Advances in analysis of instrumental food sensory quality data

Abstract

This chapter presents an overview of the main multivariate data analytical tools to deal with problems normally encountered in the instrumental evaluation of food quality (exploratory analysis, calibration and classification). Particular attention is given to the family of methods based on projection on a low-dimensional subspace of latent variables, as they have the advantages of allowing the analysis of data where many correlated variables are measured on a limited number of samples (which is often the case in instrumental assessment of food quality) and an easy and straightforward visualisation of the results
