Abstract

20世纪50-60年代，代食品运动在一定程度上推动了食品科技的发展，但也存在明显的问题。当时以中国科学院为代表的国家科研力量开展多种代食品的开发、利用和推广，其中以微藻中的小球藻、栅藻和扁藻的相关工作最具代表性。本文回顾微藻的科研与生产概况，分析食品科技发展中存在的基础研究不足、食品工程水平低、土法加工安全性差等问题及其时代局限性
