Analisis kimia roti lebah kelulut (Heterotrigona itama) dari kawasan lahan gambut kabupaten Tabalong Kalimantan Selatan. (Chemical analysis of kelulut (Heterotrigona itama) bee bread from peat land area Tabalong Regency, South Kalimantan)

Abstract

Roti lebah merupakan salah satu produk lebah selain madu. Roti lebah atau dikenal juga dengan pollen lebah memiliki khasiat yang beragam bagi tubuh manusia. Tujuan dari penelitian ini adalah untuk mengetahui kandungan kadar senyawa metabolit sekunder berupa alkaloid, fenolik, triterpenoid, steroid, flavonoid dan tanin yang ada pada roti lebah lebah kelulut.  Analisis kimia dilakukan secara kuantitatif dengan menggunakan metode gravimetri pada alkaloid dan metode spektrofotometri UV-Vis pada senyawa flavonoid, steroid, tanin, triterpenoid, dan fenolik. Sampel roti lebah diambil dari kawasan lahan gambut yang ada di Kabupaten Tabalong Kalimantan Selatan.  Hasil rata-rata pada kadar alkaloid sebesar 37,280 %, kadar flavonoid sebesar 73,750 mg/mL QE, kadar steroid sebesar 27,917 mg/mL, kadar tanin sebesar 0,324 mg/mL GAE, kadar triterpenoid sebesar 693,800 mg/mL dan kadar fenolik sebesar 46,356 mg/mL QEBee bread is one of the bee products besides honey. Bee bread or also known as bee pollen has various properties for the human body. The purpose of this study was to determine the levels of secondary metabolite compounds in the form of alkaloids, phenolics, triterpenoids, steroids, flavonoids and tannins in kelulut bee bread. Chemical analysis was carried out quantitatively using the gravimetric method for alkaloids and the UV-Vis spectrophotometric method for flavonoid, steroid, tannin, triterpenoid, dan fenolic compounds. The bee bread samples were taken from peatland areas in Tabalong Regency, South Kalimantan. The average yield on alkaloid content was 37.280%, flavonoid content was 73.750 mg/mL QE, steroid content was 27.917 mg/mL, tannin content was 0.324 mg/mL GAE, triterpenoid content was 693.800 mg/mL and phenolic content was 46.356 mg /mL Q
