and spectral selective techniques are used to distinguish between the direct and indirect QDs. The exciton fine structure is studied by means of optical alignment and optical orientation techniques in magnetic fields applied in the Faraday or Voigt geometries. A drastic difference in emission polarization is found for the excitons in the direct QDs involving a Γ\Gamma-valley electron and the excitons in the indirect QDs contributed by an XX-valley electron. We show that in the direct QDs the exciton spin dynamics is controlled by the anisotropic exchange splitting, while in the indirect QDs it is determined by the hyperfine interaction with nuclear field fluctuations. The anisotropic exchange splitting is determined for the direct QD excitons and compared with model calculations

    We consider N=4 theories on ALE spaces of Ak1A_{k-1} type. As is well known, their partition functions coincide with Ak1A_{k-1} affine characters. We show that these partition functions are equal to the generating functions of some peculiar classes of partitions which we introduce under the name 'orbifold partitions'. These orbifold partitions turn out to be related to the generalized Frobenius partitions introduced by G. E. Andrews some years ago.     Multicomponent theory of buoyancy instabilities in magnetized plasmas: The case of magnetic field parallel to gravity

    We investigate electromagnetic buoyancy instabilities of the electron-ion plasma with the heat flux based on not the magnetohydrodynamic (MHD) equations, but using the multicomponent plasma approach when the momentum equations are solved for each species. We consider a geometry in which the background magnetic field, gravity, and stratification are directed along one axis. The nonzero background electron thermal flux is taken into account. Collisions between electrons and ions are included in the momentum equations. No simplifications usual for the one-fluid MHD-approach in studying these instabilities are used. We derive a simple dispersion relation, which shows that the thermal flux perturbation generally stabilizes an instability for the geometry under consideration. This result contradicts to conclusion obtained in the MHD-approach. We show that the reason of this contradiction is the simplified assumptions used in the MHD analysis of buoyancy instabilities and the role of the longitudinal electric field perturbation which is not captured by the ideal MHD equations. Our dispersion relation also shows that the medium with the electron thermal flux can be unstable, if the temperature gradients of ions and electrons have the opposite signs. The results obtained can be applied to the weakly collisional magnetized plasma objects in laboratory and astrophysics.Comment: Accepted for publication in Astrophysics & Space Scienc

    Some Combinatorial Properties of Hook Lengths, Contents, and Parts of Partitions

    This paper proves a generalization of a conjecture of Guoniu Han, inspired originally by an identity of Nekrasov and Okounkov. The main result states that certain sums over partitions p of n, involving symmetric functions of the squares of the hook lengths of p, are polynomial functions of n.     Phase transitions, double-scaling limit, and topological strings

    Topological strings on Calabi--Yau manifolds are known to undergo phase transitions at small distances. We study this issue in the case of perturbative topological strings on local Calabi--Yau threefolds given by a bundle over a two-sphere. This theory can be regarded as a q--deformation of Hurwitz theory, and it has a conjectural nonperturbative description in terms of q--deformed 2d Yang--Mills theory. We solve the planar model and find a phase transition at small radius in the universality class of 2d gravity. We give strong evidence that there is a double--scaled theory at the critical point whose all genus free energy is governed by the Painlev\'e I equation. We compare the critical behavior of the perturbative theory to the critical behavior of its nonperturbative description, which belongs to the universality class of 2d supergravity.
